1 pound sweet Italian sausages, casings removed
3/4 pound mushrooms, chopped
1/2 teaspoon dried crushed red pepper
3/4 cup (or more) canned low-salt chicken broth
3/4 cup whipping cream
1 pound linguine
1 cup (packed) grated Parmesan cheese (about 3 ounces)

Steps:

  • Sauté sausage in heavy large skillet over medium-high heat until brown and cooked through, breaking up large pieces with fork, about 12 minutes. Using slotted spoon, transfer sausage to plate. Add mushrooms and crushed red pepper to drippings in skillet. Cover and cook until mushrooms are tender, stirring occasionally, about 6 minutes. Add 3/4 cup broth and cream to skillet and set aside.
  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain pasta; return to same pot. Add sausage, mushroom mixture and cheese. Toss over medium heat until sauce coats pasta thickly, adding more broth by 1/4 cupfuls if mixture is dry, about 3 minutes. Season pasta to taste with salt and pepper.

2 medium lemons
1/4 cup butter, cubed
1/4 cup olive oil
8 ounces sliced fresh cremini mushrooms
1 medium onion, chopped
6 garlic cloves, minced
1/4 cup sun-dried tomatoes (not packed in oil), julienned
2/3 cup chardonnay
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
1-1/2 pounds uncooked shrimp (26-30 per pound), peeled and deveined
1/4 cup chopped fresh parsley
Grated Parmesan cheese, optional

Steps:

  • Cook linguine according to package directions. Meanwhile, halve and thinly slice one lemon. Finely grate peel from remaining lemon; place in small bowl. Cut lemon crosswise in half; squeeze juice into bowl; set aside., In a 6-qt. stockpot, heat butter and oil over medium-high heat. Add mushrooms, onion and garlic; cook and stir 5 minutes. Add tomatoes, lemon slices, lemon peel and juice; cook 5 minutes longer, stirring occasionally., Stir in chardonnay, salt, pepper and pepper flakes; cook 3-5 minutes, stirring occasionally until wine is evaporated. Add shrimp; cook and stir 4-6 minutes or until shrimp just turn pink., Reduce heat to medium-low. Drain linguine, reserving 1 cup pasta water. Stir linguine into shrimp mixture, adding enough reserved pasta water to moisten. Heat through. Serve with parsley and, if desired, cheese.

1 pound beef top round steak, cut into thin strips

1/2 cup chopped onion
4 -6 garlic cloves, minced
24 ounces mushrooms, sliced, use favorite(s)
1/3 cup white wine
1/2 teaspoon salt
1/4-1/2 teaspoon pepper
1/2 teaspoon basil
1/2 cup parsley, chopped
6 tablespoons heavy cream
1/4 cup shredded parmesan cheese, to sprinkle

Steps:

  • Cook pasta in boiling salted water according ton package directions; drain and keep hot.
  • While pasta is cooking: In a large skillet, melt butter. Add onion, garlic and mushrooms; sauté over med-high heat for about 5 minutes.
  • Add wine, salt, pepper and basil to the skillet. Cover and simmer for 8-10 minutes, stirring occasionally.
  • Uncover. Add parsley and heavy cream; simmer until liquid thickens/reduces a bit.

I think the bacon helps. For kids or people who claim to not like Brussels sprouts, try shredding them to tone down the flavor a bit.

1 (16 ounce) package linguine
2 tablespoons olive oil, or as needed
1 pound bacon, cut into bite-size pieces
½ teaspoon dried rosemary
1 ½ pounds crimini mushrooms, sliced
salt and ground black pepper to taste
1 ½ pounds Brussels sprouts, trimmed and chopped
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes; drain pasta, reserving 1/2 cup pasta water. Return pasta to the pot and toss with olive oil to coat.
  • Place bacon in a large skillet and cook and stir until bacon begins to crisp, about 10 minutes. Drain and discard 1/2 the bacon fat, leaving bacon in the skillet; stir in rosemary.

1 lb linguine pasta
6-8 Tbsp butter
1 medium onion, chopped
8 oz fresh mushrooms, sliced
4 clove garlic, pressed or minced
1 c dry white wine, chicken broth or bottled clam juice
4 can(s) 6.5 oz each, chopped clams - drained, rinsed and picked through, with juices reserved
2 Tbsp sour cream
1/4 c chopped flat leaf parsley
1 bottle clam juice to be used as needed for more liquid
salt and pepper to taste

Steps:

  • 1. Melt butter over medium high heat in a large skillet; Add onions, mushrooms, and garlic. Saute until tender.
  • 2. Pour in wine or broth. Simmer for 10 minutes, reducing heat if necessary.
  • 3. Stir in clams, reserved clam juice, sour cream, pepper, and parsley and simmer gently for another 20 minutes. If you want or need more "juice" in your sauce, add some of the bottled clam juice now.
  • 4. Bring a large pot of lightly salted water to a boil and cook pasta for about 8 - 10 minutes, or until al dente. Drain.
  • 5. Toss sauce with linguine and serve. Enjoy.

