NUT-CRUSTED SALMON

Salmon fillets are coated with seasoned cream cheese and rolled in a crunchy nut crust. Serve with roasted asparagus and steamed rice for a lovely spring meal.

⅔ cup finely chopped pistachios
⅓ cup panko bread crumbs
1 (8 ounce) package cream cheese, at room temperature
3 tablespoons Dijon mustard
1 tablespoon fresh lemon juice
2 teaspoons finely chopped fresh dill
3 drops hot pepper sauce (such as Tabasco®), or more to taste
salt and freshly ground black pepper to taste
4 (6 ounce) fillets salmon, skin removed

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine pistachios and panko in a shallow bowl.
  • Mix cream cheese, Dijon, lemon juice, dill, and hot pepper sauce together in a bowl; season with salt and pepper.
  • Pat salmon fillets dry, then coat in cream cheese mixture on both sides. Roll in pistachio mixture, patting crumbs in place. Place fish on a nonstick baking sheet.
  • Bake in the center of the preheated oven until fish flakes easily with a fork, about 15 minutes; cooking time will depend on the thickness of the fish.

MACADAMIA NUT AND YOGURT CRUSTED SALMON



Macadamia Nut and Yogurt Crusted Salmon image

Number Of Ingredients 8

1 fresh salmon fillet (about 1 1/2 pounds), pin bones and skin removed
Salt and freshly ground black pepper
2 tablespoons melted butter
2 tablespoons stone-ground mustard
1/4 cup vanilla yogurt
1/4 cup chopped macadamia nuts
1 cup panko bread crumbs
Chopped chives

Steps:

  • Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
  • Season salmon with salt and pepper and place on a baking sheet. Combine melted butter, stone-ground mustard, yogurt and macadamia nuts in a bowl. In a separate bowl combine bread crumbs and chopped chives and season with salt and pepper. Spread yogurt mixture over top of fish then evenly coat fish with the bread crumb mixture. Roast for 15 to 20 minutes, for medium doneness.

1/2 c pine nuts, finely chopped
3/4 tsp salt, divided
1/2 tsp white pepper, divided
Six 7 oz salmon flillets, skinless
olive oil cooking spray
1 Tbsp olive oil

Steps:

  • 1. Combine pine nuts, 1/2 teaspoon salt, and 1/4 teaspoon white pepper. Sprinkle 1 tablespoon nut mixture over each fillet. Coat with cooking spray.
  • 2. Heat olive oil in a large heavy skillet coated with cooking spray over medium-high heat. Place half of fillets, nut side down, in skillet. Cook 3 minutes or until nuts are lightly browned. Remove from skillet.
  • 3. Place salmon, nut side up, in a 15- x 10-inch jellyroll pan coated with cooking spray. Repeat with remaining fillets. Sprinkle fillets with remaining 1/4 teaspoon salt and 1/4 teaspoon white pepper. Bake at 400° for 11 minutes or until fish flakes with a fork.

HONEY MUSTARD NUT CRUSTED SALMON



Honey Mustard Nut Crusted Salmon image

Number Of Ingredients 8

2 tablespoons butter or margarine melted
3 tablespoons Dijon style mustard
2 tablespoons honey
1/4 cup ground or very finely minced pecans
1/4 cup toasted bread crumbs
1/4 cup finely grated Parmesan cheese
1 tablespoon dried parsley flakes
4 salmon fillets (4 ounces each)

Steps:

  • Turn toaster oven to convection bake at 425 degrees (or bake at 450 degrees). Mix together butter, mustard, and honey; set aside. On a salad plate, mix together the nuts, breadcrumbs, cheese, and parsley. Brush tops of salmon fillets with mustard mixture, and then coat tops with crumb mixture; place coated sides up in a shallow baking dish or broiling pan. Bake for 15 minutes on a rack near the top of the oven. Turn toaster oven to broil and then broil for 3-5 minutes, or until browned, watching closely so as not to burn. Makes 4 servings.
