1 C mashed bananas & pears
1 1/2 C flour
1 1/2 t baking powder
1/4 t baking soda
2 eggs
3/4 C sugar
1/4 C cooking oil
1 T vanilla
1 t cinnamon

Steps:

  • Preheat oven to 350 and grease and flour 2 9x5 loaf pans. In small bowl blend bananas and pears In a large bowl, mix together eggs, banana mixture, sugar, cooking oil and vanilla. Beat until well mixed. In another bowl, mix flour, baking powder, baking soda, cinnamon, and a bit of salt. Add the egg mixture to the flour mixture and stir with a spatula until it's well moistened but not too well mixed. Spoon batter into the loaf pans, filling about 2/3 of the way full bake for 50-55 minutes or until a tooth pick inserted near the center comes back out clean. Cool for 10 minutes in pan before taking a butter knife and loosening the edges of the bread from the pan. Turn out bread onto a wire baker's rack and cover with a dry towel until completely cooled.

1/2 cup butter, softened
1 cup granulated sugar
2 eggs
4 Tbsp sour cream
1/2 cup mashed bananas (approx. 1 large or 2 small bananas)
15-oz can sliced pears in juice, drained and chopped
1 tsp vanilla extract
1 3/4 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/8 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg

Steps:

  • Preheat oven to 350F and grease an 8x4" loaf pan.
  • In the bowl of a stand mixer, beat together butter and sugar. Add eggs and mix well until combined.
  • Mix in sour cream, bananas, pears, and vanilla extract, mixing well.
  • Add in dry ingredients and mix on low speed just until incorporated.
  • Pour batter into prepared pan. Bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool before slicing. Enjoy!

I promise you that my mom's banana bread recipe is the absolute BEST you'll ever make or taste -- I've tried other banana bread recipes, but - they don't even come close to my Mom's -- Love you Mommy!

1 1/4 cups mashed bananas (4 to 5 Medium bananas)
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/3 cup unsalted butter, at room temperature
2/3 cup sugar (or Splenda, whatever you like)
2 eggs, separated (Large or Medium)
1 1/2 ounces milk
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons flax seeds
1/4 cup chopped walnuts (optional) or 1/4 cup pecans (optional)

Steps:

  • Cream together butter, sugar, & egg yolks until creamy.
  • Sift dry ingredients together (flour, baking soda, salt, cinnamon & nutmeg). Alternately add the dry mixture to the creamed butter mixture as well as the milk & mashed bananas. Beat the egg whites until a stiff peak forms and fold in with a wooden spoon, (make sure you only use a wooden spoon to do this - this is KEY), next - fold in the chopped nuts also stir in with the wooden spoon.
  • Bake in a loaf pan that you have sprayed with olive oil or non-stick spray and dusted lightly with flour at 350° for approximately 45 minutes - insert a toothpick in the center of the loaf to ensure it is not runny, if it is - allow to bake an additional 5-10 minutes.
  • Cool on a wire rack and serve with cream cheese or your favorite margarine.
  • Note: I love to wait a day and then toast a piece in my toaster oven - it is SO good when it gets re-heated and toasty with butter on it and a cup of coffee - YUM!

3 large eggs, room temperature
1-1/2 cups sugar
3/4 cup vegetable oil
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
4 cups finely chopped peeled ripe pears (about 4 medium)
1 teaspoon lemon juice
1 cup chopped walnuts

Steps:

  • In a bowl, combine the eggs, sugar, oil and vanilla; mix well. Combine flour, baking powder, cinnamon, baking soda and salt; stir into the egg mixture just until moistened. A nice change from regular banana bread--it's super moist and the pears really boost the flavor. I developed this by combining the best elements of banana and fruit bread recipes. As one of the reviewers discovered, this recipe doesn't work with hard pears--they have to be soft so they can be mashed in with the bananas to form a puree. Also, this can be cooked more quickly in a muffin tin (about 20 minutes).

1/2 cup white sugar
1/2 cup brown sugar
1/2 cup butter
1/4 cup vanilla yogurt

Steps:

1 medium ripe pear
1 cup brown sugar
½ cup unsalted butter, softened
2 large eggs
2 medium ripe bananas, mashed
2 cups all-purpose flour
2 teaspoons baking soda
½ teaspoon vanilla extract
½ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon almond extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Peel and core pear. Grate pear flesh into a bowl.
  • Mix brown sugar and butter in a bowl with an electric mixer until well blended. Mix in eggs, then add bananas and pear. Gradually mix in flour and baking soda. Add vanilla, cinnamon, ginger, and almond extract; mix until just combined. Pour into the prepared loaf pan.
  • Bake on the center rack of the preheated oven until a toothpick inserted into the center comes out fairly clean, about 1 hour.
