Who doesn't love a dessert that can be made without turning on the oven? This no-bake cheesecake is light and fluffy, thanks to the whipped cream that gets folded into the cream-cheese mixture. Have no fear--it will have the signature creamy, tangy flavor of the classic.

12 ounces graham crackers (about 18 sheets), broken into pieces
1/3 cup packed light brown sugar
1/4 teaspoon kosher salt
11 tablespoons unsalted butter, melted
1 1/2 cups heavy cream
Three 8-ounce packages cream cheese, at room temperature
1 1/4 cups granulated sugar
2 tablespoons lemon juice (from 1 lemon)
2 tablespoons sour cream
2 teaspoons vanilla-bean paste
Fresh berries, for serving

Steps:

  • For the crust: Add the graham crackers, brown sugar and salt to a food processor and pulse to fine crumbs. Drizzle in the butter and pulse until the crumbs are completely coated with the butter.
  • Press the crumb mixture firmly into the bottom and about 1 1/2 inches up the sides of a 10-inch springform pan, with a 1/4-inch thick rim around the border. (Use the bottom of a measuring cup to help make the crust even on the sides and bottom.) Freeze until firm, about 20 minutes.
  • For the filling: Meanwhile, whip 3/4 cup of the cream in a medium bowl with a whisk until stiff, fluffy peaks form, 3 to 4 minutes (or 1 to 2 minutes using an electric mixer on medium speed); set aside.
  • Beat the cream cheese and 1 cup granulated sugar in a stand mixer fitted with the paddle attachment on medium speed until light and fluffy, scraping down the sides of the bowl as needed, 3 to 4 minutes. Reduce the speed to medium-low and add the lemon juice, sour cream and vanilla-bean paste and beat until just combined, 1 to 2 minutes. Gently fold the whipped cream into the cream-cheese mixture with a large rubber spatula.
  • Pour the batter into the springform pan and smooth the top with an offset spatula. Cover tightly and refrigerate until set, 8 hours and up to 24 hours.
  • Just before serving, add the remaining 3/4 cup cream and 1/4 cup granulated sugar to a medium bowl and whip to soft peaks with a whisk, 3 to 4 minutes (or 1 to 2 minutes using an electric mixer on medium speed). Spoon the whipped cream into a piping bag fitted with a large star tip.
  • Run a knife around the inside edge of the springform pan to loosen the cake, then open the clasps to release the pan ring. Pipe dollops of whipped cream around the border of the cheesecake and top with fresh berries.

HOMEMADE GRAHAM CRACKER CRUST
1 sleeve graham crackers (9 crackers) 1 1/2 cups
1/4 c granulated sugar
8 Tbsp melted butter (1 stick)
1 tsp nutmeg, optional
LIME CHEESECAKE FILLING
2 pkg cream cheese, 8 ounces each
2 can(s) condensed milk
1 c real lemon lemon juice, or lime juice
2 tsp lemon extract
1 small box lime jello,(3 ounce size)
3 drops green food color, optional
LIME CHEESECAKE GLAZE
1/2 c sugar
1 1/2 Tbsp all purpose flour, heaping
1 small box lime jello gelatin (3 oz. size)
1 c water
2 Tbsp lemon or lime juice

Steps:

  • 1. To make the crust add the 9 graham crackers to a food processor and pulverize until they become crumbs. Remove from processor and add to a medium size bowl, then add in the sugar, nutmeg & melted butter.
  • 2. Then pour into a 9 inch spring form pan. Spread evenly over the bottom of the pan, then press down with the bottom of a measuring cup until even in bottom.
  • 3. Place in preheated 350 F degree oven, and bake for 8 minutes then remove from oven and allow to cool.
  • 4. These are the main ingredients to make the cheesecake.
  • 5. Now add the cream cheese & one box of jello to a large bowl.
  • 6. Beat till blended together.
  • 7. Next add in the lime or lemon juice, condensed milk, and extract, & beat to blend then add in optional green food color if desired.
  • 8. Pour into prepared spring form pan. Garnish top with fresh kiwi slices if desired and a maraschino cherry half.
  • 9. In a medium sauce pan add the other box of jello, flour and sugar, and stir to blend.
  • 10. Then pour in water and lemon juice. Place over medium high heat, and bring to boil. until mixture begins to coat the spoon. Remove from heat and set aside to cool.
  • 11. Now pour cooled glaze carefully over top of cheesecake, and place in fridge to cool completely at least 3 -4 hours till set and cheesecake is firm.
  • 12. To serve run a knife around the outer edge of the cheesecake then loosen and remove the sides of pan.
  • 13. Cut serve and enjoy. The kiwi enhances the flavors of the cheesecake. Tasty and delicious.