4 ounces dried mushrooms, such as porcini or chanterelle
4 cups boiling water
2 sprigs fresh rosemary
2 sprigs fresh thyme, plus 2 teaspoons finely chopped
7 tablespoons unsalted butter
5 tablespoons all-purpose flour
1 1/2 cups heavy cream
1 onion, diced
1 pound button mushrooms, stems removed, quartered
1 pound shiitake mushrooms, stems removed, sliced
2 1/2 teaspoons coarse salt
1/2 teaspoon freshly ground pepper
1 pound linguine
Unsalted butter, for pan
1/2 cup grated pecorino Romano cheese

Steps:

  • Place dried mushrooms in a bowl, and pour 4 cups boiling water over them. Let sit 30 minutes to allow flavors to infuse. Make a bouquet garni: Wrap rosemary and thyme sprigs in cheesecloth, and tie with kitchen twine; set aside. Lift out mushrooms with a slotted spoon, and place in another bowl. Press mushrooms to release any retained stock, and pour liquid back into bowl; set mushrooms aside. Strain mushroom liquid through a fine-mesh sieve lined with a paper towel. You should have about 4 cups of mushroom stock; set aside.
  • Melt 5 tablespoons butter in a large saucepan over medium heat. When bubbling, add flour. Cook, stirring until mixture begins to brown, about 3 minutes. While whisking, slowly pour in mushroom stock. Continue cooking, whisking constantly, until the mixture bubbles and becomes thick. Stir in cream and reserved bouquet garni. Reduce to a gentle simmer, and cook 30 minutes, stirring occasionally.
  • Meanwhile, in a large ovenproof skillet, heat remaining 2 tablespoons butter over medium heat. Add onion, and cook until it begins to soften, about 3 minutes. Add button mushrooms, and cook until they release their juices. Add shiitakes, reserved mushrooms, and 2 teaspoons chopped thyme, and cook until all are tender, about 5 minutes. Add cream sauce to skillet, and stir to combine. Season with salt and pepper, and set aside.
  • Preheat oven to 375 degrees. Bring a large pot of water to a boil. Add pasta; cook until very al dente, 2 to 3 minutes less than manufacturer's instructions. Transfer noodles to a colander, and rinse with cold water to stop the cooking. Stir noodles into mushroom mixture. Sprinkle with grated cheese, and bake in skillet until browned on top and mixture is bubbling, about 30 minutes. Transfer dish to a wire rack to cool 5 minutes before serving.

I love them in this pasta--it feels surprisingly elegant--but you could make the mushrooms on their own for salads or grain bowls. I use white pasta here since whole wheat's earthy flavor can overwhelm the mushrooms.

12 ounces (340 grams) linguine
1/4 cup (60 milliliters) canola or vegetable oil

8 oz mushrooms, sliced
3 medium garlic cloves, minced
1/2 tsp dried rosemary, crumbled
freshly ground black pepper, to taste
1/2 c heavy cream
salt, to taste
4 oz dried linguine
2 oz cream cheese, cut into small cubes
fresh parsley, chopped

Steps:

  • 1. Melt butter in heavy large skillet over medium-low heat.
  • 2. Add mushrooms, garlic, rosemary and generous amount of pepper.
  • 3. Cook until mushrooms exude their juices, stirring occasionally, about 5 minutes.
  • 4. Add cream and simmer until sauce thickens slightly, about 3 minutes. Season with salt.
  • 5. Meanwhile, cook pasta in large pot of boiling salted water. Drain well.
  • 6. Add pasta and cheese to sauce and stir until cheese melts.
  • 7. Sprinkle with parsley and serve.

1/2 cup fresh parmesan cheese, grated

Steps:

  • Cook the linguine according to package directions.
  • Meanwhile, in a large skillet, melt the butter over medium high heat. Add the mushrooms and cook until softened and browned, about 10 minutes. Add the garlic and saute 2 minutes more. 8 ounces kraft brand neufchatel cheese
1 (10 1/2 ounce) can cream of mushroom soup
3/4 cup milk
1/4 cup cheddar cheese, shredded
1/4 cup parmesan cheese, shredded
1 lb linguine, cooked and drained
12 ounces canned albacore tuna, drain and rough chunk
1/2 cup shredded medium sharp cheddar
1/2 cup jalapeno potato chips, crumbled (I use Lay's Bistro Gourmet )

Steps:

  • Heat oven to 350°F.
  • Lightly oil a 13 x 9 baking dish, set aside.
  • Sauté garlic, onion and celery in olive oil till translucent, stir in mushrooms, set pan aside.
  • In a large microwave safe bowl combine Neufchatel cheese, soup and milk, heat to warm, whisking till smooth.
  • Add sauté mixture and the next two cheeses to bowl, stirring to combine.
  • Into the same large bowl add the linguine and tuna, add these in small increments to coat evenly. Pour into prepared baking dish. Top with remaining cheddar cheese and potato chips.
  • Bake 20- 25 minutes until hot and golden. Ovens vary.

