BEEF TIPS WITH MUSHROOM, SHERRY, GARLIC AND BUTTER-ALMOND-CITRUS RICE

Steps:
- Heat a sauce pot over medium heat, add butter to the pot and melt. Add almonds and toast 3 to 4 minutes. Add rice and the zest of an orange and a lemon then turn the rice to coat, cook 1 minute. Add stock and bring to boil, reduce to simmer, cover and cook 17 to 18 minutes.
- While rice cooks, heat a large skillet over medium-high heat with 3 tablespoons olive oil, 3 turns of the pan. Pat meat dry. When oil ripples and begins to smoke, add the beef and brown 3 minutes on each side. Remove when evenly deep brown and reserve on plate.
- Add remaining olive oil to skillet, 3 turns, heat until oil ripples then add mushrooms and brown 7 to 8 minutes. Add garlic after 5 to 6 minutes. Season mushrooms with salt and pepper cook a few minutes more. Add sherry, reduce 1 minute, add beef stock and beef tips and their juices to pan. Reduce heat and cook 3 to 4 minutes more. Turn off heat.
- Fluff rice with fork and serve with the beef and mushrooms.
BEEF TENDERLOIN TIPS WITH MUSHROOM CREAM SAUCE

- In a saute pan over high heat add 3oz clarified butter. When the butter reaches smoke point add the Beef Tips and sear evenly on all sides (you may want to reduce the heat during this process to keep from burning the butter. Onced seared, remove the Tips from the pan and allow them to rest. To the pan add 1T minced garlic, 1T minced shallot, 2C Shiitake Mushrooms, 1C Oyster Mushrooms. Saute until mushrooms break down. Deglaze with 3T bourbon (beware of flame up). Add a pinch of dried thyme, 2C Heavy Cream and 2T of Capers. Allow sauce to reduce over medium high heat until it thickens. Remove from heat, salt and pepper to taste. Serve over the tips. Garnish with fresh Parsley.

- Place beef tips in a bowl and season with salt and pepper. Add flour and stir to coat.
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil and let it get hot. Add beef tips and saute until browned, about 3 minutes; transfer to a bowl. Add onion and mushrooms and saute for 1 minute. Add broth, wine, and Worcestershire sauce; cook for 1 minute while scraping off the brown bits with a wooden spoon.
- Return beef tips to the pot and stir until everything is evenly combined. Pour condensed soup over top; do not stir.
- Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Let sit until gravy has thickened, about 10 minutes.

- Whisk red wine vinegar, 2 teaspoons cornstarch, kosher salt, and pepper together in a glass or ceramic bowl. Add beef to vinegar mixture and toss to coat. Marinate meat for at least 20 minutes. Drain beef and discard marinade.

- Mix salt, pepper, onion powder and garlic powder together and sprinkle over stew meat. Stir to coat.
- Heat oil in bottom of pressure cooker until barely smoking. Add meat and sear quickly, keeping heat up enough to form a nice crust on all sides of the meat. Add sliced mushrooms about halfway through, stirring frequently to prevent sticking.
