GRILLED FRENCH BREAD PIZZA WITH MUSHROOM PESTO AND FONTINA CHEESE



Grilled French Bread Pizza with Mushroom Pesto and Fontina Cheese image

Number Of Ingredients 12

1-ounce dried porcini mushrooms
1 pound cremini or white button mushrooms, stems removed
1/4 cup canola oil
Salt and freshly ground black pepper
Whole head roasted garlic, pulp removed
1/4 cup toasted walnuts
1/4 cup loosely packed fresh flat-leaf parsley
2 teaspoons fresh thyme leaves
3/4 cup extra-virgin olive oil
1/4 cup plus 2 tablespoons grated Pecorino Romano cheese
1 loaf French bread, about 24 inches long, sliced in 1/2 lengthwise
2 1/2 cups grated fontina cheese

Steps:

  • Place the porcini mushrooms in a bowl and cover with boiling water. Let sit until softened, 30 minutes.
  • Heat the grill to high.
  • Brush the cremini or white button mushroom caps with the canola oil and season with salt and pepper. Place the mushrooms on the grill, cap side down and grill until golden brown and slightly charred, 4 to 5 minutes. Turn the caps over and continue grilling until the mushrooms are cooked through, about 5 minutes longer. Remove from the grill, let cool slightly then coarsely chop.
  • Remove the porcinis from the soaking liquid and place in the bowl of a food processor with a few tablespoons of the soaking liquid. Add cremini mushrooms, garlic pulp, walnuts, parsley and thyme in a food processor and process until finely chopped. With the motor running, slowly add 1/2 cup of the olive oil and process until smooth. Add 1/4 cup of the Romano cheese and pulse a few times to incorporate. Season with salt and pepper.
  • Brush the bread on the cut side with the remaining 1/4 cup of olive oil and season with salt and pepper. Evenly spread the pesto over the cut side of each half of bread. Top the pesto with the fontina cheese, return to the grill, cheese side up, close the cover of the grill and cook until the cheese has melted, about 2 minutes. Remove from the grill and sprinkle with the remaining Romano.

1 cup shredded part-skim mozzarella cheese
1 can (4 ounces) mushroom stems and pieces, drained
1/3 cup mayonnaise
2 tablespoons shredded Parmesan cheese
2 tablespoons chopped green onion
1 loaf (1 pound) unsliced French bread

Steps:

  • In a small bowl, combine the mozzarella cheese, mushrooms, mayonnaise, Parmesan cheese and onion. Cut bread in half lengthwise; spread cheese mixture over cut sides. , Grill, covered, over indirect heat or broil 4 in. from the heat until lightly browned, 5-10 minutes. Slice and serve warm.

1 Vienna or Hoagie roll (6 to 8 inches)
2 tablespoons butter, melted
3/4 teaspoon poppy seeds
3/4 teaspoon minced dried onion
1/2 teaspoon ground mustard
1/8 teaspoon seasoned salt
1/8 teaspoon lemon juice
1/2 cup sliced fresh mushrooms
2 tablespoons finely shredded Swiss cheese

Steps:

  • Cut bread diagonally into 1-in. slices to within 1/2 in. of bottom loaf. Repeat cuts in opposite direction. In a bowl, combine the butter, poppy seeds, onion, mustard, salt and lemon juice. Drizzle over cut bread and into cut slits. Place mushrooms and cheese in slits. Wrap bread in foil. Bake at 350° for 15-20 minutes or until warmed.

•1 ounce dried porcini mushrooms (about 1 cup), broken in half if large
•2 cups boiling water
•4 ounces French baguette, cut into 3/4-inch cubes (about 3 cups)
•3 tablespoons unsalted butter, plus more for coating the baking dish
•1 tablespoon olive oil
•8 ounces chanterelle mushrooms, stems trimmed and cut in half
•8 ounces cremini mushrooms, stems trimmed and cut in half or quartered if large
•1/3 cup small-dice shallot (from about 1 medium shallot)
•3/4 teaspoon finely chopped fresh thyme leaves
•1/2 cup dry white wine
•Kosher salt
•Freshly ground black pepper
•1 large egg, lightly beaten
•1/2 cup heavy cream
•6 ounces Cambozola cheese, cut into small pieces (rind included)

Steps:

  • Heat the oven to 375°F . Coat a shallow 2-quart baking dish with butter. Place the porcinis in a medium heatproof bowl. Pour the boiling water over them and let the mushrooms sit until softened, about 12 minutes. Meanwhile, spread the bread cubes in an even layer on a baking sheet and bake until light golden brown, about 10 minutes. Transfer to a large bowl and set aside. Heat the butter and oil in a large frying pan over medium-high heat until the butter is foaming. Add the chanterelle and cremini mushrooms and cook, stirring rarely, until the mushrooms have released their liquid and are golden brown, about 8 to 10 minutes. Add the shallot and thyme, stir to combine, and cook for 1 minute. transfer the rehydrated porcinis to the pan and set the mushroom liquid aside. Cook, stirring occasionally, until the shallots have softened, about 1 minute more. Add the wine, scrape up any browned bits from the bottom of the pan, and cook until the wine has almost completely evaporated, about 1 to 2 minutes. Taste and season with salt and pepper as needed. Scrape the mushroom mixture into the bowl with the toasted bread cubes (reserve the pan), add the egg, and stir to combine. Measure 1/2 cup of the reserved mushroom liquid, being careful not to include the sediment, and discard the remaining liquid. Drizzle the measured liquid into the bowl and stir to combine. Transfer the mushroom-bread mixture to the prepared baking dish and spread it into an even layer Return the reserved pan to medium-low heat, add the cream, and bring to a simmer. 2 tablespoons extra virgin olive oil
2 garlic cloves, thinly sliced
pinch of hot red pepper flakes
3 cups tightly packed mixed fresh mushrooms, stems removed, wiped clean with a damp cloth
leaves of 4 fresh thyme sprigs
fine sea salt
freshly ground black pepper
½ cup canned crushed tomatoes with their liquid
1 quart vegetable stock, simmering in a pot on a back burner
four 1-inch-thick slices Tuscan country bread, grilled or toasted
4 large eggs
¼ cup grated Parmigiano-Reggiano

Steps:

  • Heat the olive oil in a wide flameproof casserole over medium heat. Add the garlic and sauté until browned, about 3 minutes. Add the red pepper and the mushrooms, then the thyme leaves. Stir well and season with salt and pepper. Cook for 5 minutes. Add the tomatoes, taste and adjust the seasoning, and cook for an additional 5 minutes. Add the stock, raise the heat to high, bring to a boil, then lower the heat and simmer for 20 minutes. Place a slice of bread in each of 4 bowls. Break the eggs carefully into the bowls on top of the bread, then top each egg with 1 tablespoon Parmigiano. Carefully ladle the hot soup over the egg and crouton and serve.

1/2 cup margarine
1 tablespoon diced onion
1 tablespoon poppy seed
2 cups shredded mozzarella cheese
1 (4 ounce) can mushrooms
1 loaf French bread

Steps:

  • Melt margarine and add onions and poppy seeds. Cut bread lengthwise and put bottom half in foil.
  • Spread mushrooms and cheese on bread, top with other half of bread. Slowly pour margarine mixture over top.
  • Wrap foil around bread and bake at 350 degrees for 30 minutes.
