1/2 cup semolina flour or cornmeal
All-purpose flour, for dusting
1 pound store-bought pizza dough, thawed if frozen and at room temperature
1 large egg
1/2 cup shredded Italian cheese blend
1/2 cup ricotta
1/2 cup grated Parmesan
4 scallions, thinly sliced
2 teaspoons garlic powder
Kosher salt and freshly ground black pepper
24 thin slices pepperoni (about 2 ounces)
2 cups roasted garlic tomato sauce, such as Classico® Roasted Garlic Pasta Sauce

Steps:

  • Position a rack in the middle of the oven and preheat to 450 degrees F. Sprinkle a baking sheet with the semolina and set aside.
  • Lightly flour a work surface and roll the dough into a round that is about 12 inches wide and 1/2 inch thick. Cut out 8 rounds with a 3 1/2- to 4-inch biscuit cutter or drinking glass. Dust with flour and cover with a clean kitchen towel or plastic wrap.
  • Beat the egg with 1 tablespoon water in a small bowl. Set aside.
  • Combine the cheese blend, ricotta, 1/4 cup Parmesan, scallions and garlic powder in a medium bowl. Season with salt and pepper to taste.
  • Place 3 slices of the pepperoni on one half of each round of dough, leaving a 1/4-inch border around the edges. Top each round with 2 tablespoons of the cheese mixture.
  • Brush the egg wash around the edges of one dough round using your finger or a pastry brush. Gently fold the dough over the filling to enclose and crimp the edges with a fork to seal. Repeat with the remaining dough rounds.
  • Brush the tops of the calzones with the egg wash and sprinkle with the remaining 1/4 cup Parmesan.
  • Place the calzones on the prepared baking sheet and bake on the middle rack until golden, 14 to 16 minutes, rotating the sheet halfway through for even baking.
  • While the calzones bake, heat the tomato sauce in a medium saucepan over medium heat until bubbling, 1 to 2 minutes. Transfer to a small bowl. Place the calzones on a platter with the sauce and serve immediately.

1 ⅓ cups warm water
1 ½ teaspoons active dry yeast
3 ½ cups flour, divided
¼ cup grated parmesan cheese
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons sugar
3 tablespoons olive oil, divided
2 cups tomato sauce, divided
3 cups shredded mozzarella cheese, divided
1 cup fresh basil, chopped, divided
salt, to taste
oil, for frying
2 tablespoons fresh parsley, chopped, to serve

Steps:

  • In a liquid measuring cup, sprinkle the yeast over the warm water. Set aside for 5 minutes to bloom.
  • In a bowl, add 3 cups (375 g) of the flour, Parmesan, baking powder, salt, and sugar, and stir to combine.
  • Add 2 tablespoons of the olive oil and stir to combine. Pour the yeast water over the flour mixture and stir until the dough forms into a ball.
  • Use remaining flour for dusting the surface. Scrape the dough out of the bowl onto your floured surface. Knead the dough for about 10 minutes until the dough is tight and form the dough into a ball.
  • Pour 1 tablespoon olive oil in a bowl. Place the dough in the bowl.
  • Cover, let rise for 1 hour in a warm area, or until the dough has doubled in size.
  • Flour the surface. Flip bowl over surface and let the dough fall out of the bowl. Cut the dough into 2-inch (5-cm) pieces. Roll into balls.
  • Begin forming the dough into a circle about ½-inch (1-cm) thick and 5 inches (12-cm) wide, making sure the middle of the circle is not too thin. Repeat with the other balls of dough.
  • Spoon 1 tablespoon of tomato sauce on to the center of the dough.
  • Sprinkle 2 tablespoons mozzarella, then 1 tablespoon basil. Season with salt.
  • Fold the dough over the fillings and seal. Pinch the edge of the dough together and fold back. Repeat with the rest of the dough.
  • Heat 2 inches (5 cm) of oil until the temperature reaches 365˚F (185˚C).
  • Fry the calzones 2 at a time for about 3 minutes on each side. Remove from oil and drain on a paper towel-lined plate.
  • Place a bowl filled with the rest of the tomato sauce on the plate.
  • Sprinkle with parsley. Serve immediately.

