"Because you start with a store-bought cookie mix, it takes no time at all to make these minty treats," says Christina Hitchcook of Blakely, Pennsylvania. She usually drizzles melted chocolate chips over the cookie tops, but pink candy coating looks lovely for Valentine's Day.

1 package (17-1/2 ounces) sugar cookie mix
40 to 45 mint Andes candies
6 ounces pink candy coating disks
Heart-shaped decorating sprinkles, optional

Steps:

  • Prepare the cookie dough according to package directions. Cover and chill for 15-20 minutes or until easy to handle., Pat a scant tablespoonful of dough in a thin layer around each mint candy. Place 2 in. apart on ungreased baking sheets. Bake at 375° for 7-9 minutes or until set. Cool for 1 minute before removing from pans to wire racks to cool completely., In a microwave-safe bowl, melt candy coating; stir until smooth. Drizzle over cookies. Top with decorating sprinkles if desired.

FROSTING:
1 (16.5-ounce) roll refrigerated sugar cookies
3/4 cup chopped unwrapped thin rectangular créme de menthe candies
2 1/4 cups powdered sugar
1/4 cup butter or margarine, softened
1 to 2 drops green food color, if desired
2 to 3 tablespoons milk
24 thin rectangular créme de menthe candies, unwrapped

Steps:

  • Heat oven to 350°F. In medium bowl, break up cookie dough. Stir or knead in 3/4 cup chopped candies. Shape teaspoons of dough into balls; place 1 inch apart on ungreased cookie sheets. Bake 9 to 11 minutes or until set and edges are light golden brown. Cool 1 minute; remove from cookie sheets. Cool completely, about 15 minutes. In small bowl, mix frosting ingredients until smooth, adding enough milk 1 teaspoon at a time until desired spreading consistency. Spread 1 teaspoon frosting on each cooled cookie. Cut each créme de menthe candy in half crosswise; cut each half diagonally into 2 triangles. Garnish each cookie with 2 candy triangles to form a tree. For added color, roll the balls of dough in green sugar before baking. 1/2 cup butter, softened
1/2 cup shortening
1 cup sugar
1/4 cup confectioners' sugar
1/2 cup milk
1 egg
1 teaspoon peppermint extract
1 teaspoon vanilla extract
3-1/2 cups all-purpose flour
1/4 teaspoon salt
Green and red food coloring

Steps:

  • In a bowl, cream butter, shortening and sugars. Beat in milk, egg and extracts. Gradually add flour and salt. Set aside half of the dough. Divide remaining dough in half; add green food coloring to one portion and red food coloring to the other. Wrap dough separately in plastic wrap. Refrigerate for 1 hour or until easy to handle. , Roll 1/2 teaspoonfuls of each color of dough into 3-in. ropes. Place each green rope next to a white rope; press together gently and twist. Repeat with red ropes and remaining white ropes. Place 2 in. apart on ungreased baking sheets. Curve one end, forming a cane. Bake at 350° for 11-13 minutes or until set. Cool for 2 minutes; carefully remove to wire racks.
