1 (16 ounce) package macaroni
1 (10.75 ounce) can condensed Cheddar cheese soup
1 cup milk
1 pound shredded Colby cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Place macaroni in a 2 quart casserole dish. Stir in cheese soup and milk until well combined. Sprinkle with shredded Colby.
  • Bake 25 to 30 minutes, or until cheese is brown and bubbly.

I remember my mother sending me to the store for 15 cents worth of cheese. The butcher would cut off a slice from a gigantic wheel covered with a wax-coated cloth. 2 cups elbow macaroni, cooked and drained
1 can (28 ounces) diced tomatoes, undrained
1/2 teaspoon onion salt, optional
1/4 teaspoon pepper
2 cups shredded cheddar cheese, divided
2 tablespoons butter

Steps:

  • In a bowl, combine macaroni, tomatoes, onion salt, pepper and 1-1/2 cups cheddar cheese. Pour into a greased 2-qt. baking dish. Dot with butter. Bake, uncovered, at 350° for 45 minutes. Sprinkle with remaining cheese; bake 15 minutes longer.

Mom's cooking is the best! Especially when it's her family-favorite Baked Macaroni and Cheese, loaded with melty Vermont white cheddar. Around our parts, it's just not a holiday meal without it.

1 1/2 c. (8 oz.) uncooked elbow macaroni
3 c. grated Vermont white sharp cheddar cheese
1/4 c. unsalted butter
1/4 c. all-purpose flour
2 c. whole milk
1/2 tsp. salt
1/8 tsp. black pepper

Steps:

  • PREPARE MACARONI & CHEESE LAYERS: Cook macaroni in salted water; drain.
  • In a 1 & 1/2-quart baking dish coated with non-stick cooking spray, layer macaroni and cheese in this order: 1. 1/2 of the macaroni, 2. one cup cheese, 3. remaining macaroni, and 4. one cup cheese. Set aside.
  • PREPARE WHITE SAUCE: Melt butter in a medium saucepan over medium heat. Remove from heat and whisk in flour. Return to heat and gradually whisk in milk. Add salt and pepper. Bring to a boil, stirring; boil gently for about one minute until sauce is thickened.
  • Pour white sauce evenly over the top of the macaroni. Top with remaining one cup cheese.
  • For creamy macaroni and cheese, bake immediately. For "firmer" macaroni and cheese, cover and refrigerate overnight or for at least 4-6 hours before baking.
  • BAKE: Bake at 375℉ for 35-45 minutes until cheese is melted and top is lightly browned.
  • For a 9x13-inch pan, I make 1 & 1/2 times the recipe.
  • For cheese, I always use Cabot brand Vermont sharp or extra-sharp white cheddar.

I loved this macaroni and cheese as a child and still love it today, it is comfort food at it's best. I think the crushed potato chips as a topping and dry mustard as an ingredient make her version of macaroni and cheese stand out.

1 lb elbow macaroni, cooked
CHEESE SAUCE
2 Tbsp butter
2 Tbsp all purpose flour
1 tsp coleman's dry mustard
pinch freshly grated nutmeg
2 c milk
kosher salt and freshly ground black pepper to taste
2 1/2 c sharp cheddar cheese, grated (reserve 1/2 cup for topping)
crushed potato chips as a topping

Steps:

  • 1. Boil elbow, drain and put into a buttered casserole dish; set aside.
  • 2. In the top of a double boiler melt butter and add flour, cook for several minutes to get the flour taste out. Whisk in dry mustard, nutmeg and salt and pepper to taste. Then slowly add milk, whisking to incorporate roux with the milk.
  • 3. When basic white sauce is smooth and creamy add 2 cups shredded cheddar cheese. Stirring until cheese is melted.
  • 4. Pour cheese sauce over elbows and mix well. Top with additional 1/2 cup cheese and crushed potato chips.
  • 5. Bake at 350-degrees for 35-40 minutes until bubbly.

1-1/2 cups uncooked elbow macaroni
5 tablespoons butter, divided
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups whole milk
1 cup shredded cheddar cheese
2 ounces cubed Velveeta
2 tablespoons dry bread crumbs

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a saucepan, melt 4 tablespoons butter over medium heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add the cheeses, stirring until cheese is melted. Drain macaroni., Transfer macaroni to a greased 1-1/2-qt. baking dish. Pour cheese sauce over macaroni; mix well. Melt the remaining butter; add the bread crumbs. Sprinkle over top. Bake, uncovered, at 375° for 30 minutes or until heated through and topping is golden brown.
