Along with kimchi, bibimbap takes its place among the favored foods in Korean cuisine. Literally meaning 'mixed rice,' it's a popular meal consisting of white rice topped with vegetables, beef, a whole egg, and gochujang (red chili pepper paste). For those who cannot handle the spiciness (like our children), you can substitute with soy sauce or Sriracha (rooster sauce) in place of it.

1 English cucumber, cut into matchsticks
¼ cup gochujang (Korean hot pepper paste)
1 bunch fresh spinach, cut into thin strips
1 tablespoon soy sauce
1 teaspoon olive oil
2 carrots, cut into matchsticks
1 clove garlic, minced
1 pinch red pepper flakes
1 pound thinly-sliced beef top round steak
1 teaspoon olive oil
4 large eggs
4 cups cooked white rice
4 teaspoons toasted sesame oil, divided
1 teaspoon sesame seeds
2 teaspoons gochujang (Korean hot pepper paste), divided

Steps:

  • Stir cucumber pieces with 1/4 cup gochujang paste in a bowl; set aside.
  • Bring about 2 cups of water to a boil in a large nonstick skillet and stir in spinach; cook until spinach is bright green and wilted, 2 to 3 minutes. Drain spinach and squeeze out as much moisture as possible; set spinach aside in a bowl and stir soy sauce into spinach.
  • Heat 1 teaspoon olive oil in large nonstick skillet and cook and stir carrots until softened, about 3 minutes; stir in garlic and cook just until fragrant, about 1 more minute. Stir in cucumber pieces with gochujang paste; sprinkle with red pepper flakes, and set the mixture aside in a bowl.
  • Brown beef in a clean nonstick skillet over medium heat, about 5 minutes per side, and set aside. In a separate nonstick skillet, heat 1 more teaspoon olive oil over medium-low heat and fry the eggs just on one side until yolks are runny but whites are firm, 2 to 4 minutes each.
  • To assemble the dish, divide cooked rice into 4 large serving bowls; top with spinach mixture, a few pieces of beef, and cucumber mixture. Place 1 egg atop each serving. Drizzle each bowl with 1 teaspoon of sesame oil, a sprinkle of sesame seeds, and a small amount of gochujang paste if desired.

1 cup dry fusilli pasta
3 tablespoons olive oil
6 chicken tenderloins, cut into chunks
1 tablespoon dried minced onion
salt and pepper to taste
garlic powder to taste
1 tablespoon dried basil
1 tablespoon dried parsley
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
2 cups frozen mixed vegetables
1 cup dry bread crumbs
2 tablespoons grated Parmesan cheese
2 tablespoons butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a medium baking dish.
  • Bring a large pot of lightly salted water to a boil. Place fusilli pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.
  • Heat the oil in a skillet over medium heat. Place chicken in the skillet, and season with minced onion, salt and pepper, garlic powder, basil, and parsley. Cook until chicken juices run clear. Mix in the cooked pasta, cream of chicken soup, cream of mushroom soup, and mixed vegetables. Transfer to the prepared baking dish.
  • In a small bowl, mix the bread crumbs, Parmesan cheese, and butter. Spread evenly over the casserole.
  • Bake 30 minutes in the preheated oven until bubbly and lightly browned.

4 lbs pickling cucumbers (of 4- to 5-inch, washed, cut off 1/16-inch from blossom end or discard and cut cukes into 1-inch sli)
2 lbs small onion, peeled and quartered
4 cups celery (cut into 1-inch pieces)
2 cups carrots (1/2-inch pieces)
2 cups sweet red peppers (peeled, seeded and cut into 1/2-inch pieces)
2 cups cauliflower florets
5 cups white vinegar (5 percent)
1/4 cup prepared mustard
1/2 cup canning salt or 1/2 cup pickling salt
3 1/2 cups sugar
3 tablespoons celery seeds
2 tablespoons mustard seeds
1/2 teaspoon whole cloves
1/2 teaspoon ground turmeric

Steps:

