B.J. Dennis's Okra Stir-Fry With Rice image

Limpin' Susan is often called the wife of Hoppin' John, the pilau of peas and rice that Gullah cooks have made for generations in the South Carolina Sea Islands and Lowcountry, and that is also common in the Caribbean. Like Hoppin' John, the dish takes many forms depending on whose kitchen you grew up in. Some recipes start with fried bacon and end with washed long-grain rice, onions and okra steaming over simmering water for 45 minutes. Others call for simmering everything in chicken stock, or mixing chicken broth and cornstarch, then mixing the broth into cooked rice. B.J. Dennis, a Charleston chef, likes his Limpin' Susan more like a dry stir-fry, akin to what one might eat in Trinidad. The rice is cooked ahead of time, so liquid is fully absorbed and the grains remain distinct. This recipe is vegetarian, although Mr. Dennis likes to toss in a handful of chopped shrimp when the onions are softening.

1/4 cup cooking oil (coconut oil works well, but any neutral oil will do), plus more if needed
2 cups sliced fresh okra (1/2 pound), about 1/2-inch thick
1/2 cup finely chopped onions
2 teaspoons minced fresh garlic
1 teaspoon minced fresh ginger
1 to 3 fresh hot peppers, such as bird's eye or habanero, added to taste
1/2 teaspoon salt
1/4 teaspoon black pepper
3 cups cooked long-grain non-aromatic rice, such as Carolina Gold (about 3/4 cups uncooked; leftover rice is good)

Steps:

  • Pour oil into an 8-inch skillet, adding more, if needed, to make sure it coats the entire bottom of the pan. Heat over medium to medium-high heat and add the okra. Cook, stirring occasionally, until okra is slightly browned and tender, about 4 minutes. Cover to allow okra to steam for a bit, until tender, about 1 to 4 minutes more.
  • Add everything else but the rice and cook for 2 minutes more, stirring frequently. Increase heat to high and add rice, stirring gently but constantly for about 2 minutes. If you want the rice to brown. like fried rice, you can cook the mixture longer. Taste frequently, and add more seasoning and oil throughout the process as needed. Serve hot.

2 tablespoons vegetable oil
1 pound small okra
½ teaspoon ground turmeric
1 clove garlic, chopped
½ teaspoon chopped fresh ginger
2 onions, cut into quarters
2 roma (plum) tomatoes, cut into quarters
1 tablespoon chopped fresh cilantro

Steps:

  • Heat vegetable oil in a wok or large skillet over medium-high heat; cook and stir okra until tender and golden brown, about 3 minutes. Transfer okra to a plate.
  • Sprinkle turmeric into hot oil; heat until turmeric becomes aromatic, 1 to 2 minutes. Add garlic, ginger, onions, and tomatoes; cook and stir until onions are tender, about 10 minutes. Stir okra into onion mixture. Garnish with cilantro.

14 ounces of whole baby okra (or equivalent)
2 cups diced tomatoes
1 cup diced onion
1 tablespoon chopped garlic
2 tablespoons diced jalapeno peppers
8 ounces tomato sauce
3/4-1 cup water (approximately)
garlic pepper seasoning
seasoning salt
black pepper
allspice
corn oil, to fry okra

Steps:

  • Fry frozen okra in hot oil until golden brown(this will ensure okra stays closed and not slimy.
  • Set okra aside.
  • In a skillet combine tomato, onion, garlic, and jalapeno pepper and fry in about 1/8 cup oil until it becomes saucy.
  • Then add water and tomato sauce to skillet and stir.
  • Add okra and seasonings and let cook for about 5 minutes on medium heat.
  • Set aside for about 10 minutes and stir fry will thicken slightly.
  • Enjoy!

2 tablespoons mustard oil
1 pound okra, cut into 1/4-inch pieces
5 cloves garlic, minced, or more to taste
1 teaspoon cumin seeds
1 large red onion, thinly sliced
1 ½ teaspoons diced ginger
1 teaspoon ground turmeric
1 teaspoon garam masala
2 tomatoes, diced
½ teaspoon amchoor (dried mango powder)
salt to taste
2 tablespoons chopped cilantro, or to taste

Steps:

  • Heat mustard oil in a large nonstick skillet over medium heat. Add okra, garlic, and cumin seeds; cook and stir until okra is no longer sticky, 5 to 10 minutes. Add onions and ginger; cook until onions soften slightly, 3 to 5 minutes. Stir in turmeric powder; cook for about 30 seconds. Stir in garam masala; cook for about 30 seconds.
  • Stir tomatoes and amchoor powder into the skillet. Cook until tomatoes start to soften, about 1 minute. Remove skillet from heat and cover. Let rest until flavors combine, about 10 minutes. Season with salt and garnish with cilantro.

12 Chinese black mushrooms, soak and remove stems
3 cups chicken broth
1 teaspoon ginger, minced
1 teaspoon salt
1 tablespoon granulated onion
1 tablespoon sugar
1 teaspoon soy sauce
1 lb tofu, drain and cut into cubes
3 chinese okra, peel and cut into chucks
oil
cornstarch roux
2 stalks green onions, 1 inch pieces

Steps:

  • In a wok add oil to coat and place on a high heat add in the mushroom and stir fry for 2 minutes add in the chicken broth, ginger, salt, onion, sugar and soy sauce and bring to a boil and reduce heat to a simmer for 5 minutes. Add in the tofu and simmer for 2 minutes and then the okra and simmer for 2 minutes longer and add some cornstarch roux to lightly thicken and top off with the green onion and mix well.

Number Of Ingredients 8

1/2 lb boneless chicken, cut into cubes
1/2 red bell pepper, cut into cubes
1/2 green bell pepper, cut into cubes
soy sauce, as needed
minced ginger, as needed
balsamic vinegar (a splash)
1 lb fresh okra pods
curry powder, to taste

Steps:

  • Marinate the chicken and peppers in the soy sauce, minced ginger, and balsamic vinegar.
  • Cut the heads and tails off the okra and cut into 1/4 inch rounds.
  • Dump them in a bowl and don't season them!
  • Stir-fry the chicken until about 2/3 done, pull chicken out and set aside.
  • Add oil, then the okra.
  • Stir like crazy.
  • Your goal is little green things that look like they are trying to be a nice golden brown.
  • If you cook the okra just right, it is great. Under or over-cook it, it is great.
  • Throw the chicken back in and stir.
  • Add the peppers.
  • Toss in about a teaspoon of curry powder for fun.
  • Serve over rice or with mashed potatoes.