13 1/2 ounces whole grain linguine, prepared as directed on box
1/2 cup chopped onion
6 tablespoons butter
8 ounces baby bella mushrooms (stems removed and sliced)
1 lb shrimp (shelled and deveined)
2 cups heavy cream
2 tablespoons Italian parsley, chopped
1/2 cup grated parmigiano reggiano cheese
salt
pepper

Steps:

  • 1. Saute onion in butter with a pinch of salt.
  • 2. Add mushrooms, saute for a few minutes then add shrimp. Saute just until shrimp is opaque.
  • 3. Add cream, bring to a simmer and simmer until thickened.
  • 4. If desired, add salt and pepper to taste.
  • 5. Stir in parsley. Remove from heat. Toss with cooked pasta and cheese.

6 ounces sliced fresh mushrooms
1 onion, chopped
¼ cup butter
2 pounds boneless skinless chicken breasts, cut into 1 inch pieces
¼ cup all-purpose flour
1 teaspoon salt
2 cups chicken broth
1 cup sour cream
1 (12 ounce) package dried linguine pasta
½ teaspoon minced garlic
ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add linguine pasta, and cook until tender, about 8 minutes. Drain.
  • Meanwhile, melt butter in a large skillet over medium heat. Add onion and mushrooms, and cook until tender. Remove the onions and mushrooms from the skillet with a slotted spoon; set aside.
  • Add chicken pieces to the pan, and sprinkle with garlic. Cook and stir until evenly browned, and cooked through.
  • Whisk the flour and salt into the pan drippings until smooth. Gradually whisk in the chicken broth, and simmer over low heat until slightly thickened. Return the mushrooms and garlic to the pan, and stir in sour cream. Cook until heated through, but do not boil. Serve over linguine pasta.

This is from the Horn of the Moon cookbook. This was pretty good. I would ½ the recipe for two people and add a splash of red wine. Serve with some cheesy bread sticks.

3 quarts water
6 tablespoons butter (I use less)
8 -10 large garlic cloves, minced
6 cups sliced mushrooms
1 teaspoon basil
1/4 teaspoon salt
1 dash fresh black pepper
2 tablespoons olive oil
1 lb linguine
2 tablespoons fresh minced parsley
grated parmesan cheese

Steps:

  • Cook the pasta in the water. Drain.
  • Melt 2 T butter in a saucepan. Add garlic and cook for a minute, then add mushrooms, basil and salt and cook until just tender.
  • Add remaining 4 T butter, pepper and oil.
  • Stir and remove from the heat. Add the parsley to the sauce.
  • Toss with the pasta and serve topped with Parmesan cheese.

1 (16 ounce) package uncooked linguine
1 lb fresh wild mushroom (chanterelles, shiitake, oyster, etc)
4 tablespoons butter
2 garlic cloves, minced
4 tablespoons minced shallots
1/2 cup dry white wine
1/2 cup chicken broth
1 cup cream
nutmeg, freshly grated to taste
1/3 cup thinly sliced green onion
2 teaspoons fresh lemon juice
salt and pepper
2 teaspoons fresh thyme leaves
white truffle oil
black truffle, shaved fresh at the time of serving

Steps:

  • Cook linguine pasta according to package directions; drain and return to pan to keep warm.
  • Clean mushrooms with a damp cloth and cut into 1/4-inch slices.
  • In a large frying pan, saute mushrooms in butter for 2 minutes.
  • Add minced garlic and shallots; sauté an additional 2 minutes.
  • Add white wine and simmer until wine is reduced by half.
  • Add chicken broth, cream, and nutmeg; simmer until sauce thickens.
  • Remove from heat. Add green onions, lemon juice, salt, and pepper.
  • Add drained pasta to sauce; tossing gently to coat the pasta.
  • Add more chicken broth if sauce seems too thick.
  • Place pasta on individual plates.
  • Spoon any mushrooms left in the pan over the top and sprinkle with fresh thyme leaves.
  • Drizzle white truffle oil over the top.
  • Using a truffle shaver, shave a few slivers of fresh truffle over each plate before serving.