  • Combine vegetables, cover with 2 inches of cubed or crushed ice, and refrigerate 3 to 4 hours.
  • In 8-quart kettle, combine vinegar and mustard and mix well.
  • Add salt, sugar, celery seed, mustard seed, cloves, turmeric.
  • Bring to a boil.
  • Drain vegetables and add to hot pickling solution.
  • Cover and slowly bring to a boil.
  • Drain vegetables but save pickling solution.
  • Fill vegetables in sterile pint jars, or clean quarts, leaving 1/2-inch headspace.
  • Add pickling solution, leaving 1/2-inch headspace.
  • Adjust lids and process pints for 5 minutes at altitudes up to 1000 feet, 10 minutes from 1000 to 6000 feet and 15 minutes over that. Quarts are processed 10, 15 and 20 minutes depending upon your altitude.

1 piece gingerroot, peeled and finely chopped
4 garlic cloves, finely chopped
3/4 cup broccoli floret
1/2 cup snow peas
1 carrot, peeled and cut in match sticks
1 green pepper, deseeded and cut in strips
1 red pepper, deseeded and cut in strips
1 tablespoon soy sauce
1 tablespoon hoisin sauce
1 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon fresh ground black pepper
4 scallions, trimmed and shredded (to garnish)
1/2 teaspoon white pepper

Steps:

  • Heat wok, add oil when hot, add the garlic and giger and stirfry for one minute.
  • Add broccoli and stir-fry for 1 minute, then add snow peas, carrots and the green and red peppers.
  • Stir-fry for an additional 3-4 minutes or until tender but still crisp.
  • Blend the soy sauce, hoisin sauce and sugar in a small bowl. Stir well, season to taste with salt and pepper and pour into the wok, stirring well to distribute.
  • Transfer to a serving dish.
  • Garnish with scallions.

Season with salt and black pepper; set aside. Chop the remaining tomato; set aside.
  • Heat the 2 tablespoons olive oil in a skillet over medium heat, and cook and stir the onions until slightly golden, about 10 minutes.
  • Stir together the onions, potatoes, eggplant, zucchini, bell peppers, okra, the reserved chopped tomato, and the fresh tomato sauce, and place the mixture in a large baking pan. If needed, stir in a little water so that the vegetables are just covered with sauce.
  • Bake in the preheated oven until all vegetables are tender, about 1 hour.

1/2 cup yellow onion, chopped
1/4 cup water
1/2 cup mayonnaise
1/2 cup cheddar cheese, shredded
1/4 cup butter, melted
1/2 cup butter flavored cracker, crushed (such as Ritz)

Steps:

  • Preheat oven to 350°F.
  • Place water in a saucepan and add frozen vegetables, celery and onion.
  • Cook for 5-10 minutes until vegetables become slightly tender.
  • Drain vegetables and place in a mixing bowl.
  • Add mayonnaise and shredded cheddar cheese to vegetables and mix.
  • Place mixture into a casserole dish that has been sprayed with non-stick cooking spray.
  • Pour melted butter over vegetables.
  • Sprinkle crushed butter flavored crackers over top.

  • Soak mushrooms in cold water for 20 minutes. Drain and cut into thin strips.

3 tablespoons olive oil
1 (2 pound) flank steak
Salt and freshly ground black pepper
2 large ears fresh corn, husked and cut crosswise into 4 pieces
1 small eggplant, cut crosswise into 1/2-inch thick rounds
1 large Vidalia onion, cut into 3/4-inch thick wedges
1 large red bell pepper, seeded and quartered
1 large yellow bell pepper, seeded and quartered
1 large zucchini, quartered
12 asparagus spears, trimmed
Olive oil
Salt and freshly ground pepper
Finely chopped parsley and chives
2 cups cooked white beans, 1/4 cup cooking liquid reserved
2 tablespoons chopped garlic
1/3 cup fresh lemon juice
1/4 cup tahini
1/4 cup olive oil
1/4 cup finely chopped parsley
3 tablespoons finely chopped fresh mint
12 pitas

Steps:

