These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

1 recipe pastry for double-crust pie
6 large Granny Smith apples, peeled and cored
½ cup butter
¾ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 cups water
2 cups white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
  • On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
  • With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
  • In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
  • Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

2 ¼ cups all-purpose flour
¾ teaspoon salt
¼ teaspoon ground cinnamon
¾ cup shortening
7 teaspoons ice cold water, or as needed
6 medium apples, peeled and cored
½ cup brown sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon ground cloves
2 tablespoons unsalted butter
1 cup water
½ cup white sugar
½ cup light corn syrup
2 tablespoons unsalted butter
½ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg

Steps:

  • Whisk together flour, salt, and cinnamon for crust. Cut in shortening until very crumbly. Sprinkle enough water over the mixture to just hold the dry ingredients together; mix together and form into a ball. Wrap with waxed paper and chill in the refrigerator for 20 minutes.
  • Roll dough on a lightly floured surface (1/2 batch at a time) to a 1/8-inch thickness. Cut into six 7-inch squares. Reserve any extra dough for decorative garnish, if desired.
  • Place one apple in the center of each square of dough.
  • Combine brown sugar, cinnamon, nutmeg, and cloves in a small bowl. Divide mixture evenly between the apple cores and dot the top of each apple with 1 teaspoon butter. Bring the opposite corners of each square together at the top of each apple, pressing gently to seal the seams. Transfer to a large baking dish, making sure the dumplings do not touch.
  • Preheat the oven to 500 degrees F (260 degrees C).
  • Combine water, sugar, corn syrup, butter, cinnamon, and nutmeg for syrup in a pan and bring to a boil. Allow to boil for 3 minutes. Pour syrup mixture over the top of all of the dumplings.
  • Bake immediately in the preheated oven until the crust begins to turn light golden brown, 5 to 7 minutes. Reduce the oven temperature to 350 degrees F (175 degrees C) and bake, occasionally spooning hot syrup from the bottom of the pan over the top of the dumplings, until apples are tender, 30 to 35 more minutes.
  • Serve warm.

A family favorite, this apple crumble was originally my grandmother Hazel's recipe which my mom made on a regular basis. She would make two at a time to take to sick or shut-in friends, or to potlucks. There is never any left. Serve warm with French vanilla yogurt.

7 large Cortland apples - peeled, cored, and sliced
1 cup white sugar
1 tablespoon ground cinnamon, or more to taste
1 cup all-purpose flour
¼ cup brown sugar
⅓ cup unsalted butter, cubed

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spread apples in an even layer in a deep dish pie plate or 8-inch square glass casserole dish. Cover with white sugar, then top with cinnamon.

This is the way our family always ate apple dumplings. The dumplings are baked in a cinnamon syrup and rather than a scoop of ice cream, we made nutmeg milk to pour over the top.

2 cups water
1 1/2 cups sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
8 drops red food coloring
1/4 cup butter
2 cups flour
2 teaspoons baking powder
1 teaspoon salt
3/4 cup shortening
1/2 cup milk
6 small apples
6 teaspoons butter
1 cup sugar
3 tablespoons cinnamon
2 cups whole milk
1/2 cup sugar
1/4-1/2 teaspoon nutmeg

Steps:

  • Mix syrup; boil 5 minutes. Remove from heat and add butter.
  • Sift dry ingredients and cut in shortening until coarse crumbs. Add milk, all at once and stir until just moistened. Divide into 6 pieces and roll to 1/4" circle, each.
  • Preheat oven to 375 degrees.
  • Place a cored apple on each circle. Fill core with cinnamon sugar mix. Place pat of butter on top. Fold pastry up over apple and pinch to seal. Place in 9 x 13 pan 1" apart.
  • Pour syrup over dumplings and sprinkle with cinnamon sugar.
  • Bake at 375 for 35-40 minutes.

2 cup all purpose flour
2 Tbsp sugar
¾ tsp salt
1 cup unsalted butter, cut into pieces
1 egg yolk
3 Tbsp water or milk
6 small apples such as Macintosh or Spy
6 Tbsp sugar (¼ cup + 2 Tbsp)
1 tsp cinnamon
½ tsp nutmeg
dash cloves
½ cup raisins
3 Tbsp breadcrumbs
2 Tbsp brandy
1 ½ cup water
1 cup sugar
1 tsp cinnamon
½ tsp nutmeg
3 Tbsp butter
1 cup half and half cream
½ vanilla bean, or 1 tsp vanilla extract
2 egg yolks
2 ½ Tbsp sugar

Steps:

  • APPLE NUTMEG DUMPLINGS: Preheat oven to 375° F. To prepare pastry, combine flour, sugar and salt. Cut in butter until the texture of coarse meal. Add egg yolk and water and blend just until dough comes together. Wrap in plastic wrap and chill for 15 minutes.
  • While pastry is chilling, prepare filling. Peel and core apples. Mix ¼ cup sugar with ½ tsp cinnamon, nutmeg and dash of cloves. Dip apples in mixture to coat. In a separate bowl, combine raisins with breadcrumbs, remaining 2 Tbsp sugar, ½ tsp cinnamon and brandy.
  • Roll out pastry on a lightly floured surface into a rectangle ¼-inch thick, about 20 by 12 inches. Trim edges of dough and cut into 6 squares. Place an apple in the center of each square and fill middle of apple with raisin filling. Wet edges of pastry squares and bring corners up to meet at top of apple and cinch together. Place dumplings in an ungreased baking dish (quite close together).
  • To prepare syrup, bring water, sugar and spices to a simmer for 5 minutes. Remove from heat and stir in butter (this can be prepared ahead of time). Pour over dumplings. Bake for 45 minutes, until golden brown on top. Serve warm.
  • VARIATION: In Step #3 above, before placing dumplings in ungreased baking dish, you can use excess pastry to cut leaf shapes and stems and place over dumplings as garnish - secure with water. Serve warm, drizzled with Crème Anglaise(recipe follows).
  • Bring cream with scraped seeds of vanilla bean to just below a simmer. Whisk together egg yolks and sugar. Gently whisk cream into egg mixture and return to pot. With a wooden spoon over medium-low heat, stir sauce until it coats the back of a spoon, about 4 minutes. Strain and chill.
  • Yield: 1 1/3 cups.

Place an apple in the center of each square. , Combine 2 teaspoons sugar, cinnamon and nutmeg; sprinkle over apples. Dot with butter. Bring up corners of pastry to center; pinch edges to seal. , Place in a greased 11x7-in. baking dish. Pour syrup over dumplings; sprinkle with remaining sugar. , Bake at 375° for 35 minutes or until pastry is golden brown and apples are tender. Serve warm with cream.
