1 bunch broccoli (about 1 1/2 pounds), stems peeled, heads coarsely chopped
2 medium carrots (about 3 ounces), peeled
1/3 cup white miso paste
1/2 teaspoon finely grated orange zest
1/4 cup fresh orange juice
2 tablespoons finely grated peeled ginger
2 tablespoons unseasoned rice vinegar
1 tablespoon toasted sesame oil
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh mint
1/4 cup chopped fresh Thai or regular basil
2 scallions, trimmed, thinly sliced
1/4 cup unsweetened coconut flakes, toasted, coarsely chopped

Steps:

  • Using the coarse grater disk on a food processor or the largest holes on a box grater, coarsely grate broccoli stems and carrots into a large bowl.
  • Whisk miso paste, orange zest, orange juice, ginger, rice vinegar, and sesame oil in another large bowl until smooth. Add broccoli stems, broccoli heads, and carrot and toss to combine. Cover and chill until ready to serve. Toss with cilantro, mint, basil, and scallions, transfer to a serving dish, and top with coconut.

Slaw:

Steps:

  • Slaw: In a large bowl whisk together ginger, lime juice, sugar, mirin and soy sauce until sugar dissolves. Add the broccoli coleslaw, grapes, cucumber, orange sections, mint and peanuts just before serving; toss gently. Halibut: Heat oven to 400ºF. In small bowl whisk together miso, mirin, soy sauce, brown sugar and ginger until well blended; set aside. Heat an oven-safe skillet over medium-high heat. Rinse any ice glaze from frozen Alaska Halibut under cold water; pat dry with paper towel. Brush both sides of halibut with oil. Place halibut in heated skillet and cook, uncovered, about 4 minutes, until browned. Turn halibut over and sear the other side, about 2 minutes. Transfer skillet to the oven; bake fish 5 minutes then brush with miso glaze. Bake an additional 6 to 9 minutes for frozen halibut or 2 to 5 minutes for fresh/thawed fish. Cook just until fish is opaque throughout. To serve, divide slaw among four plates. Arrange halibut on top of slaw and sprinkle with sesame seeds. 3 tablespoons toasted sesame oil
1/2 cup firmly packed light brown sugar
1/4 cup soy sauce
1/4 cup white miso
3 tablespoons sriracha asian garlic sauce
1 garlic clove, minced
nonstick cooking spray or canola oil
6 (6 ounce) salmon fillets, about 1-inch thick
6 sliced green onions, green part only, for garnish (reserve the white parts for the slaw)
1/3 cup chunky peanut butter
1/4 cup freshly squeezed lime juice
1/4 cup fresh pineapple juice
1/4 cup sriracha asian garlic sauce
2 garlic cloves, minced
2 tablespoons fish sauce
1 tablespoon grated ginger
2 tablespoons sugar
1 1/2 lbs chinese napa cabbage, shredded
1/2 lb red cabbage, shredded
2 carrots, peeled and julienned (we grated them)
2 red bell peppers, seeded and julienned
1 jalapeno, seeded and minced, to taste
6 green onions, white part only, thinly sliced on the diagonal
1/4 cup chopped fresh cilantro

Steps:

  • For the Salmon: Preheat the broiler.
  • In a small nonreactive bowl, combine the sesame oil, brown sugar, soy sauce, miso, Sriracha and garlic.
  • Line a rimmed baking pan with foil (this will make clean-up much easier later on) and spray with cooking spray or lightly grease with oil. Place the salmon on the foil and brush some of the glaze over the salmon, enough to evenly cover the surface.
  • Broil 6 inches from the flame, basting the salmon twice with more glaze. Broil until the salmon flakes easily at the center of the fillet, 9-10 minutes. Don't be alarmed if you see some smoke. That's what the soy sauce does when it's caramelizing.
  • Remove salmon from baking pan and transfer fillets to plates. Garnish with green onion and serve with Spicy Slaw.
  • For the Slaw: First, make the dressing. In a medium bowl, combine the peanut butter, lime juice, pineapple juice, Sriracha, garlic, fish sauce, ginger and sugar. Cover and refrigerate until ready to use.
  • Next, make the slaw. In a large bowl, mix together the napa and red cabbages, carrots, bell peppers, jalapeno, green onions, cilantro and mint.
  • Add the dressing and toss to mix. Season with salt & pepper to taste.

¼ cup mirin
¼ cup dry white wine
2 cloves garlic, minced
2 teaspoons chile paste
½ teaspoon minced fresh ginger root
½ cup miso paste
⅓ cup white sugar
2 (1 pound) pork tenderloins, trimmed of fat
½ cantaloupe - peeled, seeded, and thinly sliced
¼ small head napa cabbage, thinly sliced
2 shallots, thinly sliced
1 English cucumber - peeled, halved lengthwise, seeded. and thinly sliced
2 limes, juiced
½ bunch cilantro, roughly chopped
½ serrano chile pepper, seeded
3 tablespoons olive oil
1 tablespoon honey

Steps:

  • Bring mirin, wine, garlic, chile paste, and ginger to a boil in a saucepan. Add miso and stir to combine. Stir in sugar; cook until dissolved. Pour marinade into a large glass dish to cool. Add pork tenderloins and turn to coat. Cover and refrigerate 4 hours to overnight.
  • Preheat the oven to 400 degrees F (200 degrees C). Place pork on a wire rack set over a sheet pan.
  • Bake in the preheated oven until an instant-read thermometer inserted into the center reads 150 degrees F (65 degrees C), about 25 minutes. Remove and loosely cover for 10 minutes.
  • Combine cantaloupe, cabbage, shallots, cucumber, and cilantro in a bowl for the slaw. Puree serrano chile, olive oil, and honey together in a blender for the dressing.
  • Toss slaw with the dressing and mound onto the center of each plate. Slice the pork and arrange around the slaw.

75g bulghar wheat
1 tbsp rapeseed oil
2 onions , chopped
4 garlic cloves , chopped
2 carrots , coarsely grated
1 large red chilli , deseeded and finely chopped
1 tsp cumin seeds
1 tbsp ground coriander
30g pack coriander , stalks and leaves chopped but kept separate
1 lime , zested, 1/2 juiced, 1/2 cut into 4 wedges
2 x cans chickpeas , drained
2 large eggs
2 tbsp white miso paste
½ small white cabbage , shredded
1 red onion , halved and thinly sliced
2 carrots , shredded (ideally with a julienne peeler)
1 pomegranate seeds only
2 tbsp chopped mint
1 tbsp cider vinegar
1 tbsp extra virgin rapeseed oil

Steps:

  • Heat oven to 220C/200C fan/gas 7. Cook the bulghar in a small pan of water for 5 mins. Meanwhile, heat the oil in a large non-stick frying pan and fry the onions and garlic, stirring, for 5 mins or until starting to turn golden. Add the carrots and chilli, and cook, stirring frequently, for 5 mins until the carrots soften. Add the cumin, ground coriander, coriander stalks and lime zest, and stir well.
  • Tip the chickpeas into a bowl and crush with a masher or fork, then add the eggs and miso to form a chunky paste.
  • Drain the bulghar well and stir into the spicy vegetables. Take off the heat, shape into eight burgers and place on a baking sheet lined with baking parchment. Bake in the oven for 15-20 mins or until firm and starting to turn golden.
  • For the slaw, combine all the ingredients in a big bowl with the lime juice and coriander leaves. Serve with the burgers and lime wedges for squeezing over.
