This dark, deeply moist, gingered beauty was created by Karen DeMasco, the pastry chef at Locanda Verde in New York. Beer and coffee add complexity, and the tangy lemon glaze counters the sweetness.

Butter for greasing
2 cups all-purpose flour
1 tablespoon unsweetened cocoa powder
2 1/4 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/8 teaspoon nutmeg, preferably fresh
3/4 teaspoon salt
1 cup, packed, dark brown sugar
3 tablespoons turbinado sugar
2 1/2 tablespoons finely grated fresh ginger (a 2-ounce piece, peeled)
Grated zest of 2 lemons
1/2 cup grapeseed oil
1 large egg
3/4 cup stout beer
3/4 cup molasses
1/3 cup brewed coffee
3/4 teaspoon baking soda
1 cup confectioners' sugar, sifted
2 to 4 tablespoons lemon juice

Steps:

  • Preheat oven to 375 degrees. Grease an 8-inch springform cake pan and line bottom with parchment paper.
  • In a bowl, whisk flour, cocoa, baking powder, cinnamon, nutmeg and 1/2 teaspoon salt. Set aside. In a large bowl combine brown sugar, turbinado, ginger, zest of 1 lemon and oil. Beat in egg.
  • Place beer, molasses and coffee in a deep pot, at least 3 quarts. Bring to a boil. Remove from heat and stir in baking soda. Mixture will bubble up. Allow to cool 5 minutes.
  • Whisk flour mixture alternately with beer mixture into brown sugar mixture, in 3 shifts. Pour batter in pan and bake 40 minutes without opening oven. Give pan a 180-degree turn and bake another 15 minutes, until cake is springy and a tester comes out clean. Cool on a rack. When cool, remove sides of pan, invert briefly to remove bottom of pan and paper and set upright on a plate.
  • Place confectioners' sugar in a bowl, whisk in remaining zest and salt, then lemon juice (add up to 2 additional tablespoons to moisten if necessary). Spread over top of cake, allowing glaze to drip down the sides.

2 ½ cups bleached all-purpose flour
¼ cup cornstarch
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 tablespoon ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground allspice
1 cup milk
3 large eggs
2 teaspoons vanilla extract
1 cup unsalted butter, softened until easily spreadable
1 cup dark brown sugar
1 cup molasses

Steps:

  • Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs, molasses and vanilla extract in a 2-cup measuring cup.
  • Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.
  • Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.

1/3 cup and 1 tbsp unsalted butter
1/2 cup applesauce or 1/2 cup canned pumpkin puree
1 egg
2 tablespoons unsulphured molasses
1/3 cup golden syrup or 1/3 cup honey
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 cup all-purpose flour
1/4 cup instant malted milk powder
2 tablespoons crystallized ginger

Steps:

  • Preheat the oven to 350°F Grease a loaf tin with a little vegetable oil and line with baking paper.
  • In a large saucepan over a medium heat, gently stir the butter, sugar, syrup and black treacle together until the butter is melted.
  • Remove from the heat and stir in the cloves, cinnamon, ginger and bicarbonate of soda. Beat in the egg and pumpkin purée, then the malted milk powder, and finally stir in the flour. Pour the batter into the prepared tin and bake for 10 minutes.
  • After 10 minutes, quickly pull the tin out of the oven and sprinkle the chopped crystallised ginger down the centre, then return it to the oven for a further 35 minutes. Let the loaf cool for 10 minutes in the tin before transferring it to a wire rack to cool completely.

  • Grease an 18 to 20 cm square cake tin and line with greased greaseproof paper
  • put marg treacle and syrup into a saucepan heat gently until marg has melted stirring from time to time remove from heat and add milk
  • allow to cool for 5 mins and add eggs
  • seive the dry ingredients into a bowl then add treacle mix and beat well together
  • pour into the prepared cake tin and cook in a very moderate oven for 1 to 1.25 hours at 170c 325f gas mark 3
  • turn out of tin and cool on wire rack and keep in airtight tin for 3 days then enjoy
  • n be eaten once cooled if you cant wait

I love this cake--and it IS indeed moist. From Pamela Westland's "Celebrating Christmas." It is so easy to make. I baked it in a giant gingerbread man pan and decorated with colorful dragees--beautiful! You might consider doubling the recipe, since it makes a small cake.

2 cups flour
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (I like to use fresh)
1 pinch salt
1/3 cup pitted dates, chopped
1/3 cup crystallized ginger, chopped very fine
1/2 cup molasses (I like dark and strong)
1/4 cup butter
1 egg
1/2 cup dark brown sugar
4 tablespoons milk
1/2 teaspoon baking soda

Steps:

  • Sift flour, spices and salt; stir in dates and ginger.
  • Melt molasses and butter Beat egg with sugar.
  • Add the two mixtures (above) alternately to dry ingredients, beating all the time.
  • Dissolve baking soda in milk; stirr into mixture.
  • Pour in 8" square pan lined with non-stick baking paper. Level top and bake at 350 F 45-50 minutes. Let cool on wire rack before removing from pan.
  • Remove baking paper and wrap in foil. Store in air-tight container up to 8 weeks.

Cream:
150g shortening
200g dark brown sugar
Add to creamed:
1 large pre-beaten egg
170g molasses
Whisk together in separate bowl:
320g all-purpose flour
1/2 tsp salt
2 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1 tsp ground ginger
1 tsp allspice

Steps:

  • Add flour mixture to creamed mixture slowly, and mix until fully integrated. Chill dough for at least 2 hours, preferably longer. Position oven racks to middle positions. Preheat oven to 350 degrees. Portion dough to two sheet pans, parchment-lined, with a #1 disher. Using the bottom of a glass dipped in cold water, squash the dough balls so 1/4" thick patties are formed. Dip glass in water before each squashing. The wetness on the dough should form crinkles in the final stages of baking. Bake 18-20 minutes rotating pans midway (rotate top pan to bottom rack, bottom pan to top rack, and also rotate each pan 180 degrees front-to-rear) to ensure even baking. Remove from oven and immediately sprinkle with white granulated sugar. Let cool on sheet pans thoroughly before serving. -- My notes: These are spicy cookies. One teaspoon each of cinnamon, nutmeg, ginger, and allspice might be a little intense for some people. In my next batch, I'm going to probably back down on the nutmeg and allspice (1/4 tsp each), and will also back the salt down to 1/4 tsp.
