1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1/2 cup packed brown sugar
1/2 cup sugar
1 cup old-fashioned oats
1/2 cup milk chocolate chips
1/2 cup butterscotch chips
1/2 cup sweetened shredded coconut
ADDITIONAL INGREDIENTS:
1/2 cup butter, softened
1 large egg, room temperature
3/4 teaspoon vanilla extract

Steps:

  • In a small bowl, combine the first five ingredients. In a 1-qt. glass jar, layer flour mixture, brown sugar, sugar, oats, chips and coconut, packing well between each layer. Cover and store in a cool, dry place up to 6 months. Yield: 1 batch (4 cups). , To prepare cookies: Preheat oven to 350°. In a large bowl, beat butter, egg and vanilla. 2-1/2 cups sugar
2 teaspoons salt
1 teaspoon baking soda
1 teaspoon baking powder
1 cup shortening
3 cups quick-cooking oats
ADDITIONAL INGREDIENTS:
1 egg
1 tablespoon milk
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips
1/2 cup chopped pecans, optional

Steps:

  • Combine the first five ingredients; cut in shortening until crumbly. Add oats and mix well. Store in an airtight container in a cool, dry place for up to 6 months. Yield: 5 batches (10 cups total). , To prepare cookies: In a bowl, combine 2 cups cookie mix, egg, milk and vanilla; mix well. Fold in chocolate chips and pecans if desired. 3 cups packed brown sugar
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 ½ teaspoons salt
1 pound shortening
2 cups raisins
1 ½ cups shredded coconut
1 cup semisweet chocolate chips
1 cup chopped pecans

Steps:

  • In a large bowl combine oats, flour, brown sugar, cinnamon, baking powder, baking soda and salt. With a pastry blender cut in shortening until crumbly. Stir in raisins, coconut, chocolate chips and pecans.
  • Refrigerate in an airtight container for up to 10 weeks.
  • Attach a tag that reads: Preheat the oven to 375 degrees F (190 degrees C). Grease a baking sheet, or line with parchment paper. Measure 4 cups of the mix into a large bowl. Whisk together 1 egg, 2 tablespoons milk and 2 teaspoons vanilla; stir into the mix. Roll into 1 1/2 inch balls and place on prepared baking sheet. Flatten with a fork dipped in sugar. Bake in preheated oven for 15 to 18 minutes, or until golden. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Still using your hands or a wooden spoon blend the egg mixture into the dough until well combined. 5. Drop teaspoon sized mounds 2 inches apart onto the prepared baking sheet. Wrap tightly; chill at least 4 hours. Heat oven to 350 degrees F. Remove one portion of dough from refrigerator. Shape dough into 1-inch balls. Place 2 inches apart on ungreased cookie sheets. Flatten to 1/8-inch thickness with bottom of glass dipped in granulated sugar. Repeat with remaining dough. Bake 5 to 7 minutes, just until centers are set. (Cookies will feel soft. Do not overbake.) Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered. Yields about 6 dozen cookies. Variations: Decorated Cookies - Decorate cooled cookies with melted dark or white chocolate, ready-to-spread frosting, decorator frosting in tubes, assorted small candies or candy sprinkles. Thumbprint Cookies - Use thumb to make a deep indentation in center of each cookie dough ball. Bake 6 to 8 minutes or until very light golden brown. Remove cookies from oven; press small dark or white chocolate candy into indentation or fill with 1/2 teaspoon preserves. Cool and store as directed

This recipe was given to me by a beautician whose mother was an excellent baker. This is really a great recipe; one of her mother's favorites. I'll include the recipe for orange-oatmeal cookies with it. You can be creative and add other ingredients to the basic mix like choc. chips, raisins, M & M's, etc. These freeze well too! Make them ahead and have them for the holidays or when company comes by!

1 cup shortening
1 cup sugar
1 cup firmly packed brown sugar
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
2 cups quick-coooking oatmeal, uncooked
2 cups corn flakes or 2 cups cereal, of your choice
2 cups basic cookie mix
1 egg, lightly beaten
2 -3 teaspoons fresh grated orange rind
1 tablespoon orange juice, plus
1 teaspoon orange juice (lemon rind and juice or spices may be substituted for orange rind and juice)
1/2 cup chopped pecans or 1/2 cup walnuts

Steps:

  • Basic Oatmeal Cookie Mix.
  • Combine shortening and sugar in a large bowl, blending well.
  • Combine remaining ingredients; mix well.
  • Add to sugar mixture, blending well. Cover and store in refrigerator until ready to use.
  • Yield: cookie mix for about 10 dozen cookies.
  • Orange-Oatmeal Cookies.
  • Combine all ingredients, mixing well.
  • Shape dough into 1-inch balls.
  • Place 2 inches apart on ungreased cookie sheet.
  • Bake at 375 degrees for 10-12 minutes. Reduce heat by 25 degrees if baking on a dark cookie sheet. Check before 10 minutes is up to judge how much more time is needed, if necessary.
  • Remove and place on wire racks to cool.
  • Yield: about 2 1/2 dozen.

  • In a small bowl, combine the flour, baking soda, and salt. In a 1 quart glass container (a mason jar works great!), layer the flour mixture, sugar, brown sugar, oats, walnuts, cereal and cranberries. Cover and store in a cool dry place for up to 6 months.
  • Write this note to go with your gift mix: To Prepare Cookies ~ In a large bowl, beat the softened butter, egg, water and vanilla until blended. Add cookie mix and mix well.
  • Drop by rounded tablespoonfuls 2 inches apart onto ungreased baking sheets. Bake at 350F for 10-12 minutes or until golden brown. Cool 1 minute before removing to wire racks to cool completely.
