Four 3-inch-thick slices country bread
4 cups heavy cream
1 cup vanilla sugar, plus more for sprinkling
1/2 cup brandy
2 teaspoons kosher salt
9 eggs
4 tablespoons unsalted butter
All-purpose flour, for sprinkling
Powdered sugar, for serving
Maple syrup, for serving

Steps:

  • Place the bread in a large bowl and set aside.
  • Whisk together the cream, vanilla sugar, brandy, salt and eggs (or use a blender). Pour over the bread. Let it sit for a few minutes, and then turn the bread over to ensure proper absorption. Cover with plastic wrap and refrigerate overnight.
  • Preheat the oven to 450 degrees F. Heat large oven-proof saute pan over medium-high heat and add the butter. Sprinkle some flour and some vanilla sugar on top of the bread slices. When the foam from the butter subsides, put the soaked bread in the pan and cook on one side, about 5 minutes. Flip the bread and place the pan in the oven until cooked through and custardy in the middle, 10 to 15 minutes.
  • Serve with powdered sugar and maple syrup.

6 eggs
1 cup cream
1/4 teaspoon salt
1 tablespoon ground cinnamon
1 tablespoon pure vanilla extract
12 slices thick bread
2 cups coarsely ground almonds
2 tablespoons butter
Powdered sugar
Sliced seasonal fruit

Steps:

  • Beat the eggs, add the cream, salt, cinnamon and vanilla. Submerge the bread slices in the egg mixture for 5 minutes. Lay both sides of the bread in the almonds to coat. Heat the butter in a heavy pan until the foam subsides, then add the slices of bread. Cook over low flame until delicately brown. Sprinkle with powdered sugar, garnish with sliced fruit and serve hot.

1 (10 ounce) package sliced mushrooms
1 small onion, finely chopped
salt
fresh ground pepper
5 large eggs
2 cups whole milk
1/2 cup freshly grated parmigiano-reggiano cheese
1/4 teaspoon freshly grated nutmeg
6 cups day-old French bread cubes, lightly toasted, 1-inch cubes
1/2 cup grated gruyere cheese or 1/2 cup emmenthaler cheese

Steps:

  • Butter the insert of a large slow cooker.
  • In a large skillet, melt the 3 T butter over medium heat.
  • Add the mushrooms and onion and cook, stirring often, until the mushrooms juices evaporate and the mushrooms are golden, about 10 minutes.
  • Season to taste with salt and pepper.
  • In a large bowl, beat the eggs until blended.
  • Beat in the milk, Parmesan, nutmeg, ½ teaspoon salt, and pepper to taste.
  • Stir in the mushrooms.
  • Place the bread cubes in a large bowl.
  • Pour the mixture over the bread cubes and stir well.
  • Scrape the mixture into the slow cooker.
  • Press the bread cubes down into the liquid.
  • Sprinkle with the Gruyere.
  • Cover and cook on HIGH for 1 ½ to 2 hours, or until a knife inserted in the center comes out clean.
  • Serve hot, scooping it out of the dish.

1 cup whole milk
3 large eggs, divided
1/2 cup grated parmesan
1 tablespoon unsalted butter, softened
2 teaspoons red-wine vinegar plus a few drops for cooking eggs
3 cups baby greens (2 ounces)
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat oven to 400°F with rack in middle.
  • Butter a 1-quart shallow baking dish or a 9-inch pie plate. Arrange bread in 1 layer in dish.
  • Whisk together milk, 1 egg, and 1/4 teaspoon each of salt and pepper. Pour over bread. Sprinkle with cheese and press lightly to help bread absorb custard. Let stand until absorbed, 15 to 30 minutes.
  • Dot with butter and bake, uncovered, until puffed and golden, 20 to 25 minutes.

2 eggs
1 cup sugar
1 tablespoon cornstarch dissolved in a splash of water
1 cup whole milk
1/2 teaspoon freshly grated nutmeg
8 slices stale white bread or 6 slices thick cut stale bread
Butter, for griddle pan
Warm maple syrup, powdered sugar, cinnamon sugar and/or fresh berries for topping.
Three Berry Compote, recipe follows
1/2 cup sugar
1 lemon, juiced
1/2 cup water
1 pint strawberries, sliced
1 cup raspberries
1 cup blackberries
1/4 cup maple syrup or honey

Steps:

  • Preheat nonstick griddle or skillet over medium heat. Beat eggs very well, add sugar and beat again. Add cornstarch in water and beat that in, then add milk and nutmeg. Coat bread thoroughly in egg-milk mixture. Lightly butter hot pan with butter nested in paper towels. Add bread to the pan and cook slowly, 3 or 4 minutes on each side, 2 to 3 slices at a time. Serve hot with your favorite toppings or Three Berry Compote.
  • Combine sugar, lemon and water in a small sauce pot. Over moderate heat, dissolve sugar into water. Stir in fruit, coating it in sugar water and bring the fruit and water to a bubble. Reduce heat and simmer 7 or 8 minutes. Remove fruit with a slotted spoon to a serving dish and add maple syrup or honey to the pan. Thicken syrup 5 minutes and pour over fruit. Serve with French toast, pancakes or waffles.

