Steps:
- Put the flour in a large bowl. Add a little salt to one side of the bowl and the yeast to the other side. Sprinkle over the sugar, together with a spoon, and add the oil and 190ml warm water. Combine with a spoon until all the flour comes away from the sides of the bowl, then tip onto a floured surface. Knead for 5-10 mins or until smooth and elastic. Lightly oil a clean bowl, add the dough, cover with cling film and leave to rise for 1 hr.
- Meanwhile, make the sauce. Pour the passata into a saucepan, add the basil and mixed herbs, then season and bring to the boil over a low heat. Simmer gently for 5 mins, then set aside to cool. Chop the toppings.
- Once the dough has risen, tip it out, knock out the air and divide into 6 equal parts. Heat oven to 240C/220C fan/gas 9 and place 2 large baking sheets in the oven.
- Roll out the dough on a lightly floured surface into a circle around 15cm in diameter. Pick up the circle of dough and toss about a metre up, spinning it in the air. Catch it on the back of your hand, so your fingers don't poke through the dough. Do this at least 3 times to achieve a thin central base and a thicker outside crust. Alternatively, you could carry on rolling, but it's not as much fun!
- Lay the bases onto baking parchment (2 bases on 1 piece of parchment) and carefully slide each pair inside a plastic bag 'tent' for 15 mins to prove again.
- After the second rise, spread the sauce over the bases and add the and mozzarella. Take the baking sheets out the oven and quickly slide the pizzas (still on their baking parchment) on top. You can cook 2-3 pizzas per tray. Return to the oven and bake for 12 mins. Take out, slice and eat.

- Line eggplant rounds up on a large cutting board and lightly salt both sides. Let sit 10 minutes. Pat dry with paper towels. Preheat the oven to 250 degrees F (120 degrees C).
- Meanwhile whisk egg and water together in a mixing bowl. Mix bread crumbs and Parmesan cheese together on a flat plate. Line a rimmed baking sheet with aluminum foil and place a cooling rack on top.
- Dip each eggplant round in beaten egg and then coat in bread crumb mixture.
- Preheat an air fryer to 400 degrees F (200 degrees C). Spray the basket with nonstick cooking spray.

- Mix flour, water, olive oil, yeast, salt, and sugar together in a large bowl. Use an ice cream scoop to place 12 balls of dough onto the prepared pan, patting down slightly; dough will be very sticky. Let sit until risen, about 30 minutes, without kneading or punching down.

- Combine 2 cups flour, undissolved yeast, sugar and salt in a large bowl. Add very warm water and oil; mix until well blended, about 1 minute.

- Preheat the oven to 425 degrees F.
- Pulse the cauliflower florets in a food processor to a fine snowy powder. Transfer the processed cauliflower to a microwave-safe bowl and cover. Microwave until soft, 4 to 6 minutes. Transfer to a clean, dry kitchen towel and allow to cool.
- When cool enough to handle, wrap the cauliflower in the towel and wring out as much moisture as possible, transferring to a second towel if necessary.
- In a large bowl, stir together the cauliflower, Parmesan, Italian seasoning, salt, egg and 1/2 cup of the mozzarella until well combined.
- Line a rimmed baking sheet with parchment paper and spray the parchment with cooking spray. Use a 1 3/4-inch cookie scoop to scoop out a heaped amount of the mixture onto the parchment. Flatten with a cup into a thin 4-inch disc. Repeat with the remaining mixture to make 6 mini pizza crusts. Bake until golden, 15 minutes.
- Remove the crusts from the oven and top with some of the Creamy Tomato Sauce--not too much--and the remaining 1/2 cup mozzarella. Return to the oven and bake until the cheese is melted and bubbly, 5 minutes more.
- Garnish with the cherry tomatoes and fresh basil leaves just before serving.
- Put the butter and olive oil in a saucepan over medium heat. Add the garlic and onions and saute until soft, about 8 minutes. Add the tomato puree, heavy cream, salt, red pepper flakes and black pepper and cook for 10 minutes.

AIR FRYER ESSENTIALS: MINI PIZZAS
Okay, you are home alone... You are hungry for a pizza, but you do not want to make a whole pizza, and you definitely do not want to do take away. But you do have an air fryer, and you have some flour tortillas. Guess what? You probably have all the ingredients to make some yummy mini pizzas. So, you ready... Let's get into...

- 1. PREP/PREPARE
- 2. Gather your Ingredients (mise en place).
- 3. Chef's Note: For this recipe, I am using what are called: Street Taco Tortillas. They are smaller than a regular taco, about 5-inches (12.5cm). If you choose to use a larger taco, that is fine.
- 4. STAGE I: Crisping the tortilla. I wanted a crispy, not soggy, crust so the first thing that I did was brush both sides of the flour tortilla with grapeseed oil, and stuck it into the air fryer. I then tried different times, and temperatures. The goal was crisp but not too browned. And the winner was, 350f (175c) for 6 minutes. Results were a nice crispy crust, ready to be topped with all kinds of yummy ingredients.
- 5. Here is what it looked like after crisping.
- 6. Chef's Note: Why grapeseed oil? Well, grapeseed oil does not break down at high temperatures, like other oils, it has a high smoke point 420f (215c), it does not impart any additional (unwanted) flavors, and it is considered one of the more healthier oils.
- 7. Chef's Tip: In the previous step, I mentioned that grapeseed oil is good, and it does not impart any additional flavors... But, let us stop to consider that. There are really good oils out there with infused flavors like garlic, and Italian spices. That might not be a such a bad choice... Think about it.
- 8. STAGE TWO: The toppings This is where it gets fun. My question to you is, what do you like on your pie? For this experiment, I brushed both sides of the tortilla with a bit more grapeseed oil. Then, I went fairly traditional with a light brushing of tomato sauce, sprinkled with a few spices (oregano, basil, etc.), then some good buffalo mozzarella, and a few pepperoni's.
- 9. This is what it looked like sitting in the air fryer waiting to be cooked.
- 10. STAGE THREE: The baking. Since the crust was already crisp, I was more interested in getting the toppings all nice and gooey, with just a hint of browning on the cheese. So, I made several of these pizzas, and cooked them at various temperatures and times. And the winner was, 400 (205c), for 6 minutes. The cheese was gooey, bubbly, with the perfect hint of browning.
- 11. Here is what it looked like, after cooking... So yummy.
- 12. Chef's Tip: I have not accomplished enough testing of different air fryers to definitively state my times are absolute. So, watch the pizza as it cooks, and make your own determination as to when it is properly cooked.
- 13. PLATE/PRESENT
- 14. Cut in half, or quarters, up to you, and sprinkle on a bit of parmesan cheese, and maybe some chopped basil. Enjoy.
- 15. Keep the faith, and keep cooking.

- Preheat oven to 375°F.
- While oven is heating,add ground beef and taco seasoning to a medium-sized skillet over medium heat.
- Cook beef until no longer pink,about 8 to 10 minutes,drain if needed.
- Lightly spray two medium sized cookie sheets with cooking spray.
- Place two tortillas on each sheet,then lightly spray tortillas with more cooking spray.
