1 1/2 ounces dry Palo Cortado sherry
1 ounce bourbon, such as Four Roses Single Barrel Bourbon
1/2 ounce sweet vermouth, such as Dolin
4 dashes cherry bitters
High-quality maraschino cherry, such as Luxardo, for garnish

Steps:

  • Add the sherry, bourbon, vermouth and bitters to a cocktail shaker, add large ice and stir thoroughly. Taste for balance, then single-strain into a coupe glass. Garnish with a cherry and serve.

4 slices cheddar cheese

Steps:

  • lightly toast the bread.
  • spread with butter if you wish.
  • spread evenly with vegemite.
  • top with cheese.
  • put under the grill until cheese starts to bubble.

I couldn't believe that nobody had posted the recipe for mousetraps when I was looking for cheese on toast variations. Here is the downunder favourite.

4 slices bread, suitable for toasting
yeast extract, eg marmite, vegemite
cheese, eg cheddar

Steps:

  • Oven grill setting at 400°F.
  • Toast the bread on both sides under the grill/broiler or alternatively pop them in the toaster to save time.
  • The former does taste better.
  • Spread the toast on one side only with a thin layer of the yeast extract.
  • Arrange on baking tray.
  • Grate or slice enough cheese to cover the bread well.
  • Pop under the grill until the cheese is melted.
  • Remove from oven and cut bread slices into triangles.
