Clean jars with lid ((around 24oz/ 700ml))
Layer 1: your favourite dressing
Layer 2: tomatoes, cucumbers, red onion, asparagus, celery, peppers, carrots
Layer 3: mushrooms, zucchini, beans, lentils, peas, corn, broccoli
Layer 4: boiled eggs and cheese ((feta, gouda, cheddar etc.))
Layer 5: rice, pasta, quinoa or couscous
Layer 6: nuts and greens as lettuce, spinach or arugula.

Steps:

  • Get all the ingredients ready, meaning cut, peel, wash the veggies/fruits. Boil the pasta, quinoa or rice.
  • Prepare the dressing(s)
  • Once everything is laid out chuck all the ingredients according to the layers into the jars. Then lid on top and off they go into the fridge. As easy as that.
  • You'll be a meal prepping master in no time! :-)

8 ounces each uncooked bow tie pasta, medium pasta shells and wagon wheel pasta
2 cups Greek vinaigrette
3 cups cherry tomatoes, halved
1 medium red onion, finely chopped
1 jar (12 ounces) marinated quartered artichoke hearts, drained and coarsely chopped
1 jar (12 ounces) roasted sweet red peppers, drained and chopped
1 cup chopped fresh basil
1 cup grated Parmesan cheese
1 package (3-1/2 ounces) sliced pepperoni
1 can (2-1/4 ounces) sliced ripe olives, drained

Steps:

  • Cook pasta according to package directions for al dente. Drain pasta; rinse with cold water and drain well. Transfer to a large bowl., Add vinaigrette to pasta; toss to coat. Add vegetables, basil, cheese, pepperoni and olives; toss to combine. If desired, transfer to covered jars. Refrigerate until serving.

Make this noodle jar salad before you head to work for a nutritious lunch. It contains mango, carrot and peanuts plus a flavourful Asian-style dressing

Number Of Ingredients 9

50g instant rice noodles
juice 1/2 lime
1 tsp fish sauce
50g mango pieces
1 carrot
½ small pack mint
½ small pack coriander
1 tbsp salted peanuts
pinch chilli flakes

Steps:

  • Put 50g instant rice noodles in a bowl and cover with boiling water, leave to stand for 3 mins, drain then rinse in cold water and drain well. Squeeze juice ½ lime into a jar along with 1 tsp fish sauce. Put 50g mango pieces on top, then add the noodles. Slice 1 carrot into ribbons with a vegetable peeler and pile on top of the noodles.
  • Fill the rest of the jar with ½ small pack mint, ½ small pack coriander, 1 tbsp salted peanuts and pinch chilli flakes. Put the lid on and store in the fridge for up to one day. When you want to serve, tip everything out into a bowl and mix well. Add soy sauce to taste, if you like.
