1 can (13.8 oz) refrigerated Pillsbury™ Classic Crust Pizza Crust
1 can (8 oz) pizza sauce
1 3/4 cups shredded mozzarella cheese (7 oz)
1 1/2 cups leftover cubed sliced ham
1/2 cup drained canned pineapple tidbits in juice

Steps:

  • Heat oven to 400°F. Unroll dough on ungreased dark nonstick cookie sheet. Press into 15x10-inch rectangle.
  • Bake about 8 minutes or until lightly golden brown. Top with pizza sauce, half of the cheese, the ham, pineapple and remaining cheese.
  • Bake 10 minutes longer or until crust is deep golden brown and cheese is melted. Cool 5 minutes before serving.

These vegan Hawaiian pita pizzas are quick, delicious and nutritious. Topped with tempeh bacon, pineapple and peppers, and drizzled with a little BBQ sauce, they're a real crowd pleaser!

Olive oil cooking spray
1 teaspoon coconut oil
4 slices tempeh bacon (see Cook's Note)
2 whole-wheat pitas
4 tablespoons marinara sauce
4 slices tempeh bacon, cooked and chopped (see Cook's Note)
1/4 cup sliced pineapple
1/4 cup red bell peppers, chopped
1/4 cup green bell peppers, chopped
1/4 cup red onion, sliced
1/2 cup shredded vegan mozzarella, such as Daiya
2 tablespoons barbecue sauce

Steps:

  • Preheat the oven to 400 degrees F. Spray a baking sheet or pizza stone with olive oil spray.
  • Heat the oil in a medium skillet over medium heat. Add the tempeh bacon in a single layer and fry until cooked through, about 2 minutes per side. Cut into 1/2-inch squares and set aside.
  • Place the pitas on the prepared baking sheet or pizza stone. Spread each with 2 tablespoons marinara sauce. Sprinkle the cheese over the sauce on each pita then top with the tempeh bacon, pineapple, peppers and onions.
  • Bake until the cheese is melted, 10 to 12 minutes.
  • Drizzle each pita pizza with 1 tablespoon of the barbecue sauce. Slice, serve and enjoy!

2 cups shredded or cubed cooked chicken breast
1 cup diced pineapple
1 cup diced baked ham

Whether or not Hawaiian pizza truly originated in Hawaii, the salty-sweet combination of pineapple and ham has its many fans. This camping-friendly version relies on ingredients that travel well (in a cooler) and can be found at just about any market. Plus it's fun: You encase the toppings in between two pieces of dough, seal it in a pie iron and cook over an open fire as you would a marshmallow. You want it close enough to the flame so the pizza gets nice and toasted but not so close that it will scorch-- and then turn, turn, turn. Patience is a virtue!

One 13.8-ounce tube refrigerated pizza dough
4 canned pineapple slices, patted dry
1/4 cup pizza sauce
1/4 cup chopped deli ham (about 2 ounces)
1/2 cup shredded low moisture part skim mozzarella (about 2 ounces)

Steps:

  • Prepare a campfire or a charcoal grill for medium-high heat.
  • Unroll the pizza dough and cut it into 8 even pieces, roughly the size of the pie iron. Open the pie iron and place one piece of dough in one side. Top with 1 slice pineapple, 1 tablespoon pizza sauce, 1 tablespoon ham and 2 tablespoons mozzarella. Place another piece of dough on top and pinch the sides together to seal.
  • Close the pie iron and cook over the fire or grill, rotating every 2 or 3 minutes, until golden all over, about 8 minutes total depending on the heat of your fire. Transfer the pizza to a plate. Repeat with the remaining ingredients to cook 3 more pizzas.