1 pkg pepperoni (sliced)
1 pkg mozzarella cheese (shredded)
1 pkg ricotta cheese
olive oil, extra virgin

Steps:

  • 1. On clean flat work surface put a few drops of extra virgin olive oil down.
  • 2. Open your can of biscuits, and flatten out.
  • 3. Add five pepperoni's to the biscuit.
  • 4. Add one tsp of ricotta cheese.
  • 5. Add a tbsp of mozzarella cheese.
  • 6. Fold over and seal biscuit by pinching the sides together.
  • 7. Bake: 350 degrees for 10 - 12 minutes. Serve with your favorite spaghetti sauce.

1 (10 ounce) package refrigerated pizza dough
1 beaten egg
2 teaspoons water
1/4 cup shredded parmesan cheese
1/2 cup finely chopped pepperoni
1/4 cup finely chopped green bell pepper (or red)
1/4 cup pizza sauce
2 tablespoons finely chopped onions (3/4 tablespoon onion powder)
1 1/2 teaspoons dried Italian seasoning

Steps:

  • Unroll pizza dough. On a lightly floured surface roll dough into a 15" square. Cut into 20 - 24 3" squares.
  • Spoon a slightly rounded teaspoon of Pepperoni Pizza Filling atop each dough square.
  • Brush edges of each dough square with water.
  • Lift one corner of each square and stretch dough over the filling to the opposite corner, making a triangle. Press edges together and seal well with fingers or a fork.
  • Arrange calzones on a greased baking sheet. Prick tops with a fork. Combine the egg and water. Brush calzones with egg mixture.
  • Bake ina 425-degree F -- oven for 10 - 12 minutes or till golden. During te last 3 minutes of baking time, sprinkle with shredded Parmesan cheese. Let stand for 5 minutes before serving.
  • Pepperoni Pizza Filling:.
  • In a bowl stir together all ingredients. Use immediately or cover and chill for up to 24 hours.

9 teaspoons pizza sauce

One 1-pound ball pizza dough
Cornmeal, for dusting
1/2 cup (4 ounces) shredded fontina (see Cook's Note)
1/2 cup (4 ounces) shredded provolone
1 ounce salami, diced into 1/4-inch pieces
1/4 cup diced roasted red pepper (jarred or homemade)
1 tablespoon finely chopped kalamata olives (about 5 olives)
1 egg
Marinara sauce (jarred or homemade), warmed, for dipping

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F.
  • On a lightly floured work surface, roll out the dough ball into a 14-inch circle, about 1/4-inch thick. Using a 4-inch round cutter, cut the dough into 12 circles. Transfer the circles onto two heavy baking sheets dusted with cornmeal.
  • In a medium bowl, combine the fontina, provolone, salami, peppers and olives. In a separate small bowl, beat together the egg and 1 teaspoon water. 2 tablespoons olive oil
1 clove garlic, minced
1 cup canned chopped tomatoes in juice
1/2 teaspoon dried thyme
2 tablespoons chopped fresh Italian parsley leaves
1/2 cup dry white wine
1 pound uncooked large shrimp, peeled and deveined
Salt and freshly ground black pepper
6 (4-ounce) pieces of purchased or homemade pizza dough, recipe follows
3 cups shredded mozzarella
1 large egg, beaten to blend (for egg wash)
Extra-virgin olive oil
1/2 cup warm water (105 to 110 degrees F)
2 teaspoons active dry yeast
2 cups all-purpose flour, plus more for kneading
1 teaspoon salt
3 tablespoons olive oil, plus more for bowl

Steps:

