Moroccan meatball tagine with lemon & olives image

A wonderfully aromatic North African lamb casserole with a citrus tang - great for dinner parties

3 onions , peeled
500g minced lamb
zest and juice 1 unwaxed lemon , quartered
1 tsp ground cumin
1 tsp ground cinnamon
pinch cayenne pepper
small bunch flat-leaf parsley , chopped
2 tbsp olive oil
thumb-sized piece ginger , peeled and grated
1 red chilli , deseeded and finely chopped
pinch saffron strands
250ml lamb stock
1 tbsp tomato purée
100g pitted black kalamata olive
small bunch coriander , chopped
couscous or fresh crusty bread, to serve

Steps:

  • Put the onions in a food processor and blitz until finely chopped. Put the lamb, lemon zest, spices, parsley and half the onions in a large bowl, and season. Using your hands, mix until well combined, then shape into walnut-sized balls.
  • Heat the oil in a large flameproof dish, or tagine with a lid, then add the remaining onions, ginger, chilli and saffron. Cook for 5 mins until the onion is softened and starting to colour. Add the lemon juice, stock, tomato purée and olives, then bring to the boil. Add the meatballs, one at a time, then reduce the heat, cover with the lid and cook for 20 mins, turning the meatballs a couple of times.
  • Remove lid, then add the coriander and lemon wedges, tucking them in between the meatballs. Cook, uncovered, for a further 10 mins until the liquid has reduced and thickened slightly. Serve hot with couscous or fresh crusty bread.

Meatballs:
1 1/2 pounds ground beef (20% fat)
1/3 cup coarsely grated onion
1/3 cup panko (Japanese breadcrumbs)*
1/4 cup chopped fresh cilantro
1 large egg, beaten to blend
2 garlic cloves, minced
1 teaspoon turmeric
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon freshly ground black pepper
1/2 teaspoon coarse kosher salt
1/4 teaspoon ground ginger
Stew:
1 tablespoon olive oil
3 1/2 cups chopped onions
4 garlic cloves, minced
2 cinnamon sticks
1 teaspoon turmeric
1/8 teaspoon saffron threads, crumbled
2 cups beef broth
1 14.5-ounce can diced tomatoes in juice
1/4 cup golden raisins
2 cups 1/2-inch-thick carrot slices (cut on diagonal)
1/4 cup chopped fresh cilantro plus additional for garnish
1 5-ounce package baby spinach leaves
Couscous with Fresh Cilantro and Lemon Juice
Lemon wedges (for garnish)

Steps:

  • For meatballs:
  • Line large rimmed baking sheet with plastic wrap. Gently mix all ingredients in large bowl. Using moistened hands and scant 2 tablespoonfuls for each, roll meat mixture into 1 1/2-inch meatballs. Arrange meatballs on sheet.
  • For stew:
  • Heat oil in heavy large ovenproof pot over medium heat. Add onions; sauté about 15 minutes. Add garlic, cinnamon, turmeric, and saffron; stir 2 minutes. Add broth, tomatoes with juice, and raisins.
  • Preheat oven to 350°F. Bring stew to simmer. Stir in carrots. Carefully add meatballs to stew; gently press into liquid to submerge. Sprinkle 1/4 cup cilantro over. Cover pot; place in oven. Bake until meatballs are cooked through and carrots are tender, about 35 minutes. Sprinkle spinach over stew. Cover and bake until spinach wilts, about 5 minutes longer. Gently stir to mix in spinach, being careful not to break meatballs. Remove cinnamon sticks. Season tagine with salt and pepper. Spoon couscous into bowls; top with tagine. Garnish with cilantro and lemons.

MEATBALL & TOMATO SAUCE (MOROCCAN TAGINE)

This recipe was originally for a Moroccan tagine. I changed some of the ingredients to make a wonderful meatball & tomato sauce. The different spices give it delightful sweet & spicy flavor. It is one of my favorite dishes, goes beautifully with Recipe #260654.

