2 tablespoons butter
2 cups onion, diced
8 ounces egg noodles
2 cups low-sodium chicken broth
1 cup half and half
1 pound cooked ham, diced
1 cup frozen peas
1 tablespoon lemon juice
salt and pepper

Steps:

  • Melt the butter in a 12-inch skillet over medium-high heat. Cook onions until golden brown, about 5 mins.
  • Add broth, half-and-half, and noodles to skillet and bring to a boil. Add diced ham, then reduce heat to medium-low and simmer, covered, until noodles are tender, about 8-10 minutes.
  • If your cream sauce is not thick enough, stir together 1 tablespoon of cornstarch and 3 tablespoons of cold water. Pour into skillet. Season with plenty of salt and pepper, then stir to combine. Sauce should thicken immediately. Add peas and lemon juice to skillet and cook until heated through, about 2 minutes. Serve and enjoy!

3 tablespoons unsalted butter
4 small leeks (white and light green parts only), thinly sliced
2 tablespoons fresh thyme
Kosher salt and freshly ground pepper
8 ounces ham steak (or leftover ham), cut into 1/2-inch pieces (about 1 1/2 cups)
3 tablespoons all-purpose flour
1 2/3 cups half-and-half
2 cups shredded fontina cheese (about 6 ounces)
6 ounces bow-tie pasta (about 2 1/2 cups)
2 cups frozen peas
1/4 cup grated parmesan cheese

Steps:

  • Melt the butter in a large ovenproof skillet over medium-high heat. Add the leeks, thyme, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring, until the leeks are tender, 8 to 10 minutes. Add the ham and cook until warmed through, about 2 minutes. Add the flour and cook, stirring, until moistened, 1 minute. Add the half-and-half and bring to a boil, then reduce to a simmer and cook until slightly thickened, about 2 minutes. Stir in 1 cup fontina until melted.
  • Meanwhile, preheat the broiler and bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente, adding the peas in the last 2 minutes of cooking. Reserve 1/2 cup cooking water, then drain the pasta and peas.
  • Add the pasta and peas to the skillet and toss to coat, adding the reserved cooking water as needed to loosen; season with salt and pepper. Top with the remaining 1 cup fontina and the parmesan. Broil until lightly browned, 4 to 5 minutes.

3/4 pound fusili pasta
Salt
2 Tbsp butter
3 garlic cloves, minced (about 1 Tbsp)
1 1/2 cups diced ham
1 1/2 cups frozen peas
1/2 cup cream
1 cup of pasta cooking water (reserved from cooking the pasta)
1/2 cup grated Parmesan cheese
1/2 teaspoon kosher salt
3/4 teaspoon black pepper
1/2 teaspoon lemon zest

Steps:

  • Cook the pasta: Heat 4 quarts of water and 2 Tbsp salt in a large pot for the pasta. Once the water starts to boil, add the pasta and cook at a rolling boil, uncovered, until al dente, cooked through, but still a little firm to the bite (the low end of the cooking times given on the package). Drain, reserving 1 cup of the pasta cooking water.
  • Heat butter, add garlic, add ham and peas: While you are cooking the pasta, heat the butter in a medium skillet on medium heat until melted. Add the minced garlic and cook for 1 to 2 minutes. Stir in the ham and the frozen peas.
  • Add pasta water, cream, Parm, zest, salt, pepper to make sauce: Stir in 1 cup of the pasta cooking water which will help thaw the peas. Stir in 1/2 cup of cream, Parmesan cheese, salt, pepper, and lemon zest.

12 ounces penne
1 cup frozen peas
2 large eggs, plus 1 egg white
1 cup evaporated milk
4 tablespoons unsalted butter
3 ounces sharp cheddar cheese, grated (1 scant cup)
3 ounces part-skim mozzarella cheese, grated (about 1 cup)
3 ounces fontina cheese, grated (1 scant cup)
3 ounces deli ham, in 1 piece, diced
1 ounce parmesan cheese, grated (about 1/2 cup)

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook until very al dente, about 8 minutes, adding the peas in the last 2 minutes of cooking.
  • Meanwhile, whisk the eggs, egg white, evaporated milk and 1/2 teaspoon salt in a bowl.
  • Drain the pasta and peas; wipe the pot dry and return the pasta and peas to the pot. Add the butter and stir to coat. Add the cheddar, mozzarella, fontina and the egg mixture. Place the pot over medium-low heat and cook, stirring constantly, until thickened, 8 to 10 minutes, adding the ham halfway through cooking (don't let the mixture boil or the eggs will scramble). Remove the pot from the heat and stir in the parmesan.

