1/4 cup butter, softened
1/3 cup light corn syrup
4 cups confectioners' sugar, divided
1/2 to 1 teaspoon peppermint extract
2 drops red food coloring
2 drops yellow food coloring
Sugar (about 1 cup)

Steps:

  • In a small bowl, combine butter and corn syrup. Add 2 cups confectioners' sugar and extract; beat well. Stir in 1 cup confectioners' sugar. Turn onto a work surface sprinkled with remaining confectioners' sugar; knead until sugar is absorbed and mixture is smooth., Divide into three portions. Tint one portion pink and one yellow; leave remaining portion white. Shape into 3/4-in. balls; roll in sugar. Flatten with a fork. Let stand, uncovered, at room temperature for 1 day. Store in an airtight container.

1 1/2 pounds ground lamb shoulder
2 large garlic cloves, pressed
1 1/2 teaspoons coarse kosher salt
1/3 cup crumbled feta cheese
1 tablespoon finely chopped fresh mint
1 tablespoon extra-virgin olive oil

Steps:

  • Place lamb in large bowl. Sprinkle garlic and salt over. Gently toss lamb to blend. Combine feta and mint in small bowl.
  • Divide lamb into 12 equal mounds. Using damp hands, shape each into ball. Working with 1 ball at a time, poke thumb into center to make hole. Press 1 teaspoon feta-mint filling into hole. Pinch hole closed, then press ball between palms to flatten into 3/4-inch-thick disk. Repeat with remaining lamb and feta-mint filling. DO AHEAD: Can be made 1 day ahead. Transfer to baking sheet. Cover and refrigerate.
  • Preheat oven to 250°F. Heat olive oil in heavy large skillet over medium heat. Working in 2 batches, cook lamb sausages until browned on both sides and cooked to desired doneness, about 3 minutes per side for medium. Transfer sausages to rimmed baking sheet and place in oven to keep warm. Serve hot.

1 onion, finely chopped
1 tablespoon olive oil
2 garlic cloves, crushed
1 small piece ginger, peeled and grated (about1 inch piece)
salt
black pepper, freshly ground
675 g ground lamb (1.5 lbs ground lamb mince)
1/4 cup fresh mint leaves, finely chopped (one handful of leaves)
extra vegetable oil (for frying)

Steps:

  • Heat the olive oil over low heat.
  • Add the onion and cook for 5 minutes until soft.
  • Add the garlic, ginger some salt and pepper. No need to cook these off,but you can cook for a further one minute if wished.
  • Remove from the heat and allow to cool.
  • Add the lamb mince to a large bowl along with the cooled onions and the mint. Season again and mix until thoroughly combined.
  • Roll large balls of the mixtureand flatten to make burger/patties.
  • Sit the patties on a plate and chill in the fridge until firm, if time permits.
  • Shallow fry the burger patties in a little vegetable oil. Fry 6-7 minutes each side, or until cooked through. You can also cook on a grill/griddle pan or barbeque.
  • Serve hot on a roll or with veges or salad on the side.

1 tablespoon fresh lemon juice
2 tablespoons cider vinegar
2 tablespoons water
1 1/2 teaspoons soy sauce
1 small garlic clove, minced
1 tablespoon sugar
1/8 teaspoon anchovy paste
1/2 teaspoon dried hot red pepper flakes
1/4 cup minced fresh mint leaves
1 large egg, beaten lightly
3/4 pound ground lamb
1/4 teaspoon cinnamon
a pinch of freshly grated nutmeg
1/2 cup minced onion
1/4 cup fresh fine bread crumbs

Steps:

  • In a small bowl stir together the lemon juice, the vinegar, the water, the soy sauce, the garlic, the sugar, the anchovy paste, the red pepper flakes, and the mint until the sugar is dissolved. In a bowl combine well the egg, the lamb, the cinnamon, the nutmeg, the onion, the bread crumbs, and salt and pepper to taste, form the mixture into four 1/2-inch-thick patties, and broil the patties on the rack of a foil-lined broiler pan under a preheated broiler about 6 inches from the heat for 6 minutes. Turn the patties and broil them 6 minutes more, or until they are just cooked through. Transfer the patties to 2 plates and spoon the sauce over them.

