We found that the best way to grill asparagus is to lay it right on the grill grates at an angle--no foil packet or grilling basket necessary. We jazzed ours up with tangy, creamy feta and fresh mint. To get a good char, be sure to use medium-sized asparagus -- no pencil-thin stalks here!

1 bunch medium asparagus (about 3/4 pound)
Juice of 1 lemon (about 1/4 cup)
2 tablespoons olive oil
1 clove garlic, finely grated
Kosher salt and freshly ground black pepper
2 tablespoons crumbled feta cheese (about 1 ounce)
1 tablespoon chopped fresh mint leaves

Steps:

  • Prepare a grill for medium heat. Chop the tough, woody ends off the asparagus (about 1 inch) and peel another inch of the stalks.
  • Whisk the lemon juice, olive oil, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper together in a large bowl. Add the asparagus and toss until well coated.
  • Put the asparagus on the grill at an angle so the stalks don't fall through the grates. Grill, flipping halfway through cooking, until the asparagus begin to char, the pointy ends start to crisp and the stalks are just tender, 3 to 5 minutes. Remove to a platter and sprinkle with the feta and mint.

1 bunch of asparagus
2 tbsp. olive oil
1 tsp. kosher salt
1/2 tsp. ground black pepper
Red pepper flakes, optional
1 lemon, halved

Steps:

  • Wash the asparagus and pat dry thoroughly. Using a sharp knife, cut about 1-inch from the base of the asparagus stalks and discard.
  • Combine the trimmed asparagus, olive oil, salt, and pepper in a large bowl or on a rimmed sheet pan. Toss until the asparagus is well coated.
  • Preheat the grill to medium high heat (400 to 450°). Add the asparagus to the grill, placing them crosswise on the grill grates so that they don't fall through. Grill, turning as needed, until grill marks form, 3 to 4 minutes per side.

Steps:

  • Heat the grill to medium high.
  • Trim the asparagus (see Note). Toss the asparagus spears with the oil in a shallow platter of rimmed baking sheet. Sprinkle with salt.
  • Grill the asparagus with the spears perpendicular to the grate, or in a grill basket, 4 to 8 minutes, depending on thickness, and how tender you like them to be (see additional tips above). Turn them every minute or two. Don't forget the will get a bit softer once they are removed from the heat, so take them off just before they are done to your liking. Keep checking, turning and moving them around as needed. Remove from the grill and serve warm or at room temperature.

1 1/2 to 2 pounds large asparagus
Olive oil as needed, about 2 tablespoons
Salt and freshly ground black pepper to taste
Juice of 3 lemons
2 tablespoons minced shallots or scallions
1/4 cup minced fresh parsley leaves

Steps:

  • Snap off the woody ends of the asparagus; most spears will break an inch or two from the bottom. Peel the stalks up to the flower bud. Meanwhile, start a charcoal fire or heat a gas grill; if you're cooking indoors, heat a cast-iron or other heavy skillet over medium-high heat until it smokes.
  • To grill the asparagus spears, toss them with about a tablespoon of oil, mixing with your hands until spears are coated. Season well with salt and pepper. Grill until tender and browned in spots, turning once or twice, in all 5 to 10 minutes.
  • To pan grill the asparagus, do not oil or season them. Just toss them in the hot skillet, and cook, turning the spears individually as they brown, until tender, 5 to 10 minutes. Remove as they finish, and season with salt and pepper.
  • Mix together the lemon juice and shallots, then stir in enough olive oil to add a little body and take the edge off the sharpness of the lemon; the mixture should still be strong. Season it well with salt and plenty of black pepper, and stir in the parsley. Serve the asparagus hot or at room temperature with grilled fish. Spoon the sauce over everything.

So my mom is an excellent cook. She loves aspargus and taught me how to grill it!! This is such a yummy recipe!! Use it as a side dish or cook up extra and have it for an appetizer or snack. Tastes great on a salad too!!

1 large bundle of aspargus
- olive oil
- salt
- pepper

Steps:

  • Cut half to one inch of the bottoms off the aspargus. Lay on cookie sheet or large baking dish. Generously pour olive oil on top then sprinkle with salt and pepper to your liking. Mix aspargus together with hands making sure you coat the entire bundle.
  • Place on top rack of grill or over indirect heat and turn every couple minutes or so for about 5-10 minutes depending on grill. You want to make sure that it doesn't burn or over cook. You still want the aspargus to "snap" when you eat it.