  • For the steak: Place the wine, rosemary, thyme, bay leaves, onion, garlic and olive oil in a large shallow baking dish and stir to combine. Add the steak and turn to coat both sides. Cover and refrigerate at least 4 hours or overnight. Heat the grill, remove the meat from the marinade, season both sides with salt and pepper to taste and grill 6 to 7 minutes on each side. Let sit 5 minutes and slice against the grain.
  • For the vegetable platter: Brush the vegetables with olive oil and season the vegetables with salt and pepper to taste. Grill all the vegetables until just cooked through. Arrange on a platter and sprinkle with herbs.
  • For the skordilia: Place the beans, garlic and lemon juice in a food processor and process until the beans are coarsely chopped. Add tahini and oil and process until smooth. Add some of the cooking liquid if too thick. Season with salt and pepper to taste. Scrape into a bowl and fold in the parsley and mint.
  • Brush the pita on both sides with olive oil and grill until lightly golden brown. Cut into wedges.

1/2 garlic, chopped
1 onion, chopped
125 ml tomato sauce
200 g petsai cabbage, chopped
100 g cauliflower, chopped
200 g cabbage, chopped
100 g green beans, chopped
200 g firm tofu, diced
1 teaspoon sugar
3/4 cup water
1 tablespoon canola oil
1 teaspoon oregano leaves, ground
1 teaspoon basil leaves, ground

Steps:

  • In a wok, heat oil and fry the garlic together with the onion for 1 minute. Add the tomato sauce and water and bring to a boil
  • Add the chopped Chinese cauliflower and simmer for 5 minutes or until cooked.
  • Add the chopped Green Beans and simmer for 3 minutes.
  • Add the Chinese petsai cabbage and cabbage and simmer for 1 minute.
  • Add the Firm Tofu and simmer for 1 minute
  • Season with Ground Oregano Leaves and Ground Basil Leaves.

1/2 cup chopped onion
2 garlic cloves, minced
3 tablespoons reduced-fat margarine
1-1/2 cups reduced-sodium chicken broth
4 cups cubed peeled potatoes
1 cup julienned carrots
1/4 teaspoon pepper
1 tablespoon chopped fresh parsley

Steps:

  • In a large skillet, saute celery, onion and garlic in margarine until tender. Add broth, potatoes, carrots and pepper; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender. , Uncover and simmer for 5 minutes or until broth has thickened slightly, stirring occasionally. Israeli Couscous With Mixed Summer Vegetables image

This is the best use for Israeli couscous that I've found. Make a delicious vegetable stew, then cook the couscous in the stew. If you are making this ahead, wait until half an hour before you wish to serve, reheat the stew and then cook the couscous in the stew. Otherwise it will soak up too much of the broth overnight.

1 pound eggplant, preferably long Asian eggplants
2 tablespoons extra virgin olive oil
1 large onion, chopped
2 to 4 large garlic cloves (to taste), minced
Salt to taste
2 teaspoons paprika
1 teaspoon ground cumin seeds
1/2 teaspoon cayenne (more to taste)
1 pound ripe tomatoes, peeled, seeded and chopped, or 1-14 1/2-ounce can, with juice
2 leeks, white and light green parts only, cut in half lengthwise, cleaned of sand and sliced
1/2 pound fingerling potatoes, sliced about 1/2 inch thick
1/2 pound summer squash, diced
About 2 1/2 quarts water
2 tablespoons tomato paste
A bouquet garni consisting of 3 sprigs each parsley and cilantro
1 15-ounce can chickpeas, drained and rinsed thoroughly
Freshly ground pepper
2 cups Israeli couscous
4 to 6 tablespoons finely chopped parsley, mint or cilantro, or a combination

Steps:

