Easy refrigerated biscuit dough monkey bread cooked in muffin pans. My son who calls these 'monkey sins' loves to be in charge of shaking the biscuit pieces with the spiced sugar. I love that I can make a few of these at a time and eat them warm without waiting for a large enough crowd to justify a tube pan full.

1 teaspoon apple pie spice
¼ cup white sugar
1 (12 ounce) can refrigerated biscuit dough, separated and cut into six pieces
½ cup brown sugar
3 tablespoons butter
1 teaspoon water

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Butter 6 muffin cups or line with paper muffin liners.
  • Combine the apple pie spice and white sugar in a small bowl; roll the biscuit pieces in the mixture to coat. Divide the coated pieces between the prepared muffin cups.
  • Combine the brown sugar, butter, and water in a small saucepan over medium heat; bring to a boil, stirring continuously. Allow the mixture to boil until the sugar is completely dissolved, 2 to 3 minutes. Spoon the mixture over the biscuit pieces.
  • Bake in the preheated oven until golden, and the tops spring back when lightly pressed, 8 to 12 minutes.

½ cup white sugar
1 tablespoon ground cinnamon
3 (10 ounce) cans refrigerated biscuit dough, separated and cut into quarters
¾ cup brown sugar
½ cup margarine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper liners.
  • Mix white sugar and cinnamon together in a gallon-size resealable bag; add biscuits and toss to coat. Press coated biscuits into muffin cups, about 2/3 full.
  • Heat brown sugar and margarine together in a saucepan over medium-low heat until melted, 3 to 5 minutes; pour over each biscuit muffin.
  • Bake in the preheated oven until dough is cooked through, about 20 minutes.

One 12-ounce can refrigerated biscuit dough
1/4 cup (4 tablespoons) unsalted butter, melted
3 tablespoons maple syrup
2/3 cup granulated sugar
1/2 cup finely chopped pecans
1 tablespoon ground cinnamon

Steps:

  • Preheat the oven to 375 degrees F.
  • Place 24 mini cupcake liners in the cups of a mini-muffin pan. (Alternatively, use twelve 3-inch mini cast-iron pans.) With kitchen shears, cut each biscuit into 8 pieces. In a small bowl, combine the melted butter and maple syrup. In a separate bowl, mix together the sugar, pecans and cinnamon. Dip each biscuit piece in the maple-butter, and then roll it in the sugar mixture. Place 3 to 4 coated pieces in each muffin cup (or 5 to 6 pieces in each cast-iron pan), pressing to compact.
  • Bake the muffins until browned, 15 to 17 minutes. Allow to cool in the pan for 5 minutes before removing to wire racks. Serve warm.

1/2 cup butter, softened
1 cup plus 1 tablespoon sugar, divided
2 large eggs, room temperature
1 cup mashed ripe bananas
2/3 cup peanut butter
1 tablespoon 2% milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup miniature semisweet chocolate chips

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and 1 cup sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in the bananas, peanut butter, milk and vanilla. Combine the flour, baking soda and salt; add to creamed mixture just until moistened. Fold in chips., Fill greased or paper-lined miniature muffin cups three-fourths full. Sprinkle with remaining 1 tablespoon sugar. Bake until a toothpick inserted in the center comes out clean, 14-16 minutes. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

1 package of 8 count refrigerated biscuits
1/2 cup butter (melted)
1/3 cup sugar
1 Tablespoon cinnamon
2 cups powdered sugar
2-3 Tablespoons milk (add more or less depending on how thick/thin you want your frosting to be)

Steps:

  • Preheat your oven to 350 degrees F.
  • Line your muffin tin with cupcake liners. In a small bowl, melt butter in the microwave. In a separate bowl, mix together cinnamon and sugar.
  • Using a pair of clean kitchen scissors, cut each biscuit into 4-5 smaller pieces. You will have about 32-40 dough pieces total when you are finished.
  • Dip each piece of dough in butter; making sure to cover the entire surface. Then roll the buttered dough around in the cinnamon and sugar mixture until it is completely covered. Place the cinnamon-covered piece of dough in a cupcake liner.
  • Continue to dip each piece of dough in butter and then roll around in the cinnamon and sugar mixture. Place 3-4 pieces of dough in each muffin tin well, making about 10-15 muffins total.
  • Place the muffins in the preheated oven and bake for 18-20 minutes, or until the muffins start to turn golden. You don't want to overbake them because then they will be hard and crunchy; but if you don't bake them long enough you might have uncooked dough in the center. Keep an eye on them while they cook and once they start to turn golden on top, they should be finished.
  • Remove muffins from oven.
  • In a mixing bowl, combine powdered sugar and milk and beat together with a whisk or electric mixer. If you want your frosting to be a little thicker, add in more powdered sugar. Use a spoon to drizzle frosting over the top of each muffin. Because the muffins are so hot, the frosting will absorb into the muffins fairly quickly, so feel free to top with more frosting if desired.
  • Let the muffins soak up the frosting for a couple of minutes and then serve while the muffins are still warm. Enjoy!
