BEST TWO-EGG CAKE
This is a very simple cake. I made it for my Dad when he came to visit, and he said it smelled like pancakes. I got this out of the 1953 Better Homes And Gardens New Cookbook.

Steps:
- Stir shortening to soften.
- Gradually add sugar, and cream together until light and fluffy.
- Add vanilla.
- Add eggs, 1 at a time, beating well after each.
- Sift flour, baking powder, salt together 3 times, add to creamed mixture alternately with milk, a little at a time.
- Beat after each addition till smooth.
- Bake in 2 paper-lined 9x1 1/2-inch round pans in moderate overn (375°) about 25 minutes.

- Preheat the oven to 375 degrees F (190 degrees C). Sift together the flour, baking powder, baking soda and salt; set aside.
- In a large bowl, cream together the butter, brown sugar and white sugar. Beat in the egg then stir in the vanilla. Gradually mix in the dry ingredients. Mix in the chocolate chips, coconut and pecans. Roll dough into 1 inch balls and place the cookies 2 inches apart onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 2 minutes before removing to a wire rack to cool completely.

- 1. Stir shortening to soften. Gradually add sugar and mix thoroughly at medium speed.
- 2. Add vanilla, and then add the eggs one at a time mixing well after each. Sift flour with baking powder and salt.
- 3. Add to shortening mixture alternately with the milk, mixing after each addition.
- 4. Bake in 2 paper-lined 9x1 1/2-inch ROUND pie pans at 375 degrees for roughly 23-25 minutes

- Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour. Make and bake cake mix as directed on box for 13x9-inch pan--except use 1 cup water, the oil and eggs. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 1 hour.
- From center of cake, cut one 3-inch crosswise strip (see diagram). Cut the strip diagonally in half to make two 9-inch triangular wedges. (Discard 1 cake wedge or reserve for another use.)
- On tray, place a 9x5-inch cake piece. Stir food colors into frosting to make golden yellow. Spread 1 tablespoon of frosting on 1 edge of triangular wedge of cake. Attach wedge, frosting side down, to 9x5-inch cake piece on tray, placing wedge along top edge of larger cake piece. Freeze all cake pieces 1 hour.
- Spread 1 tablespoon of frosting on top edge of triangular wedge of cake. Attach remaining 9x5-inch cake piece to cake wedge to look like partially opened treasure chest. To seal crumbs, frost cake with a thin layer of frosting. Refrigerate or freeze 30 to 60 minutes to set frosting. Spread remaining frosting evenly over entire cake. Pull fork through frosting to look like wood grain.
- Use pull-and-peel licorice to make handles and straps. Fill chest with chocolate coins, candy necklaces, and other hard candies. Add gummy ring half for clasp. Store loosely covered.

- Preheat oven to 350 degrees F (175 degrees C).
- Grease and flour one 10 inch bundt pan.
- In medium bowl combine the cake mix, instant vanilla pudding, nutmeg, vegetable oil, white wine, and eggs.
- Beat with an electric mixer for 5 minutes.
- Bake at 350 degrees F (175 degrees C) for 50 minutes or until a toothpick inserted in the center comes out clean.
- Let cake cool on rack in pan for 10 minutes then remove cake from pan to rack.
- Let cake cool completely before slicing.
- Garnish sliced cake with a dollop of whipped cream or dust with confectioners' sugar and sliced strawberries.
- Variation: You can also "flour" the pan after it's been greased with cocoa powder or a cinnamon sugar mixture for a textured crust. Simply fill a clean salt shaker for easy application.