  • Heat the oil in a heavy large skillet over medium-low heat. Add the garlic and saute until fragrant and tender, about 2 minutes. Add the tomatoes, thyme, parsley, and wine. Increase the heat to medium and simmer until most of the liquid evaporates, about 8 minutes. In a small bowl, season the shrimp with salt and pepper. Add the shrimp to the skillet and saute until just cooked through, about 2 minutes. Set aside to cool in a small bowl.
  • Position 1 oven rack in the center and the second rack on the bottom of the oven and preheat to 450 degrees F.
  • Line 2 heavy large baking sheets with parchment paper. Roll out each piece of pizza dough into a 7-inch-diameter floured round. Sprinkle half of the mozzarella over the lower half of each pizza dough, dividing equally and leaving a 1-inch border. Spoon the shrimp mixture over the cheese. Sprinkle the remaining cheese over the shrimp mixture. Brush the edge of the dough with egg wash. Fold the plain dough halves over the filling, forming half circles. Pinch the edges of dough firmly together and crimp to seal.
  • Transfer the calzones to the 2 prepared sheets. Bake until the calzones puff and become golden brown, about 12 to 15 minutes. Brush extra-virgin olive oil over calzones and serve.
  • Mix the warm water and yeast in a small bowl to blend. Let stand until the yeast dissolves, about 5 minutes. Mix the flour and salt in a food processor to blend. Blend in the oil. With the machine running, add the yeast mixture and blend just until the dough forms. Turn the dough out onto lightly floured surface and knead until smooth, about 1 minute. Transfer the dough to a large oiled bowl and turn the dough to coat with the oil. Cover the bowl with plastic wrap and set aside in a warm draft-free area until the dough doubles in volume, about 1 hour. Punch the down dough and form into ball. The dough can be used immediately or stored airtight in the refrigerator for 1 day.

6 (1 ounce) packages mozzarella string cheese
1 (11 ounce) package refrigerated breadstick dough
1 cup jarred marinara sauce or 1 cup pizza sauce, for serving

Steps:

  • Preheat the oven to 400°F.
  • Unwrap the string cheese sticks and cut them in half crosswise. Open or unroll the bread-stick dough and separate it into 12 rectangles. Coil a rectangle of bread-stick dough around a piece of cheese stick as if you were wrapping it with yarn. Completely cover the cheese, tucking the dough ends under and pinching them to seal closed. 1 can(s) (16.3 oz) pillsbury® grands!® refrigerated biscuits
1/2 c pizza sauce (marinara sauce)
1 c turkey pepperoni or sausage
1 c shredded cheese (mozzarella)
1 Tbsp parmesan cheese
1 tsp garlic salt
any other ingrediants that you would like
1 egg, mixed with 1 tbsp water for eggwash

Steps:

  • 1. Preheat oven 375°F. If you are going to use sausage instead of pepperoni, be sure to brown up the sausage first.
  • 2. Roll out the biscuits on a lightly floured surface using a rolling pin until they are twice the size
  • 3. Put about 1/2 teaspoon of Pizza Sauce on one half, Add 2 tablespoons of Cheese and a couple pieces of pepperoni or 2 tablespoons of Sausage. Keep everything away from the edges.
  • 4. Using your finger or pastry brush edge with egg wash, fold biscuit over and lightly pressed the tines of the fork into the edges to seal
  • 5. Put on a baking sheet covered in Parchment paper. Brush egg wash on the top and sprinkle with parmesan cheese and garlic salt.** ** I didn't do this part this time, but plan to next time**
  • 6. Bake for 12-15 minutes until golden brown. Let sit for a few minutes. Then serve with remainder of warmed marinara sauce.

Wrapped in crescent dough, these easy mini calzones are filled with chili, bell pepper, bacon, and Cheddar cheese.

10 strips HORMEL® BLACK LABEL® Bacon, chopped
½ cup chopped bell pepper
½ cup chopped onion
1 (15 ounce) can HORMEL® Chili No Beans
1 tablespoon hot sauce
4 (8 ounce) packages refrigerated crescent roll dough
2 cups shredded Cheddar cheese

Steps:

  • Heat oven to 400 degrees F.
  • In large skillet over medium heat, cook bacon, bell pepper and onion 10 minutes or until crisp; drain.
  • In bowl, combine chili, bacon mixture and hot sauce.
  • Roll out each package of crescent roll dough into rectangle; press perforations to seal. Cut each rectangle into 8 squares. Top 16 squares with chili mixture and cheese. Cover with remaining crescent dough squares. Pinch seams together. Tuck two sides of the square under and pinch the ends to form the shape of a football. Place on baking sheets.
  • Bake 8 to 10 minutes or until golden brown.

These little mini pizza calzones were always my fast food alternative for the grand kids and they always went like hot cakes! Stuff them with anything your kids like, I guarantee you they won't last long! Sausage, pepperoni, mozzarella cheese and pizza sauce, what could be better?

