1 cup all-purpose flour
4 teaspoons seasoned salt
1 teaspoon poultry seasoning
1 teaspoon ground mustard
1 teaspoon paprika
1/2 teaspoon pepper
2 pounds boneless skinless chicken breasts
1/4 cup canola oil

Steps:

  • In a large shallow dish, combine the first 6 ingredients. Flatten chicken to 1/2-in. thickness, then cut into 1-1/2-in. pieces. Add chicken, a few pieces at a time, to dish and turn to coat., In a large skillet, cook chicken in oil in batches until meat is no longer pink, 6-8 minutes.

Number Of Ingredients 7

3 cups/355 g ice
3 egg whites
1 cup/200 g sugar
1/2 cup/120 ml corn syrup
1/4 cup/60 ml water
2 vanilla beans, scraped and seeded or 1 tablespoon vanilla extract
1/2 teaspoon salt

Steps:

  • 1 Put the ice in a medium bowl and set aside.
  • 2 Put the egg whites in the bowl of an electric mixer fitted with the whisk attachment and set aside.
  • 3 Stir together the sugar, corn syrup, and water in a medium saucepan. Bring to a boil over medium heat and continue to boil without stirring until the mixture reaches 235°F/114°C on a candy thermometer, about 6 minutes.
  • 4 Begin whipping the egg whites on low speed for about 1 minute, just until they are a little frothy. Continue cooking the sugar syrup until it reaches 245°F/118°C. (If your temperature goes higher, shock the syrup by setting the pan in the bowl of ice.) Pour a splash of the syrup into the egg whites, aiming for the space between the rim of the bowl and the whisk attachment. Continue whisking as you slowly add the rest of the hot sugar syrup. Increase the mixer speed to medium and whip until the nougat reaches a full, frothy foam, about 2 minutes.
  • 5 Add the vanilla seeds and salt to the nougat. Keep whipping until it forms stiff peaks, about 3 minutes more. Allow to cool in the bowl. Once it is at room temperature, it's ready to use in candy-bar production.

4 skinless, boneless chicken breasts
2 cups corn oil
1 egg, beaten
⅓ cup water
⅓ cup all-purpose flour
1 ½ tablespoons sesame seeds, toasted
1 ½ teaspoons salt

Steps:

  • Rinse chicken with cold water and pat dry with paper towels. Cut into 1x1x1/2 inch pieces.
  • Fill a deep fryer with corn oil, no more than 1/3 full. Heat to medium heat.
  • Place egg and water in a small bowl and mix well. Add the flour, sesame seeds and salt, stirring until a smooth batter is formed.
  • Dip chicken pieces in batter and drain off any excess. Add battered chicken, a few pieces at a time, to the hot oil. Fry about 4 minutes or until golden brown and done (remove chicken from oil to test). Drain on paper towels.

8 ounces whipping cream
8 eggs
1 1/4 cups sugar
1/4 teaspoon vanilla
4 1/2 slices white bread
1/2 teaspoon ground cinnamon
1 teaspoon sugar
2 tablespoons raisins

Steps:

  • Mix first 5 ingredients together in a bowl.
  • Arrange bread in a single layer on the bottom of a 9 x 13 inch casserole dish.
  • Pour the egg mixture evenly over the bread.
  • Mix cinnamon and sugar together. Sprinkle over bread.
  • Sprinkle raisins on top.
  • Cover with foil and bake in a water bath at 400 degrees for 75 to 90 minutes.
