OLD-FASHIONED GINGERBREAD CAKE
This Old-Fashioned Gingerbread Cake has been a staple on Christmas dessert tables for generations!

- Preheat oven to 350 degrees F. Spray an 8-inch square cake pan with cooking spray and line the bottom with parchment paper. Spray the parchment with cooking spray as well, and then set aside.
- In a small saucepan, combine the butter and milk. Heat over medium-high, just until the butter is melted and bubbles form around the edges of the pan. Whisk in the brown sugar until dissolved. Remove from the heat and cool.
- In a large bowl, sift together flour, baking soda, baking powder, ginger, cinnamon, cloves and salt.
- Stir the egg into the cooled butter mixture.
- Make a well in the center of the dry ingredients and pour in the butter mixture. Stir just until a smooth batter forms, being careful not to over-mix.
- Pour the batter into the prepared pan. Bake until a toothpick inserted in the center comes out clean, about 25-30 minutes. Cool completely on a wire rack before slicing and serving.
- Dust cooled cake with powdered sugar and serve with whipped cream, if desired.

MOM'S AMAZING GINGERBREAD CAKE
My husband loves anything with ginger and molasses in it! This is a wonderfully rich, dark, moist cake. It has a lot of ingredients, but it is well worth the effort.

- 1. Preheat the oven to 350 degrees. Lightly coat a 9-inch square cake pan with vegetable oil spray. Whisk the flour, spices, cocoa powder, baking soda and salt together in a medium bowl and set aside.
- 2. Beat the molasses, sugar and melted butter together in a large bowl with an electric mixer on low speed until combined, 1 to 3 minutes.
- 3. Beat in the egg until incorporated. Beat in the buttermilk until incorporated, scraping down the bowl and beaters as needed. Add the flour mixture, increase the speed to medium, and beat until the batter is smooth and thick, 1 to 3 minutes, scraping down the bowl and beaters as needed.
- 4. Pour the batter into the prepared pan and smooth the top. Bake until a wooden skewer inserted into the center of the cake comes out with a few crumbs attached, about 40 minutes, rotating the pan halfway through baking.
- 5. Let the cake cool in the pan. Serve warm or let cool completely, about 2 hours. Dust cake with powdered sugar, if desired.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square pan.
- In a large bowl, cream together the sugar and butter. Beat in the egg, and mix in the molasses.
- In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan.
- Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean. Allow to cool in pan before serving.
