3 cups strawberries, finely chopped
1/2 cup sugar
Juice of 1/2 lemon
1 teaspoon vanilla extract

Steps:

  • Combine the strawberries, sugar, lemon juice and 2 tablespoons water in a saucepan. Cook over medium heat, stirring occasionally, until the berries break down, about 10 minutes. Remove from the heat; stir in the vanilla.
  • Strain through a fine-mesh sieve into a bowl, pressing against the solids; let cool completely. To store, cover and refrigerate up to 4 days.

1 pint fresh strawberries, hulled
¼ cup white sugar, or more to taste
2 tablespoons water
½ teaspoon balsamic vinegar
2 tablespoons water
1 teaspoon cornstarch

Steps:

  • Combine strawberries, sugar, 2 tablespoons water, and balsamic vinegar in a saucepan and bring to simmer over medium heat.
  • Reduce heat to medium-low, cover, and simmer for 15 minutes.
  • Whisk 2 tablespoons water and cornstarch in a small bowl.
  • Whisk cornstarch mixture into strawberry mixture. Cook, stirring constantly, until mixture thickens, 1 to 2 minutes. Remove from heat.
  • Transfer mixture to a blender and puree until smooth.

I made this with our french toast this morning and it disappeared fast! You can use this on pancakes as well. I guess you could try it on ice cream, but it would have to cool down first because it is quite hot. Enjoy!

4 cups fresh strawberries, sliced
1/4 cup brown sugar
2 teaspoons vanilla
1/4 cup water (I used water) or 1/4 cup apple juice (I used water)

Steps:

  • Bring all ingredients to a boil in a small saucepan.
  • Turn down heat and gently simmer for at least 10-15 minutes (while you are making your french toast, etc.).
  • Let cool for a few minutes as it is very hot!

This is an awesome soup that I make and freeze in individual servings to take to work for lunch. You can also use pot barley, but it will have to cook longer. Enjoy!

3/4 lb beef sirloin, trimmed, cubed into bite sized pieces
2 cups carrots, diced
2 cups celery, diced
1 1/2 cups onions, diced
2 cups potatoes, diced
2 garlic cloves, minced
1 small shallot, minced (optional)
2 (10 ounce) cans mushrooms, use juice too (if using whole mushrooms, cut in half)
1 3/4 cups pearl barley
12 cups nonfat beef broth (substitute chicken if no beef)
2 bay leaves

Steps:

  • Spray large pot with extra virgin olive oil spray. Over med-high heat, lightly brown beef and then add veggies, except for mushrooms. Saute for a 3-5 minutes.
  • Add broth, bay leaf, barley, mushrooms (with juice). Bring to boil.
  • Lower heat and simmer for 30-60 minutes or until barley and veggies are tender. Remove bay leaves. Salt and pepper to taste.

This yummy and easy drink hits the spot during strawberry season! Very easy to adjust if you like more or less lemony sourness. This is more on the sour side because that's what I like! I see no reason to avoid adding a splash of vodka for that extra *punch*! Enjoy!

1 cup fresh strawberries, hulled (greens removed)
1/3 cup granulated sugar, to taste
1/2 cup fresh lemon juice, to taste
1 1/2 cups cold water
ice cube
2 strawberries, unhulled or 2 mint sprigs

Steps:

  • Place cup of strawberries in blender or food processor.
  • In a bowl, combine sugar, lemon juice and 1/2 cup of the water, stirring until sugar dissolves. Add the mixture to berries and blend. Gradually add remaining water, until mixture is smooth.
  • Taste and add more lemon juice or more sugar to taste. The amount listed is on the sour side!
  • Serve over ice cubes in glasses and garnish with unhulled berries on the rim or a sprig of mint on top.