3 ½ cups confectioners' sugar
1 cup margarine
3 tablespoons corn syrup
2 drops peppermint oil

Steps:

  • In a medium bowl, cream together confectioners' sugar and margarine. Blend in corn syrup and peppermint oil. Adjust peppermint oil to taste. Chill 30 to 60 minutes, until firm enough to form into patties.
  • Shape into balls or patties and chill again for 30 minutes more. Eat as is or dip in melted chocolate and chill again before serving.

We made these in our Home Economics class when I was a teenager...and luckily ..one of my classmate still had the recipe...so I thought I would share it.

Number Of Ingredients 6

1/4 c real butter (softened)
1/2 c light corn syrup
4 c confectioners' sugar (divided)
1/2 tsp peppermint extract
1-?? drops of food coloring of choice (amount depends on how much you want)
1 c grandulated sugar

Steps:

  • 1. In a small mixing bowl combine butter and corn syrup. Add 2 c. confectioners' sugar and extract; beat well. Stir in 1 c. confectioners' sugar. Turn out on a work surface sprinkled with confectioners' sugar; knead until sugar is absorbed and smooth.
  • 2. Divide the candy dough into as many different colors that you desire. Add 2 drops of the desired color and work into the dough. Shape into 3/4" balls; roll in grandulated sugar. Flatten with a fork. If you are using a candy mold, follow the same steps, except you will press gently into the mold after rolling in sugar and you will not press with the fork.
  • 3. Let stand, uncovered at room temp for 1 day. Store in an airtight container. You can also separate the mixture and add the separate flavors and food coloring...i.e. red for peppermint...green for spearmint. Or if you prefer one flavor..you can still separate so you can have an array of colors. Next we rolled them in a long tubular shape and rolled waxpaper around the tube..then refrigerated until chilled and cut using bakers string or a slim sharp knife.

Number Of Ingredients 16

2 cups soybeans, cooked (edamame)
1 1/2 cups white rice, cooked
6 tablespoons peanut oil or 6 tablespoons canola oil
3 green onions, cut crosswise into very fine rings (all the white and the lower half of the green)
5 slices gingerroot, thin slices, peeled and finely chopped
3 garlic cloves, peeled and finely chopped
1 medium carrot, peeled and coarsely grated
2 jalapeno chile, finely chopped
4 tablespoons cilantro, chopped
4 tablespoons mint, finely chopped
2 teaspoons garam masala
1/2 teaspoon cayenne (or to taste)
1 teaspoon salt
fresh ground black pepper
1 egg, beaten
1/4 cup breadcrumbs (or as needed)

Steps:

  • Mash the cooked soybeans in a bowl until paste-like. Add the rice, mix well, and set aside.
  • Put 2 tablespoons of the oil in a large frying pan and set over high heat. When hot, put in the green onion, ginger, garlic, carrot, and jalapenos. Stir and fry for 3 - 4 minutes, or until very lightly browned.
  • Empty the contents of the frying pan into the bowl with the soybeans and rice. Add the cilantro, mint, garam masala, cayenne, salt, and pepper to taste. Mix well and taste for seasonings, adding more of anything you like.
  • Add the egg and breadcrumbs, and mix well. The mixture should be firm enough to form into balls or patties. Add a little more bread crumbs if necessary. (This mixture can be kept, covered with plastic, in the refrigerator for up to 3 days.).
  • Divide the mixture into 16 parts and form patties, about 3 inches in diameter.
  • Heat 3 tablespoons of the remaining oil in a large, preferably nonstick frying pan, over medium - high heat. When hot, lay in as many patties as the pan will hold easily in a single uncrowded layer. Fry them for about 2 minutes on each side, or until they develop a rich, dark, reddish - brown crust on both sides. Remove and drain briefly on paper towels, placing the patties in a warm oven until the remaining patties are fried. Add additional oil to the pan if necessary.
  • Serve with the chutney or sauce of your choice.

