Roasted Mushrooms with Balsamic and Soy image

Deliciously easy roasted mushrooms in a balsamic and garlic soy glaze! A stand out side or main for your dinner table!

Number Of Ingredients 11

2 pounds (1 kg) mushrooms
1 tablespoon unsalted butter, (melted)
1 tablespoon oil
3 tablespoons balsamic vinegar
2 tablespoons soy sauce
4 cloves garlic, (minced or chopped)
1/2 teaspoon parsley, (chopped)
1/2 teaspoon thyme, ((or rosemary))
1/2 teaspoon brown sugar, ((omit for low carb or KETO))
Coarse salt
Cracked black pepper, (to taste)

Steps:

  • Preheat oven to 400°F (200°C).
  • Lightly grease a large baking sheet/pan with nonstick cooking oil spray.
  • Wipe mushrooms over with a damp sheet of paper towel to clean off dirt and debris.
  • In a large bowl, combine the mushrooms with the melted butter, oil, balsamic vinegar, soy sauce, garlic, parsley, thyme, brown sugar, salt and pepper. Toss to evenly coat.
  • Arrange mushrooms in a single layer on prepared baking sheet.
  • Roast in hot oven for 15-20 minutes, mixing them halfway through cooking, until tender.

2 teaspoons soy sauce
1 recipe (to taste) ground black pepper

Steps:

  • Melt the butter in skillet over medium heat; add the mushrooms; cook and stir until the mushrooms have softened and released their liquid, about 5 minutes.
  • Stir in the garlic; continue to cook and stir for 1 minute.
  • Pour in the soy sauce; cook the mushrooms in the soy sauce until the liquid has evaporated, about 4 minutes.

3 cups dried shiitake mushrooms (about 3 ounces)
1/3 cup reduced-sodium soy sauce
1 tablespoon raw or brown sugar
1/2 teaspoon toasted sesame seeds
freshly ground black pepper

Steps:

  • Bring 3 cups dried shiitake mushrooms (about 3 ounces), 1/3 cup reduced-sodium soy sauce, 1 tablespoon raw or brown sugar, and 1 cup water to a boil in a small saucepan. Cover pan; reduce heat to medium-low. Simmer, stirring occasionally, until mushrooms are softened and all liquid is absorbed, 12-15 minutes.
  • Let mushrooms cool slightly, then thinly slice. Transfer to a small bowl, add 1/2 teaspoon toasted sesame seeds, and season with freshly ground black pepper.

2 tsp soy sauce
black pepper, to taste

Steps:

  • 1. Melt butter in skillet over medium heat, add mushrooms. Cook and gently flip mushrooms until the mushrooms have softened and released their liquid. About 5 minutes
  • 2. Stir in garlic; continue to cook 1 minute. Pour in soy sauce until liquid has evaporated, about 4 minutes. Sprinkle with black pepper. Serve over steak or any dish you desire.