  • Preheat the oven to 450 degrees. Cut the eggplant in half lengthwise and score down the middle, down to but not through the skin. Line a baking sheet with foil or parchment, brush with olive oil and place the eggplant on it, cut side down. Roast 15 to 20 minutes, until the skin is beginning to wrinkle. Remove from the heat and allow the eggplant to cool until you can handle it, then cut into 1-inch pieces.
  • Heat the olive oil in a large, heavy soup pot or Dutch oven over medium heat and add the onion. Cook, stirring, until it is tender, about 5 minutes, and stir in the garlic, the spices and salt to taste. Stir together for about 30 seconds, until the mixture is fragrant, and add the tomatoes. Cook, stirring often, until the tomatoes have cooked down slightly, 5 to 10 minutes. Stir in all of the vegetables, the tomato paste, and 2 to 2 1/2 quarts water, enough to cover the vegetables by a good inch. Add salt to taste, the bouquet garni and the chickpeas, bring to a gentle boil, reduce the heat, cover and simmer 30 minutes, until the vegetables are tender and the broth is fragrant. Taste and adjust seasonings. If serving the next day, remove from the heat and allow to cool, then refrigerate overnight. Bring back to a simmer about 30 minutes before serving.
  • Gradually add the Israeli couscous to the simmering stew, stirring all the while. Stir for a minute or two to make sure the couscous doesn't clump together. Simmer over low heat for 15 to 20 minutes, until the couscous is tender. Add freshly ground pepper, taste and adjust salt. Stir in the herbs shortly before serving.

2 medium boiling potatoes, peeled and cut into 2- by 1/4-inch sticks (about 2 cups)
2 medium carrots, cut into 2- by 1/4-inch sticks (about 2 cups)
1 small fresh green chile, such as serrano, Thai, or jalapeño, slit lengthwise with stem end intact
1/8 teaspoon hot red pepper flakes
1/8 teaspoon ground turmeric
1 3/4 cups water, divided
1 1/4 teaspoons salt
1 medium zucchini, peeled and cut into 2- by 1/4-inch sticks (about 2 cups)
1/2 cup frozen peas
1 cup grated dried unsweetened coconut
1 teaspoon ground cumin
1/8 teaspoon cayenne pepper
1 cup plain yogurt (not Greek-style)
15 to 20 fresh curry leaves (optional)
1 tablespoon coconut oil (optional)

Steps:

  • Bring potatoes, carrots, chile, red pepper flakes, turmeric, 1 cup water, and salt to a boil in a 3- to 4-quart heavy pot, then simmer briskly, uncovered, until vegetables are almost tender, about 5 minutes. Add zucchini and peas and simmer 1 minute more.
  • Meanwhile, blend coconut, cumin, cayenne, and remaining 3/4 cup water in a blender or food processor to a medium-fine paste.
  • Add coconut mixture to vegetable mixture along with yogurt. Simmer, uncovered, stirring occasionally, until vegetables are tender and flavors have blended, 12 to 15 minutes. If mixture becomes too thick to simmer, add more water.
  • Serve sprinkled with curry leaves and drizzled with coconut oil, if desired.

I have been making this now for many years but its the first time its been properly written down. I'm sure, were she around, she'd be happy now to give it to anyone who asked for it!

2 cups cooked potatoes, diced into 1 inch cubes
1 cup carrot, diced into 1 inch cubes,steamed or boiled
2 cups green peas, boiled or steamed
1 cup French beans, cut into 1/2 inch bits,boiled or steamed
2 tablespoons butter, plus
1 teaspoon butter
2 tablespoons flour
2 cups cold milk
1/2 cup cream (optional)
1 cup grated cheddar cheese
1 lemon, juice of
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon fresh ground pepper

Steps:

  • Heat 2 tblsps of butter in a saucepan.
  • Add flour and stir till bubbly.
  • Remove from fire and add milk all at once, stirring quickly with a wire whisk so that no lumps form.
  • Return to fire and bring to a boil, stirring all the time.
  • When the sauce thickens, remove from fire.
  • Add 1/2 cup cheese, save the other half for topping.
  • Cool slightly, add salt, pepper, lemon juice and sugar.
  • Add cream (if using).
  • Mix well.
  • Put all the vegetables in an oven proof dish and pour the sauce over it.
  • Stir lightly to coat the vegetables.
  • Top with reserved cheese and dot with 1 tsp butter.
  • Bake in a hot oven for 20 mins, finishing off under the grill for 5 mins, till the top is golden brown.