  • Beat white corn syrup, butter or margarine, mint extract, and 1/2 teaspoon salt. Mix in 1 pound of powdered sugar and knead intil smooth.

LAMB PATTIES WITH GARLIC AND MINT OVER MEDITERRANEAN CHOPPED SALAD



Lamb Patties with Garlic and Mint over Mediterranean Chopped Salad image

Number Of Ingredients 18

3/4 cup fresh flat-leaf parsley leaves, divided
1 3/4 pounds ground lamb
5 to 6 garlic cloves, chopped
1 large shallot, chopped
1/4 cup fresh mint leaves (a generous handful), finely chopped
2 teaspoons to 1 tablespoon grill seasoning, such as McCormick's Montreal Steak Seasoning (half a palmful)
2 teaspoons to 1 tablespoon ground cumin (half a palmful)
3 tablespoons extra-virgin olive oil (EVOO), plus some for drizzling
1/2 seedless cucumber, chopped
1 green bell pepper, cored, seeded, and chopped
1 small red onion, chopped
3 plum tomatoes, chopped
1 cup pitted kalamata olives
1 cup feta cheese crumbles (1/3 pound)
8 pepperoncini peppers, chopped
Juice of 2 lemons
Salt and freshly ground black pepper, to taste
4 pita breads, any flavor or brand, warmed in the oven or toaster oven, then cut into halves or quarters

Steps:

  • Coarsely chop the parsley. Set aside two thirds and finely chop the rest.
  • Heat a grill pan or a large nonstick skillet to medium-high heat. Place the ground lamb in a bowl with the garlic, shallots, mint, finely chopped parsley, grill seasoning, cumin, and a generous drizzle of EVOO. Mix the meat and score it into 8 portions. Form 8 patties, each 3 inches across and 1 inch thick. Add the patties to the skillet. Cook for 3 minutes on each side.
  • While the meat cooks, combine all the vegetables with the reserved coarsely chopped parsley, the olives, cheese, and hot peppers. Dress the salad with the juice of 2 lemons and about 3 tablespoons EVOO (3 times around the bowl). Season the salad with salt and pepper. Serve the salad with 2 patties of lamb on top and warm pita bread alongside.

MINI MINT PATTIES

1 pound fondant, store-bought
2 to 3 drops mint extract, to taste
Powdered food coloring, as desired
1/2 teaspoon invertase
1 pound bittersweet chocolate, tempered

Steps:

  • Place the fondant in a saucepan placed over medium heat. Warm the fondant with a few drops of water so the fondant will become soft, like the consistency of royal icing. Insert a candy thermometer and heat to 140 degrees F. Stir in a few drops of mint extract, to taste. Stir in a drop or 2 of green food color, to your taste for color. Place the fondant in a cornet and use a scissors to cut off the tip. Pipe the fondant in small rounds onto a parchment paper lined baking pan. Let the candies cool until they are hard, about 30 minutes.
  • Use a chocolate dipping fork to dip each candy in the tempered dark chocolate. Place back on a parchment lined baking sheet. When cool, the candies are ready to eat. The invertose will cause the fondant consistency to change over time. The inside will become the consistency of honey.

1/4 cup butter, softened
1/3 cup light corn syrup
4 cups powdered sugar, divided
1 - 2 tsp your choice of extract or candy flavoring - I used mint
food coloring - preferably gel or paste
1/2 cup granulated sugar (to roll balls in)

Steps:

  • Combine butter and corn syrup together in a small bowl.
  • Add 2 cups powdered sugar and your choice of extract and beat until well combined. Add extract 1/2 teaspoon at a time until the mixture reaches your desired flavor.
  • Stir in an additional cup of powdered sugar.
  • Turn bowl onto a cutting board sprinkled with last cup of powdered sugar.
  • Knead the mixture until sugar is absorbed and is completely smooth.
  • Divide dough into four portions.
  • Tint one portion pink, one green, one blue and one yellow.
  • Shape into 3/4 inch balls and roll in granulated sugar.
  • Flatten gently with a fork.
  • Let candies stand, uncovered, at room temperature for 1 day.
  • Store in an airtight container.
