1 egg, room temperature, lightly beaten
1/2 cup cornflake crumbs
1/4 cup milk
2 tablespoons finely chopped green pepper
1 teaspoon salt
3/4 pound ground pork
3/4 pound ground veal
12 Popsicle sticks
COATING:
1 egg
1/4 cup milk
2 cups cornflake crumbs
Oil for frying

Steps:

  • In a large bowl, combine the first five ingredients. Crumble ground meat over mixture and mix well. Shape a 1/4 cupful of meat mixture around each Popsicle stick to resemble a 3-in. log., In a shallow bowl, whisk egg and milk. Place cornflake crumbs in another shallow bowl. Coat each leg in crumbs, then dip in egg mixture and recoat in crumbs. Let stand for 5 minutes. Preheat oven to 350°., In an electric skillet, heat 1/4 in. oil to 375°. Fry legs, a few at a time, for 1 minute on each side or until golden brown. Drain on paper towels. , Arrange on an ungreased baking sheet. Bake until no pink remains and a thermometer reads 160°, 15-20 minutes.

1 pound ground veal
1 teaspoon salt
⅛ teaspoon paprika
1 tablespoon chopped green bell pepper
¼ cup crushed pineapple, drained
1 cup dry bread crumbs
2 eggs, lightly beaten

Steps:

  • Combine ground pork, ground veal, salt, paprika, green pepper and pineapple. Shape like a chicken leg around a wooden skewer. Roll in bread crumbs, then in egg slightly beaten with 1 tablespoon water and again in bread crumbs.
  • Let stand 30 minutes in the refrigerator. Brown in frying pan in hot fat, add a little water, then reduce temperature. Cover tightly and let cook slowly for 45 minutes.

MOCK CHICKEN DRUM STICKS
1 1/2 lb lean ground pork
1 1/2 lb lean ground veal
1 tsp each: salt and onion powder
1/2 tsp each: ground black pepper and poultry seasoning
EGG COATING
2 large eggs (beaten well)
1/3 c milk
BREAD COATING
1 c fine, dry bread crumbs
FOR FRYING
1/3 c shortening
OPTIONAL INGREDIENTS
3/4 c meat stock or water
paprika (to sprinkle lightly... optional)
bamboo skewers or popsicle sticks

Steps:

  • 1. Mix all mock chicken leg ingredients together well. Form into chicken drum stick shapes.
  • 2. Beat together the egg and milk. Dip the "drum sticks" into egg and milk mixture.
  • 3. Put Bread crumbs in a bowl. Dip the "drum sticks" into the bread crumbs to totally coat them.
  • 4. PAN FRIED METHOD: .
  • 5. Fry the "drum sticks" in shortening in a medium-hot skillet. Turning to brown on all sides.
  • 6. Pour the meat stock (or water) into the pan. Cover and simmer slowly on low heat for about 1 hour until "drum sticks" are cooked and a gravy has formed. 10 servings.
  • 7. OVEN METHOD: .
  • 8. Preheat oven to 350 degrees. Use cooking spray to coat baking sheet.
  • 9. Place coated mock chicken "drum sticks" onto baking pan. (Optional: sprinkle the "drum sticks" lightly with paprika). Bake 15 minutes. Turn "drum sticks" over and bake 15 - 20 minutes longer or until the "drum sticks" are browned and cooked through.
  • 10. ***** Optional: You can form the "drum sticks" onto skewers or popsicle sticks to form "drum stick handles".

Her birthday is August 16, so she remembers how it was always really hot, yet her Mom would still prepare everything for her special day. She would make enough for 2 skewers per person, and with all of her family that meant feeding 12 people. The amount of meat I have listed is an estimate, as the paper this was originally written on didn't list specifics, so I don't know how much she bought to feed that many!

My mother made these for us four girls. Money was tight and she couldn't afford steak very often. These use ground beef. I use a 80/20 lean to fat. You can use ground round but it tends to be a little too dry. This is great with mashed potatoes. Everyone I have ever made it for loved it. The first time my DH had it he never knew it was ground beef. He just commented on the tenderness of the steak!