250g gingernut biscuits
125g unsalted butter, melted
600g cream cheese
100g icing sugar
3 limes, zested (save the juice to use in the glaze)
300ml double cream, whipped to soft peaks
4 gelatine leaves
100g caster sugar
6 limes, juiced and pared, and zest of 3 to 6 limes, zest pared off on 3 with a peeler and all juiced

Steps:

  • Whizz the biscuits to crumbs in a food processor, or tip into a food bag and crush with a rolling pin. Mix with the melted butter, then press into the base of a 20cm springform cake tin. Chill in the fridge until needed.
  • Put the cream cheese, icing sugar and lime zest in a bowl, then beat with an electric mixer until smooth. Tip in the double cream and continue beating until completely combined. Spoon the cream mixture onto the biscuit base, working from the edges inwards and making sure that there are no air bubbles. Smooth the top of the cheesecake down with the back of a dessert spoon. Leave to set in the fridge while you make the glaze.
  • Soak the gelatine leaves in cold water. Tip the other ingredients for the glaze into a saucepan with 200ml water. Cook gently until the sugar has dissolved and the syrup is simmering. Drain and squeeze the gelatine of any excess water, then stir into the hot syrup to dissolve. Leave everything to infuse until just warm, then sieve the syrup into a jug. When cooled, pour over the cheesecake and put in the fridge overnight to set. Carefully remove the cake from tin before serving.

3 cups graham cracker crumbs
2/3 cup sugar
2/3 cup butter, melted
FILLING:
2 envelopes unflavored gelatin
1 cup lime juice
1/4 cup cold water
1-1/2 cups sugar
5 large eggs, lightly beaten
2 teaspoons grated lime zest
2 packages (8 ounces each) cream cheese, softened
1/2 cup butter, softened
1/2 cup heavy whipping cream

Steps:

  • In a large bowl, combine the graham cracker crumbs, sugar and butter. Press onto the bottom and 2 in. up the sides of a greased 9-in. springform pan. Cover and refrigerate for at least 30 minutes., In a small saucepan, sprinkle gelatin over lime juice and cold water; let stand for 1 minute. Stir in the sugar, eggs and lime zest. Cook and stir over medium heat until mixture reaches 160°. Remove from the heat., In a large bowl, beat cream cheese and butter until fluffy. Gradually beat in gelatin mixture. Cover and refrigerate for 45 minutes or until partially set, stirring occasionally. , In a small bowl, beat cream until stiff peaks form; fold into lime mixture. Spoon into crust. 1 tablespoon wheat germ
2 cups plus 1 tablespoon sugar substitute (recommended: Splenda)
16 ounces real cream cheese, room temperature
1 cup sour cream
1 cup whole milk ricotta cheese
3/4 cup Key lime juice (fresh or bottled)
2 tablespoons no sugar added vanilla extract
1/4 cup hot water
2 limes, zested, divided
3 envelopes unflavored gelatin (recommended: Knoxx brand)
3/4 cup boiling water

Steps:

  • Sprinkle the wheat germ and 1 tablespoon sugar substitute over the bottom of the pie plate to create a "faux" crust.
  • In the bowl of an electric mixer, beat the softened cream cheese, sour cream, ricotta cheese, lime juice, 2 cups sugar substitute, vanilla extract, 1/4 cup hot water, and zest of 1 lime on medium speed until well combined.
  • Using a fork to mix, thoroughly dissolve the 3 envelopes of gelatin in 3/4 cup boiling water. Do not let cool and move onto the next step immediately. (It is important that the water be boiling hot and that you mix the gelatin powder in quickly so it is completely dissolved. If not, you will have gummy bear-type lumps.) With the mixer on high and working very quickly so the gelatin does not set, blend the hot dissolved gelatin thoroughly into cheesecake mixture. This creamy mango cheesecake has the unmistakable scent and taste of fresh limes and cardamom - and, best of all, it doesn't require you to turn on the oven. Avoid using fresh mango pulp here: An enzyme in raw mango can prevent the gelatin from setting. (Canned mangoes don't have that enzyme; it's destroyed when they're heated to high temperatures to be preserved.) If you must use fresh mangoes, purée the pulp, then bring it to a boil over medium heat, stirring constantly, and cool before using.

