Chewy granola bars made with sunflower seed butter. I make these as a nut-free option for my daughter.

cooking spray
1 cup brown sugar
⅔ cup sunflower seed spread (such as SunButter®)
½ cup butter, melted
¼ cup light corn syrup
1 cup bittersweet chocolate chips
⅓ cup raisins
3 cups quick-cooking oats

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Mix brown sugar, sunflower seed spread, butter, and corn syrup in a large bowl until combined. Stir in chocolate chips and raisins. Mix in oats. Press mixture evenly into the prepared pan.
  • Bake in the preheated oven until golden brown, about 30 minutes. Let cool for 1 hour before cutting.

Kid-Tested, Nut-Free Granola Bars image

Easy granola bars that do not get sticky or fall apart when packed in a lunchbox. Lots of nutrition has been snuck into a bar that is as appealing to kids as to their health-conscious caregivers. I like to store most of them in the freezer and just pull out a few at a time to thaw.

2 cups old-fashioned oats
1 cup spelt flour
½ cup wheat germ
¼ cup brown sugar
2 tablespoons chia seeds
2 tablespoons ground flax seeds
1 teaspoon ground cinnamon
½ teaspoon salt
1 cup applesauce
½ cup honey
1 banana
1 egg
¼ cup chopped dates

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking pan with parchment paper.
  • Combine oats, spelt flour, wheat germ, brown sugar, chia seeds, ground flax seeds, cinnamon, and salt in a large bowl.
  • Combine applesauce, honey, banana, egg, and dates in a blender; blend until very smooth. Pour over the oat mixture and mix well.
  • Scoop granola mixture into the pan. Press down firmly with wet hands to spread evenly in the pan.
  • Bake in the preheated oven until very lightly browned, 25 to 30 minutes. Let cool for 1 to 2 minutes. Cut into bars. Cool completely before lifting from the pan, about 30 minutes.

I created this recipe by combining my favorite granola bar recipe with one for lactation cookies while I was breastfeeding. The result were delicious, healthy, nut-free, chewy goodness!

4 cups oatmeal (not instant)
2 cups flour
1/2 cup coconut
1/2 cup raisins
1/2 cup chocolate chips
3 tablespoons flax seeds
1 tablespoon wheat germ
1/8 cup sugar
2 teaspoons baking soda
1/2 teaspoon salt
3/4 cup vegetable oil
3/4 cup honey

Steps:

  • Preheat oven to 350.
  • Mix oatmeal, flour, coconut, raisins, chocolate chips, flax seeds, wheat germ, sugar, baking soda and salt in large bowl.
  • Add the vegetable oil and honey.
  • Mix well until sticky. It is best to use your hands to make sure everything is turned together.
  • Line 9x13 pan with parchment paper.
  • Press mixture firmly into pan.
  • Bake for 15-20 minutes. Granola bars will look soft when you take them out of the oven, but if you leave them in until they are brown they will be overcooked.
  • Cut into bars while still warm.