1 lb ground beef
2 eggs, beaten
2 cups all-purpose flour
1/4 teaspoon seasoning salt
1/2 teaspoon black pepper
1/4 cup oil or 1/4 cup lard (for frying)
4 tablespoons of dredging flour
4 tablespoons cooking fat
1/4 teaspoon salt
1/2 teaspoon black pepper, depending on taste
3 cups milk

Steps:

  • Mix 2 cups flour with salt and pepper.
  • Shape ground beef into four thin patties.
  • Dip patties into flour, then beaten egg, then flour again.
  • Put shortening, oil or lard into a heavy skillet over medium high heat.
  • When a little flour sprinkled into skillet begins to sizzle, add patties.
  • Cook for about 5 minutes per side.
  • Remove and drain on paper towels.
  • To make gravy:.
  • Remove all but four tablespoons of fat from skillet.
  • Stir in 4 tablespoons of dredging flour and 1/4 teaspoon salt.
  • Stir, scraping up browned bits, for about one minute till light brown.
  • Whisk in milk gradually.
  • Whisk until thick and bubbly.
  • Remove from heat.
  • Add 1/2 teaspoon black pepper or to taste.

1 tsp. pepper

  • Mix meat and spices, form on sticks. Dip into eggs, then roll in cracker crumbs. Brown in a pan, then bake about an hour at 325 degrees. A double recipe will make about 16 with the same amount of egg mixture.

1 Cup Dried Lentils
2 Chicken Bouillon Cubes
1 Tsp EVOO
1 Large Onion, chopped
1 Cup Walnuts
S&P To taste

Steps:

  • Place water, lentils, and bouillon cubes in a pot. Bring to a boil,reduce heat to a simmer, and cook about 30 minutes, until tender (but not mushy.) Drain well. Saute the onion in olive oil in a skillet until it becomes transparent. Combine all ingredient a food processor and grind until the texture is as preferred. Season to taste with salt and pepper. Chill. Extras: I usually dry toast the walnuts in a skillet until the nuts were beginning to color and they were fragrant. When the onions were almost done, I splashed about a jigger of brandy over them and reduced that until the onions were almost dry and then did that again. I seasoned the onions over heat with about 1 tsp each dried thyme, smoked paprika, and garlic powder. I added about a half teaspoon of ground allspice. I added a Tbs of brandy when I processed the ingredients. Options: I have added 1/2 to 1 tsp cumin because it adds a "meaty" flavor. I have also added chopped fresh sage when I have it. I have added chopped parsley. I have added a bit of lemon juice when the Pate`needed "something." The mayo sauce was Hellmann's lo fat Mayonnaise and sweet/spicy mustard (about 4 to 1) mixed together. Capers would be good on top or mixed in.

MUM'S " MOCK CHICKEN" DIP

Isn't it great when you eat something and it takes you back to being a child again! Well that's exactly what this dip does for me. My mum used to make this every time she threw a party or had people for drinks and nibbles. I would always have my own bowl and my own box of crackers and I would go off to some quiet spot and stuff my little face! I still love it now, so much so that I spoon it out of the pan while I'm cooking it (although I am trying to exercise more self control). This is such a quick and easy dip to make with stuff that you would normally have in the house, so a great standby for when people turn up unexpectedly. As for tasting like chicken? Well, I'll let you decide...but I was never convinced. Either way it tastes great!

2 cups spelt flour
3 teaspoons baking powder (non-aluminum)
1/4 teaspoon celtic sea salt
1 teaspoon nutritional yeast flakes
1/3 cup vegan margarine (softened)
3/4 cup soymilk
14 ounces vegetarian chicken pieces
1 cup flour
2 tablespoons flour
1/3 cup cornmeal (organic)
1 teaspoon paprika
1 teaspoon salt
1 teaspoon ground black pepper
1/2 cup soymilk (soy is good)
4 tablespoons vegetable oil (or other light oil)
1/4 cup vegetarian chicken stock (Imagine is good)
1/4 cup coffee creamer (Silk plain is really good)

Steps:

  • Biscuits:.
  • In a medium bowl mix the flour, baking powder, nutritional yeast flakes and salt together.
  • With a fork, blend in the margarine until the mixture is crumbly, then stir in the soy milk and blend well.
  • Drop biscuit size spoonfuls of dough onto a lightly greased baking sheet.
  • Bake at 450'F for 10-15 minutes until nicely golden brown.
  • Chicken:.
  • While the biscuits are baking, preheat a large heavy skillet over medium high heat.
  • slice the mock chicken into small round steaks.
  • Pour 1/2 cup of flour into a shallow dis and pour the other 1/2 cup flour into another shallow dish and add the cornmeal, paprika, salt and pepper. Pour the 1/2 cup non-dairy milk into a separate shallow bowl.
  • Dip the mock chicken into the soy milk then the plain flour. Next dip the mock chicken into the soy milk and then into the season flour cornmeal mixture.
  • Add 2 tablespoons of oil to a hot pan and cook 3 steaks at a time. Brown the steaks about 2 minutes per side or until cooked and remove from the pan.
  • Add 2 tablespoons more of oil and reheat with remaining steaks. Remove the steaks to a serving platter.
  • Add 2 tablespoons flour to the pan and cook for 2 minutes. Whisk in the broth and parsley, season with salt and pepper.
  • Whisk the soy creamer into the gravy. When the gravy bubbles remove from the heat.
  • Serve steak and warm biscuits with gravy on top.
  • Bon Appetit!