1 lb ground beef
2 tablespoons parsley, finely chopped
1/4 onion, grated
1 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon ground coriander
1/4 teaspoon cayenne pepper
salt & pepper
2 tablespoons oil
28 ounces canned diced tomatoes
8 ounces canned tomato sauce
2 -3 tablespoons parsley, finely chopped
2 tablespoons cilantro, finely chopped
1/2 onion, chopped
2 medium garlic cloves
1 -2 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/2 teaspoon paprika
1/4 teaspoon turmeric
1/4 teaspoon cayenne pepper

Steps:

  • Mix the onion, parsley, spices, & beef together. Form into 1 inch balls, flatten & then brown in oil. When done, remove from the heat & cover.
  • Drain about half the juice from the diced tomatoes & place into a sauce pan. Add the tomato sauce, onion, garlic, parsley, olive oil & spices. Simmer, uncovered for 20 minutes or until the sauce has thickened.
  • Add the meatballs to the sauce & continue cooking together for another 5-10 minutes.
  • Serve with Moroccan bread to soak up the sauce. It is also great served over pasta.

1 lb ground chuck
2 tablespoons olive oil
1 small onion, finely chopped
1/2 teaspoon paprika
salt and pepper
1 tablespoon finely chopped garlic
1 large onion, finely chopped
1 tablespoon extra-virgin olive oil
2 tablespoons chopped fresh cilantro
3 teaspoons paprika
1 teaspoon ground cumin
salt and pepper
2 lbs tomatoes, skins removed, peeled and finely chopped*
4 large eggs
pita bread, for serving

Steps:

  • For the meatballs:.
  • Combine the ground chuck, olive oil, onions, paprika and some salt and pepper together. Roll into 1-inch balls and set aside until needed.
  • For the sauce:.
  • Saute the garlic and onions with the extra-virgin olive oil on low heat in a medium Dutch oven or deep cast-iron pot. Cook until slightly translucent, and then add the cilantro, paprika, cumin and season with salt and pepper. Saute for an additional 2 minutes. Add the chopped tomatoes and cook on medium heat. Let the tomatoes break down for 10 to 15 minutes. Place the meatballs on top of the sauce and cook for 5 minutes. Stir the meatballs into the sauce and cook for 30 minutes on low heat. Break the eggs on top of the meat and sauce. Gently stir to break the eggs up into the meat and sauce. Cook for another 5 minutes and serve immediately with pita or any fresh bread on hand.
  • Cook's Note:.
  • *Skins remove easily by dipping the tomatoes in boiling water until the skin cracks and then immediately placing in ice cold water.

1 medium onion, chopped very fine
2 teaspoons paprika
1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon ground cinnamon (optional)
1/4 teaspoon pepper
1/4 teaspoon hot paprika (or 1/8 teaspoon ground hot pepper)
1/4 cup chopped fresh parsley
1/4 cup chopped fresh coriander (cilantro)
----- For the Tomato Sauce -----
2 lbs. (about 1 kg) fresh, ripe tomatoes
1 medium onion, very finely chopped (optional)
1 1/2 teaspoons paprika
1 1/2 teaspoons cumin
1 1/2 teaspoons salt
1/2 teaspoon hot paprika or 1/4 teaspoon ground hot pepper
3 tablespoons finely chopped fresh parsley
3 tablespoons finely chopped fresh coriander (cilantro)
3 cloves garlic, pressed
1/3 cup olive oil
3 or 4 eggs (optional)

Steps:

  • 3 or 4 eggs (optional) Preparation: Start Cooking the Tomato Sauce Peel, seed and chop the tomatoes OR cut the tomatoes in half, seed them and grate them. Mix the tomatoes, onions (if using) and the rest of the sauce ingredients in the base of a tagine or in a large, deep skillet. Cover, and bring to a simmer over medium heat. (Note: If using a tagine, place a diffuser between the tagine and burner, and allow 10 to 15 minutes for the tomato sauce to reach a simmer.) Once simmering, reduce the heat to medium-low, just enough heat to maintain the simmer but low enough to avoid scorching. Allow the sauce to cook for 15 to 20 minutes before adding the meatballs. Make the Kefta Meatballs Combine all of the kefta ingredients, using your hands to knead in the spices and herbs. Shape the kefta mixture into very small meatballs the size of large cherries - about 3/4 inch in diameter. Add the meatballs to the tomato sauce, along with a little water - 1/4 cup (60 ml) is usually sufficient - and cover. Cook for about 40 minutes, or until the sauce is thick. Break the eggs over the top of the meatballs, and cover. Cook for an additional 7 to 10 minutes, until the egg whites are solid and the yolks are partially set. Serve immediately. Kefta Mkaouara is traditionally served from the same dish in which it was prepared, with each person using crusty Moroccan bread for scooping up the meatballs from his own side of the dish.
