18 sea scallops
1/2 c whole grain dijon mustard
1/4 c real maple syrup

Steps:

  • 1. Preheat oven to 350°F.
  • 2. Place scallops 1" apart on a foil or parchment lined baking sheet with sides.
  • 3. Combine mustard & maple syrup.
  • 4. Liberally coat the scallops with mixture using a pastry brush.
  • 5. Bake 20-30 minutes, depending on size, until cooked through & opaque.

3/4 pound sea scallops
1 1/2 tablespoons olive oil
1 large shallot, minced
1/4 cup dry white wine
1/3 cup water
2 tablespoons Dijon mustard
2 tablespoons cold unsalted butter, cut into bits
2 scallion greens, cut diagonally into 1/4-inch slices (about 2 tablespoons)
Accompaniment: caraway rice cakes

Steps:

  • Remove tough muscle from side of each scallop if necessary. Pat scallops dry and season with salt and pepper. In a 10-to 12-inch non-stick skillet heat oil over moderately high heat until hot but not smoking and sauté scallops 1 to 2 minutes on each side (depending on size), or until golden and just cooked through. Transfer scallops with tongs to a plate and keep warm, covered loosely.
  • In oil remaining in skillet cook shallot over moderate heat, stirring, until softened. Add wine and boil, scraping up brown bits, 1 minute. Stir in water and mustard and simmer until reduced to about 1/4 cup. Add butter and swirl skillet, returning skillet to heat as necessary, until butter is just incorporated into sauce. Season sauce with salt and pepper.
  • Spoon sauce onto a small platter or 2 plates. Top sauce with scallops and sprinkle with scallion. Serve scallops with caraway rice cakes.

2 -3 slices bacon
2 tablespoons unsalted butter
1 lb fresh scallops
1 cup half-and-half
2 tablespoons Dijon mustard
2 tablespoons vermont pure maple syrup

Steps:

  • Sauté the bacon and pour off the fat.
  • Cool and crumble; set aside.
  • Melt the butter in the same skillet over medium high heat.
  • Briefly sauté the scallops until heated through, about 3 minutes.
  • Remove with a slotted spoon to a warm bowl.
  • Add the half and half to the scallop liquid and boil the cream, stirring occasionally, until reduced to about ¾ cup.
  • Keep an eye on the heat and lower to medium, maintaining a steady reduction.
  • Add the mustard, maple syrup and pour in any juices collected in scallop bowl.
  • Boil for another 3 to 4 minutes until reduced again to sauce consistency.
  • Add the scallops and crumbled bacon to the sauce, toss quickly and serve immediately.

Steps:

  • Lightly score the tops and bottoms of the scallops with a crosshatch pattern (a slanted tic-tac-toe board). Only let the knife go through the surface slightly.
  • Whisk the liquids and seasonings together.
  • Add the scallops and let them marinate in the liquid for 15-30 minutes.
  • Saute on a medium-high heat for 2-3 minute per side.
  • Try to only turn over once.
  • Drizzle the pan juices over the top and serve.

6 slices bacon (4-5 ounces, long strips of bacon)
3 tablespoons minced scallions (green onions)
2 tablespoons Bourbon
2 tablespoons maple syrup
1 tablespoon soy sauce
1 tablespoon Dijon mustard
1/4 teaspoon fresh ground black pepper or 1/4 teaspoon fresh ground tricolor pepper
24 large sea scallops (about 1 1/2 pounds)
cooking spray
4 (12 inch) metal skewers or 4 (12 inch) water-soaked bamboo skewers

Steps:

  • Heat a skillet over high temperature and sauté the bacon for 4-5 minutes, until limp and partially browned; remove from skillet, drain, and set aside to cool.
  • In a bowl, combine the green onions, bourbon, maple syrup, soy sauce, mustard, and pepper, and stir well; remove about 2 tablespoons of marinade to another container and set aside.
  • Add the sea scallops to the marinade in the bowl and toss gently to coat.
  • Cover and place in refrigerator to marinate for 1 hour, stirring occasionally.
  • Preheat your oven broiler; pan spray a broiler pan.
  • Cut the partially cooked bacon strips into 4 sections apiece.
  • Remove the scallops from the marinade (reserve marinade) and wrap a piece of cut bacon around each scallop - if the scallops are very large, they might only reach halfway around.
  • Thread the wrapped scallops onto the skewers (going through each end of bacon strips if they only reach halfway around), making sure to leave space between each scallop so that the bacon will cook well.
  • Place the completed skewers on the pan-sprayed boiler pan and broil for 8 minutes or until the bacon is crisp and the scallops are opaque, occasionally basting with the marinade used with the scallops (how long they need to cook depends on the size of the scallops).
  • Remove skewers from broiler, place them on a serving platter, and brush or drizzle with the reserved marinade (that which was not combined with the scallops in the refrigerator).
  • Note: these can also be cooked on the grill if you watch them carefully so that the scallops do not overcook.
