Here's what you need: ground chicken, salt, pepper, mozzarella cheese, panko breadcrumbs, dried oregano, flour, eggs, oil

1 lb ground chicken
salt, to taste
pepper, to taste
½ lb mozzarella cheese, cubed
1 cup panko breadcrumbs
dried oregano, to taste
½ cup flour
2 eggs
oil, for frying

Steps:

  • First, season the ground chicken with salt and pepper.
  • Grab a handful of ground chicken and roll into a rough ball shape, place a cube of cheese in the center and wrap the ground chicken around it. Form it into a chicken nugget shape. Set aside.
  • Season the panko with oregano.
  • Take the chicken nuggets and coat with flour, dip in egg and cover with the panko/oregano mix.
  • Deep fry in the oil until browned and crispy.

8 ounces mozzarella cheese, room temperature
1/2 cup all-purpose flour
salt and pepper
1 egg, lightly beaten
1/2 cup Italian seasoned breadcrumbs

Steps:

  • Cut cheese sticks into thirds. Place flour on a plate and season it with salt and pepper. Put the egg in a small bowl. Place bread crumbs on a plate.
  • Add cheese pieces to flour and toss to coat. Dip in egg, and then roll in bread crumbs. Arrange breaded cheese in a single layer on a tray or baking sheet. Let stand for 15 to 30 minutes.

4 slices thick-cut sourdough bread
1 ball (1 pound) fresh mozzarella, cut into 1/4-inch slices
2 plum tomatoes, cut into thick slices
1 cup fresh Basil Pesto, recipe follows
Kosher salt and freshly ground black pepper
Extra-virgin olive oil
1/2 cup pine nuts
2 cups fresh basil leaves
1 cup fresh Italian parsley leaves
1/2 cup Parmesan or Romano
2 garlic cloves
1/4 teaspoon salt
1/2 cup extra-virgin olive oil

Steps:

  • Assemble sandwich by smearing insides of bread slices with pesto. Arrange a layer of sliced tomato and season with a few turns of fresh pepper. Layer the mozzarella slices over the top and then place another piece of bread on top to make the sandwich. Drizzle olive oil over skillet's surface and place sandwiches on the hot skillet or panini press. If using a skillet, place another heavy skillet over the top to form a "press". Turn after 2 to 3 minutes and replace weight. The sandwich is ready when golden brown and mozzarella has melted around the edges.
  • Toast pine nuts in a skillet over medium heat until fragrant, about 5 minutes. Combine pesto ingredients in a food processor and pulse until well combined but still rough-textured. If you have a panini press, turn it on to warm up; otherwise, set a cast iron skillet over medium heat.

These are so good! Crisp on the outside and melting cheese on the inside! This recipe was originally from Betty Crocker. Servings depends totally on how large or small you cut your cheese. I prefer Monterrey Jack.

1 lb swiss cheese or 1 lb mozzarella cheese, cut in about 1/2 inch nuggets
vegetable oil (for frying)
1 cup Bisquick
1 teaspoon paprika
1/4-1/2 teaspoon garlic powder
1/2 cup milk
1 egg
marinara sauce (optional)

Steps:

  • Place cheese nuggets in a pan and put in freezer for at least one hour.
  • Mix bisquick,paprika, garlic powder, milk and egg until smooth.
  • Dip cheese into batter,covering cheese completely.
  • Fry in 2 inches of oil heated to 375 degrees in a frying pan or in an electric skillet.
  • Fry about 1-2 minutes, turning once, until golden brown.
  • Drain on paper towels.
  • Let stand 3 minutes before serving.
  • Serve with marinara sauce.(recipe #153093).

2 eggs, beaten
¼ cup water
1 ½ cups Italian seasoned bread crumbs
½ teaspoon garlic salt
⅔ cup all-purpose flour
⅓ cup cornstarch
1 quart oil for deep frying
1 (16 ounce) package mozzarella cheese sticks

Steps:

  • In a small bowl, mix the eggs and water.
  • Mix the bread crumbs and garlic salt in a medium bowl. In a medium bowl, blend the flour and cornstarch.
  • In a large heavy saucepan, heat the oil to 365 degrees F (185 degrees C).
  • One at a time, coat each mozzarella stick in the flour mixture, then the egg mixture, then in the bread crumbs and finally into the oil. Fry until golden brown, about 30 seconds. Remove from heat and drain on paper towels.