1/2 pint fresh strawberries, hulled and sliced
2 tablespoons sugar, divided
3 tablespoons orange liqueur (recommended: Grand Marnier), divided
6 extra-large eggs
1 1/2 cups milk or half-and-half
2 tablespoons honey
1 1/2 teaspoons pure vanilla extract
1 teaspoon grated orange zest
2 teaspoons kosher salt
1 large brioche loaf or challah
Unsalted butter
Vegetable oil
1/2 cup (1 1/2 ounces) sliced blanched almonds, toasted
Confectioners' sugar, to serve

Steps:

  • Combine the sliced strawberries, 1 tablespoon of the sugar, and 1 tablespoon of the orange liqueur in a small bowl and set aside.
  • Preheat the oven to 250 degrees F.
  • In a large bowl, whisk together the eggs, milk, honey, 1 tablespoon of sugar, 2 tablespoons orange liqueur, the vanilla, orange zest, and salt. Slice the bread in 3/4-inch slices. Pour the egg mixture into a large shallow plate and soak a few slices of bread for 4 minutes, turning once.
  • Heat 1 tablespoon each of butter and oil in a very large saute pan over medium heat. Take each slice of bread from the egg mixture, dip one side in the toasted almonds, and place in the saute pan, almond side down. (While you're cooking each batch, add more bread to the egg mixture to soak.) Cook for 2 to 3 minutes on each side, until nicely browned. Place the cooked bread on a baking sheet and keep it warm in the oven. Wipe out the pan with a dry paper towel, add more butter and oil, and continue to fry the remaining soaked bread until they're all cooked. Sprinkle with confectioners' sugar and serve hot with the strawberries.

4 large shallots, halved, thinly sliced
1 teaspoon chopped fresh thyme
1 1/4 pounds fresh wild mushrooms (such as chanterelles, stemmed shiitake, and oyster), trimmed, thickly sliced
1/2 pound button mushrooms, thickly sliced
1/3 cup Madeira
3/4 pound haricots verts or small slender green beans, trimmed
3 tablespoons (about) low-salt chicken broth (optional)

Steps:

  • Melt 1/4 cup butter in large pot over high heat. Add shallots and thyme; sauté until shallots begin to brown, about 4 minutes. Add all mushrooms; sprinkle with salt and pepper. Sauté until juices evaporate, about 10 minutes. Add Madeira; toss until evaporated, about 1 minute. Set aside.
  • Cook haricots verts in medium pot of boiling salted water until crisp-tender, about 4 minutes. Drain. Let stand until ready to use, up to 2 hours.
  • Add remaining 1 tablespoon butter to mushrooms in pot. Add haricots verts. Toss over medium-high heat until butter melts and vegetables are heated through, adding broth by tablespoonfuls if mixture is dry, about 3 minutes. Season to taste with salt and pepper. Transfer vegetables to bowl and serve.

Yes, this is French toast, but a superior one. Unlike normal French toast this batter cooks into a custardy, crispy coating that leaves the bread creamy and oh so good. The use of good egg bread is a must here. Homemade is best, however store bought (such as Hawaiian bread) will work in a pinch.

4 (1/2 inch) slices egg bread
1 egg
5 tablespoons unsalted butter
3 tablespoons white sugar
1 pinch salt
½ teaspoon ground cinnamon
1 pinch ground nutmeg
⅓ cup all-purpose flour
¾ cup milk
¾ teaspoon vanilla extract

Steps:

  • Cut the bread and place on a wire rack to dry out a little as you prepare the batter.
  • Whisk the egg to blend. Melt 3 tablespoons of the butter in a saucepan or on the stovetop and allow to cool slightly. Whisk the sugar, salt and spices into the egg. When the butter has cooled slightly, slowly drizzle it in to the egg, whisking all the time. A little at a time, add the flour to the egg mixture to make a smooth thick paste. After it is all added, slowly blend in the milk and finally the vanilla. Whisk until just smooth and set aside.
  • Heat the remaining butter in a large skillet over medium heat. Dip a slice of the bread in the batter and allow to soak for 30 seconds, no more. Remove from the batter and allow the excess to drip off, back into the bowl. Place the battered slice in the skillet. Repeat with the remaining slices. Cook until golden on one side and then flip to brown the other. Serve immediately--a fresh squeeze of lemon juice and a good dusting of powdered sugar is traditional.