12 ounces bite-sized pasta ((gluten-free OK))
2 tablespoons all purpose flour ((gluten-free OK))
2 tablespoons butter
2 1/2 cups milk
1 1/2 cups shredded Italian blend cheese
7 ounces ham steak (cubed)
1 cup frozen peas
1/2 cup shredded Italian blend cheese
2 tablespoons butter
1/3 cup breadcrumbs ((gluten-free OK))

Steps:

  • Bring a pot of lightly salted water to a boil. Preheat oven to 375 degrees F. Spray a 9 x 13" baking dish with cooking spray, and set aside.
  • Cook pasta according to package directions, and drain.
  • While pasta cooks, melt butter in a large skillet over medium high heat. Add flour to melted butter, and whisk until combined.
  • Whisk milk into flour mixture about a half cup at a time, making sure the consistency is smooth before adding more liquid. Bring this sauce base to a low simmer.
  • Stir cheese, ham, and peas into sauce until cheese is melted. (The peas can be added while still frozen.) Stir in cooked pasta until combined well, and transfer to prepared baking dish.
  • Melt butter in a microwave-safe dish in the microwave (or on the stove if you prefer). Stir breadcrumbs into the melted butter.
  • Sprinkle 1/2 cup cheese over the pasta in the baking dish, and sprinkle the breadcrumbs over the cheese. Bake in preheated oven for 20 minutes or until top is golden brown and edges are bubbly. Serve right away.

1 1/2 cups whipping cream
1 package deli ham, cut into squares
3/4 cup peas (frozen)

1 package noodles, cooked (maccarroni are my favorite)

Steps:

  • In a saucepan melt butter.
  • Saute the onions.
  • Add the whipping cream, cooking on medium heat, and stirring constantly.
  • Add the ham.
  • Cook 4 min, then add the peas, salt and pepper.
  • Continue cooking until peas are done (3-5 min).
  • You can thicken the sauce if you want.
  • I don't always.
  • Serve with noodles.

  • Spray 5-quart slow cooker with cooking spray.
  • In 12-inch skillet, heat oil over medium heat. Add onion, carrots and celery; cook and stir 5 to 6 minutes or until vegetables soften. Add garlic and thyme; cook and stir 1 minute. Transfer to slow cooker.
  • Add broth, black-eyed peas and ham hock to slow cooker.
  • Cover; cook on Low heat setting 7 to 8 hours or until meat on ham hock is tender and easily separated from bone.

A pasta dish kids love and one that became traditional with mine whenever we left them with a sitter for the evening. It's best if the ham is prosciutto, the cream thick and fresh, and the peas just shelled, but it's pretty good with supermarket ham and cream and frozen peas, and I've made it that way plenty of times. For variety, add about a cup of sliced button mushrooms to the ham mixture.

Yield makes 4 servings

Number Of Ingredients 7

Salt and black pepper to taste
1 cup peas, fresh or frozen
2 tablespoons butter
2 ounces ham, preferably prosciutto, roughly chopped
1/2 cup heavy cream
1 pound linguine, fettuccine, or other long pasta
1/2 cup freshly grated Parmesan cheese, or more to taste

Steps:

  • Bring both a large and a small pot of water to a boil; salt them both. In the small pot, cook the peas until tender, 3 or 4 minutes. Drain and set aside. Put the butter in a medium skillet over medium heat; when it melts, add the ham and cook for about a minute. Stir in the peas, the cream, a pinch of salt, and a fair amount of black pepper. Turn the heat to low; keep warm, stirring occasionally, while you cook the pasta.
  • Cook the pasta until tender but not mushy; drain, reserving about a cup of the cooking liquid. Toss the pasta with the cream mixture; if it seems too thick, add a little of the reserved cooking water. Stir in the Parmesan, taste and adjust the seasoning, and serve.

Creamy Penne Pasta With Ham and Peas image

I tried to copy a wonderful dish I had at a small local Italian restaurant and this one turned out WONDERFUL (for a lot less money too!) The flavors are excellent and it's a totally new way to use up leftover ham. The crispy ham reminds me of pancetta. This is a very forgiving recipe and many different vegetables can be added to your liking, try sauteed zucchini with the peas, or mushrooms, broccoli, etc.

4 cups penne pasta, uncooked
1 cup peas, frozen petite
1 1/2 cups ham, chopped small
2 cups milk
4 tablespoons flour
1 tablespoon butter
1 tablespoon extra virgin olive oil
5 -6 garlic cloves, chopped (or more!)
8 ounces cream cheese, lite is wonderful in this
1/2 cup parmesan cheese
1 -2 teaspoon salt (to taste)
fresh pepper (to taste)

Steps:

  • Bring large pot of water to boil and add pasta, cooking to al dente.
  • Add peas last 2-3 minutes to pasta.
  • Scoop out 1 cup pasta water, then drain, and place in a large serving dish.
  • Whisk flour into milk (or shake together in a jar) till mixed well.
  • In skillet, pour olive oil in and add ham, cook over medium heat, stirring occasionally until ham is crispy. Remove to paper towel to drain.
  • In sauce pan, melt butter (or use more olive oil) and saute garlic over medium low for about 2-3 minutes (if you love garlic, feel free to add more!).
  • Whisk in milk/flour mixture and add chipped cream cheese, whisking till melted into sauce smoothly. Add Parmesan cheese and whisk till incorporated.
  • In large dish with pasta and peas, toss in crispy ham, and any other vegetables you want (optional).
  • Pour sauce over pasta and mix, pouring in pasta water till nice and creamy.
  • Top with more parmesan and fresh ground pepper.
  • serve immediately with tossed salad and garlic bread. YUM!
