Homemade Apple Cake image

This delicious Homemade Apple Cake gives you made-from-scratch bragging rights, while you throw it together in three easy steps. Cinnamon, apples and walnuts are brought together for a warm, spiced fall treat served up with a scoop of vanilla ice cream. This will be a family fall favorite in even less time than it takes to make it.

1/2 cup butter, softened
1 cup sugar
2 eggs
1/4 teaspoon vanilla
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups shredded peeled apples (about 2 medium apples)
1/2 cup chopped walnuts
1 quart vanilla or cinnamon ice cream

Steps:

  • Heat oven to 350°F. Spray 9-inch round cake pan with baking spray with flour.
  • In large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time. Stir in vanilla, flour, baking soda, cinnamon and salt. Stir in apples and walnuts. Spoon into pan.
  • Bake 40 to 45 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes. Remove from pan to cooling rack. Cool 10 minutes longer. Serve warm with ice cream.

GRANDMA'S APPLE NUT CAKE

This is my husband's favorite. His mom gave it to us many years ago. I have refined the recipe just a little since then. Please don't tell her...hehe. It doesn't need a frosting because it is so yummy just by itself, but it would dress it up to drizzle with a thin creamy icing. I had misplaced this recipe for the longest time and had thought I had lost it, so I hadn't made it for ages. My husband found it this weekend and I have made it twice since then. Both times it was gone before it was even all the way cooled, thanks to our 5 daughters. My husband and I barely managed to claim a few bites before it disappeared. I'm posting it here to share with everyone and to keep it from ever getting lost again. It's definately a keeper.

1/2 cup any kind brown sugar (dark is best)
1 cup sugar
1/4 cup oil
1/4 cup butter, very soft
2 eggs
2 teaspoons vanilla
2 cups flour
2 teaspoons cinnamon
1/2 teaspoon salt
2 teaspoons baking soda
4 cups raw apples, peeled cored,and diced (2 large or 3 medium or 4 small)
1 cup coarsely chopped walnuts

Steps:

  • Grease and flour a 9x13 baking pan.
  • Preheat oven to 325 F.
  • Sift dry ingredients into a bowl and set aside.
  • In another mixing bowl, stir together the first six ingredients, then fold in the dry ingredients, followed by the apples and nuts.
  • Spread in the prepared pan.
  • The batter will be thick.
  • Bake until it tests done by poking it with a toothpick in the center.
  • If it comes out dry it is done.
  • Baking time will be approximately 40 mins, plus or minus.

Thirty-three years ago I met Elaine Nelson. Her Mother, Mrs. Evans, would make this cake for her. She would always share with me. I make it to share with everyone too. It is a gift of love, as is Elaine and her dear Mother, Virginia.

3 cups flour
2 cups sugar
3 teaspoons baking powder
1/8 teaspoon salt
1 cup oil
4 eggs
1/2 cup orange juice or 1/2 cup milk
2 1/2 teaspoons vanilla
3 large apples, sliced
1/2 cup sugar
cinnamon (enough cinnamon to make a dark mixture)

Steps:

  • Mix dry ingredients.
  • Make a hole in the center and add eggs, juice, oil and vanilla.
  • Put half of batter in 10-inch greased and sugared tube pan.
  • Place half the apple slices around the pan.
  • Sprinkle heavily with sugar and cinnamon, mixed.
  • Place rest of batter, then rest of apples in pan.
  • Sprinkle heavily again with sugar.
  • Bake at 350°F for 1 1/2 hours.