1 cup walnuts, chopped
1 (15 ounce) can le seuer peas, drained
1 hard-boiled eggs or 2 egg whites

Steps:

  • Saute' the onions in the oil till browned, but'not' burned.
  • Put the walnuts in a processor and process till fine.
  • Take the walnuts out of the processor and set aside.
  • To the processor, add the peas, 1/2 of the cooked onions and the egg.
  • Process till smooth.
  • Add the remaining onions and the walnuts and mix well.
  • Add salt and pepper, to taste.

cayenne pepper, to taste
1 tablespoon bell pepper, seeded and minced
1 egg, beaten with
1 tablespoon water
breadcrumbs
4 tablespoons butter
4 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup milk

Steps:

  • Melt butter; blend in flour salt and pepper.
  • Add milk gradually, stirring constantly until mixture thickens, then cook about a minute longer.
  • Add the meat to the white sauce followed by the seasonings and bell pepper.
  • Spread on a plate to cool.

1/2 bunch fresh parsley

Steps:

  • Put the water into a large stockpot on high heat.
  • Add the vegetables to the pot, then stir in the garlic, bay leaves, thyme, tumeric, salt, and parsely.

8 cups water
2 tablespoons water
2 large celery ribs, finely diced
3 medium carrots, peeled and thinly sliced
2 -3 garlic cloves, minced
1 small onion, minced
2 vegetable bouillon cubes
1 teaspoon salt free herb and spice seasoning mix
1/2 teaspoon dried dill
6 ounces short fine egg noodles
6 ounces baked pressed tofu, finely diced

Steps:

  • Heat the oil slowly with 2 Tbs water in a large soup pot.
  • Add the celery, carrots, garlic and onion.
  • Saute over medium heat for 10 minutes or until the vegetables begin to soften.
  • Add 8 cups of water, bouillon cubes, seasoning mix, and dried dill.
  • Bring to a simmer, then cook at gentle simmer for 15 minutes, or until the vegetables are tender.
  • Raise the heat and bring to a more vigorous simmer.
  • Add the noodles and cook at a steady simmer for 5-8 minutes or until the noodles are al dente.
  • Add the diced tofu, then season to taste with salt and pepper.
  • Serve at once.
  • *As the soup stands, the noodles quickly absorb the liquid.
  • If you plan on having leftovers of the soup, add a cup or so of additional water before you store and adjust the seasonings.
  • That way the soup can develop more flavor as it stands.

1 (16 ounce) package firm tofu, drain well
3 tablespoons safflower oil or 3 tablespoons butter
3 tablespoons soy sauce or 3 tablespoons Braggs liquid aminos
1/3 cup nutritional yeast
2 teaspoons spike seasoning salt
1/4 teaspoon black pepper (optional)

Steps:

  • Drain tofu well.
  • Heat oil in frying pan, preferably a non-stick skillet.
  • When oil is hot, add tofu by breaking it into random size pieces about 1" x 1".
  • Cook tofu without turning for about 5 minutes.
  • Turn tofu and cook for about 4 more minutes on the other side.
  • Turn off the heat and add the remaining ingredients.
  • First you put in the soy sauce and stir so as to cover all the pieces of tofu.
  • Then add the nutritional yeast, spike and black pepper.
  • Toss and coat all the tofu pieces.

For years I've endured paying $1 for a patty at the store feeling like I could figure out the recipe, but never could until now. Eureka! Mock chicken patties that taste marvelous on a bun with fixin's or slathered in gravy, Texas-style. Very good stuff.

¾ cup minced onion
¾ cup minced celery
1 (12 ounce) package extra-firm tofu
1 cup water
2 cubes vegetable bouillon (such as Knorr®)
1 tablespoon vegetable soup base
3 cups rolled oats
1 cup finely chopped raw cashews
1 tablespoon olive oil

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add onion and celery, cover, and steam until tender, 2 to 3 minutes.
  • Place tofu and water in a blender or food processor. Pulse briefly. Add bouillon cubes and vegetable base. Pulse until completely combined. Stir in onion, celery, oats, and cashews until evenly distributed.
  • Form tofu mixture into patties.
  • Heat oil in a skillet over medium heat. Cook tofu patties until golden brown, about 3 minutes per side.