8 oz thin sliced pepperoni
8 oz bulk italian sausage
1/2 small onion
1 tsp minced garlic
4 tsp canola oil
1 tube refrigerated pizza dough
3/4 c mozzarella cheese, shredded
1 c pizza sauce
1 c marinara sauce
1/4 c butter, melted
1/4 c italian salad dressing
1 Tbsp yellow mustard

Steps:

  • 1. In large non stick skillet, brown Italian sausage over medium heat until sausage crumbles; drain and set aside. In separate skillet, saute' onion and garlic in canola oil over medium heat, 3 minutes or until tender. Add to the sausage and set aside.
  • 2. Preheat oven to 450 degrees.
  • 3. Divide dough into eight pieces. Roll each dough piece into a 3 inch circle. Spread a thin layer of pizza sauce over the dough. Spoon sausage mixture equally over half of each circle leaving a 1/2 inch border. Top equally with pepperoni and cheese, or whatever other ingredients you desire.
  • 4. Fold dough over filling until edges almost meet. Bring bottom edges over top edges and crimp dough with fingers to for rim. Prick tops of calzones with fork to allow steam to escape. Place on large baking sheet covered with foil and sprayed with non stick spray.
  • 5. Whisk melted butter, Italian dressing and mustard together until incorporated. Using a pastry brush, brush the tops of the calzones with butter mixture until calzone is well coated.
  • 6. Bake in preheated oven for 10 to 12 minutes or until lightly browned. Serve with warm marinara sauce.

1 ranch packet
1 red onion, thinly sliced
½ cup bacon, cooked and chopped
4 slices mozzarella cheese, cut in half
cheddar cheese, for topping
1 egg
1 tablespoon water

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Cut pizza dough into 8 sections on a floured surface.
  • With one section, roll out dough until flat and circular.
  • In a medium bowl, mix together the chicken, ranch packet, red onion, and bacon.
  • Place a slice of mozzarella on the rolled out dough. Top with 2-3 tablespoons of the chicken mixture.
  • Fold one side of dough up and over ingredients, and seal calzone by crimping the edges together.
  • Place on a parchment-lined baking sheet. Apply egg wash to outside of calzone and sprinkle with cheddar cheese.
  • Bake calzones at 400°F (200°C) for 15-20 minutes or until golden brown.

1 ½ cups white whole wheat flour
1 ½ cups whole wheat pastry flour
2 teaspoons baking powder
1 teaspoon salt
1 ¼ cups warm water
¼ cup extra-virgin olive oil
2 tablespoons honey
4 teaspoons active dry yeast
cooking spray
1 cup chopped broccoli
1 cup shredded cooked chicken breast
1 cup light cream cheese, softened

Steps:

  • Combine white whole wheat flour, whole wheat pastry flour, baking powder, and salt together in the bowl of a stand mixer; make a well in the center of flour mixture.
  • Mix water, olive oil, and honey together in a separate bowl; sprinkle yeast over water mixture. Let stand without stirring until yeast softens and begins to form a creamy foam, about 10 minutes.
  • Pour yeast mixture into well of the flour mixture; mix on low setting using paddle beater until combined, 2 to 3 minutes. Replace paddle beater with dough hook and beat dough on low setting for 10 minutes.
  • Spray the inside of a large bowl with cooking spray.
  • Transfer dough to the prepared bowl; cover bowl with a towel and let rise in a warm area at least 30 minutes (1 hour for better texture).
  • Divide dough into two balls; knead each by hand for about 1 minute.
  • Spray 2 baking sheets with cooking spray.
  • Roll each dough ball out with a rolling pin onto the prepared baking sheets about 1/4 inch thick. Cut dough into an even number of hearts using heart-shaped cookie cutters.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Place broccoli in a microwave-safe bowl; cook on high in microwave until slightly tender, 1 to 2 minutes.
  • Mix cooked broccoli, chicken, and cream cheese together in a bowl. Spoon 1 to 2 tablespoons filling into the center of a heart; top with another heart. Seal edges together by pressing around the heart with a fork. Repeat with remaining filling and hearts.
  • Bake in the preheated oven until hearts are golden brown, about 20 minutes.
