1 pound Italian sausage
1/2 cup diced onion
1 tablespoon minced garlic
14 ounce can diced tomatoes (undrained)
16 ounce can tomato sauce
32 ounces low sodium chicken broth
1 1/2 cups water
1 tablespoon Italian seasoning
1 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon ground pepper
16 ounce package frozen tortellini
Shaved Parmesan (optional)

Steps:

  • Heat a large soup pot over medium heat. Add the Italian sausage and diced onion, crumbling the sausage as it cooks. Continue sautéing until the sausage is no longer pink and the onions are soft. Add minced garlic to the sausage mixture and stir.
  • Add the diced tomatoes, tomato sauce, chicken broth, water, Italian seasoning, garlic powder, salt and pepper. Stir to combine.
  • Bring the mixture to a boil, then reduce temperature to low. Allow soup to simmer for 20-30 minutes.
  • Add tortellini to soup and simmer until the pasta is tender (about 10 minutes).
  • Top with shaved parmesan, if using.
  • Refrigerate leftovers.

3/4 pound Italian turkey sausage links, casings removed
1 medium onion, chopped
6 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1-3/4 cups water
1 can (14-1/2 ounces) diced tomatoes, undrained
1 package (9 ounces) refrigerated cheese tortellini
1 package (6 ounces) fresh baby spinach, coarsely chopped
2-1/4 teaspoons minced fresh basil or 3/4 teaspoon dried basil
1/4 teaspoon pepper
Dash crushed red pepper flakes
Shredded Parmesan cheese, optional

Steps:

  • Crumble sausage into a Dutch oven; add onion. Cook and stir over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Stir in the broth, water and tomatoes. Bring to a boil., Add tortellini; return to a boil. Cook for 5-8 minutes or until almost tender, stirring occasionally. Reduce heat; add the spinach, basil, pepper and pepper flakes. Cook 2-3 minutes longer or until spinach is wilted and tortellini are tender. Serve with cheese if desired.Freeze option: Place individual portions of cooled soup in freezer containers and freeze. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth if necessary.

1 (20 ounce) package cheese tortellini
1 teaspoon olive oil
1 (12 ounce) package mild Italian sausage
1 small onion, chopped
2 tablespoons minced garlic
2 tablespoons Italian seasoning
1 (28 ounce) can tomato puree
1 bunch fresh spinach, chopped

Steps:

  • Pour 1 can broth into a small saucepan and add tortellini; bring to a boil. Cook tortellini until tender yet firm to the bite, about 5 minutes.
  • Heat oil in a large stockpot over medium heat; cook and stir sausage, onion, garlic, and Italian seasoning until sausage is browned and crumbly, 5 to 10 minutes. ¾ pound Italian sausage links, casings removed
3 cups thinly sliced mushrooms
1 cup chopped onion
2 cloves garlic, minced
5 ¼ cups water
1 (28 ounce) can chopped tomatoes with juice
1 ½ cups hearty red wine
5 cubes beef bouillon
1 teaspoon dried basil
¼ teaspoon ground black pepper
1 (8 ounce) package spinach and cheese tortellini (such as Ronzoni® Ricotta and Spinach)
2 cups chopped zucchini

Steps:

  • Cook and stir sausage in a large saucepan over medium heat until browned and crumbly, 5 to 7 minutes; drain. Add mushrooms, onion, and garlic; cook and stir until mushrooms and onion are tender, about 5 minutes.
  • Mix tomatoes with juice, red wine, beef bouillon, basil, and pepper into sausage mixture; bring to a boil. Reduce heat to medium-low, cover saucepan, and simmer, stirring occasionally, until heated through, about 15 minutes. Bring liquid to a boil and add tortellini; cook until pasta is heated through, about 12 minutes.

1 tablespoon olive oil
1 small red onion, chopped
1 zucchini, chopped
1 tablespoon minced garlic
1 (28 ounce) can crushed tomatoes
2 (14.5 ounce) cans chicken broth
1 tablespoon white sugar
1 tablespoon Italian seasoning
¼ cup red wine
1 dash hot pepper sauce
1 (11 ounce) can white corn, undrained
½ cup freshly grated Parmesan cheese
8 ounces cheese tortellini

Steps:

  • In a large pot over medium heat, cook onion, zucchini and garlic in oil three minutes, until onion is translucent. Stir in crushed tomatoes, broth, sugar, Italian seasoning, wine and pepper sauce and bring to a boil.
  • Reduce heat and stir in corn and Parmesan. Simmer 30 minutes.
  • Stir in tortellini and simmer 10 minutes more, until pasta is tender.
