Mom found this recipe in a bridal book years ago, and it soon became a family favorite. With tender juicy apples and a hint of cinnamon, it is yummy served plain or with a dollop of whipped cream or ice cream.

5 medium tart apples, peeled and sliced
1-1/4 cups sugar, divided
1-3/4 teaspoons ground cinnamon, divided
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup cold butter, cubed
1 cup water

Steps:

  • In a large bowl, combine the apples, 1/4 cup sugar and 1 teaspoon cinnamon. Transfer to a greased 8-in. square baking dish. , In a small bowl, combine the flour, baking powder, salt and remaining sugar; cut in butter until crumbly. Sprinkle over apples, pressing down to smooth top. , Slowly pour water over the top; sprinkle with remaining cinnamon. Bake, uncovered, at 400° for 40-45 minutes or until apples are tender. Serve warm.

1/2 cup all-purpose flour, plus 2 tablespoons
1/2 cup old fashioned oats (not instant)
1/4 cup packed brown sugar
1/2 teaspoon ground ginger
1/4 teaspoon cinnamon
1 pinch salt
3 tablespoons light stick butter, diced
1 teaspoon water
1/4 cup granulated sugar
1/4 teaspoon ground nutmeg
1 pinch ground cloves
3 lbs golden delicious apples or 3 lbs jonathan apples, peeled and thinly sliced
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375°F. Spray a shallow 1-1/2 quart baking dish with nonstick spray. To make the topping, combine the 1/2 cup flour, the oats, brown sugar, ginger, cinnamon, and salt in a medium bowl. With a pastry blender or 2 knives used scissor-fashion, cut in the butter until the mixture resembles coarse crumbs. Add the water and firmly press mixture to form clumps. To make the filling, mix the granulated sugar, the 2 tablespoons flour, the nutmeg, and cloves in a large bowl. Add the apples and vanilla; mix well. Transfer to the baking dish. Sprinkle the topping over the filling. Bake until the filling is bubbling and the topping is golden, 55 - 60 minutes. Serve warm or at room temperature.

3/4 cup brown sugar
1/2 cup butter
3/4 cup quick-cooking rolled oats

Steps:

  • Peel apples and remove cores.
  • Slice apples into thin slices and put into lightly greased casserole dish.

  • Cut in butter until you have course crumbs.

This is a quick and easy dessert that Mom made frequently, but I couldn't find the recipe. Today was my lucky day -- my sister-in-law, Michele Thornburg, came up with a copy of it. She thinks it originated in an old "Betty Crocker Cookbook." We had Apple Crisp for supper tonight -- still warm from the oven with vanilla ice cream on top. Scrumptious!

8 cups apples, sliced and peeled
2 teaspoons cinnamon
1 teaspoon salt
1/2 cup water
1 1/2 cups flour
2 cups sugar
2/3 cup butter or 2/3 cup margarine

Steps:

  • Butter a 9x13 baking dish. Spread sliced apples over the bottom of the dish. Add water. Sprinkle with cinnamon and salt.
  • Using a pastry cutter: blend flour, sugar, and butter until mixture is pea-sized and crumbly. Drop the mixture evenly over the apples.
  • Bake at 350 degrees for 40-60 minutes. Make sure it is bubbly and lightly browned before removing from the oven.
  • Serve while warm with vanilla ice cream.