5 ounces/140 grams graham crackers or speculoos
2 tablespoons dark brown sugar
1 (1/4-ounce/7-gram) packet granulated gelatin
1/4 cup/60 milliliters hot water (120 to 140 degrees)
1 cup/240 milliliters heavy cream
1 cup/200 grams granulated sugar
2 (8-ounce/225-gram) packages cream cheese, cubed, at room temperature
1/2 cup/120 milliliters canned unsweetened, puréed mango pulp
1 lime, zested and juiced
1/2 teaspoon ground cardamom
1 (1/4-ounce/7-gram) packet granulated gelatin
1/4 cup/60 milliliters hot water (120 to 140 degrees)
1 cup/240 milliliters canned unsweetened puréed mango pulp
2 tablespoons granulated sugar
1 teaspoon lime juice and 1 teaspoon zest (from 1 lime)

Steps:

  • Generously butter the sides and bottom of an 8- or 9-inch round springform pan. Line the base and the sides with parchment paper and grease again with butter. Chill pan in the refrigerator. (This helps the butter firm up and the cake release more seamlessly.)
  • Start the crust: Pulse the crackers in a food processor until they're a fine powder. Add the brown sugar and pulse to combine, then add the melted butter and pulse again until fully incorporated. Transfer the mixture to the prepared pan and use your fingers or a measuring cup to press it into an even layer. Freeze the pan for 10 to 15 minutes until completely chilled.
  • Prepare the filling: Add 1/4 cup/60 milliliters room temperature water to a small, wide bowl, sprinkle the gelatin over the water and let sit for 5 minutes, until gelatin granules swell. (There should be no dry flecks of gelatin.) Pour the 1/4 cup/60 milliliters hot water over the hydrated gelatin and stir to dissolve.
  • As gelatin hydrates, add the heavy cream and 1/2 cup/100 grams sugar to the bowl of a stand mixer fitted with the whisk attachment, and mix at medium speed until the cream forms stiff peaks, about 2 to 3 minutes. Transfer to a medium bowl and set aside.
  • Wipe down the stand mixer bowl and the whisk attachment. Add the cream cheese and remaining 1/2 cup/100 grams sugar, and whisk on medium-high until smooth, light and fluffy, about 5 minutes. Scrape down the bowl. Add the mango pulp and lime juice, and beat on medium-low, gradually increasing the speed to medium-high once the mango is incorporated, about 2 minutes. Stop the mixer and scrape down the bowl.
  • Add the gelatin mixture and whisk over medium-high until completely incorporated. Remove the bowl from the mixer. Add the whipped cream, lime zest and the cardamom. Fold the cream into the mango mixture until there are no flecks of cream. (The mixture will be very light and airy, resembling a mousse.) Pour this mango mixture over the chilled crust, and level the top with an offset spatula. Return pan to the refrigerator and chill for 30 minutes.
  • As cheesecake chills, prepare the glaze: Add 1/4 cup/60 milliliters room temperature water to a small, wide bowl, sprinkle the gelatin over the water and let sit for 5 minutes, until gelatin granules swell. (There should be no dry flecks of gelatin.) Pour 1/4 cup/60 milliliters hot water over the hydrated gelatin and stir to dissolve.
  • In a separate medium bowl, whisk the mango pulp with the sugar. Whisk in the gelatin mixture. Add 1 teaspoon lime juice and 1 teaspoon lime zest, and whisk to thoroughly combine. Pour this mixture over the top of the cheesecake, swirl the pan to coat evenly, cover the top of the pan with plastic wrap. Refrigerate the cheesecake until the gelatin layer is completely set and firm, at least 6 hours and up to overnight.
  • When ready to serve, remove the plastic wrap, and carefully release the cheesecake from the springform pan. Slice the cheesecake with a sharp, serrated knife. (For cleanest slices, wash the knife with warm water, and wipe dry with a towel between each cut.)
