One of my neighbors years ago had gotten a couple of turkeys from work. He roasted one and made this wonderfully different soup with the other. He told me it was turkey fricassee.

1 - whole turkey, cut up
1 large onion diced
2 large green bell peppers chopped
1 - handful cilantro chopped
8 clove(s) garlic minced
2 can(s) diced tomatoes
32 ounce(s) welches grape juice
1 bottle(s) beer
32 ounce(s) chicken broth
2 can(s) tomato sauce
4 - potatoes diced
3 - carrots, chopped
4 - celery ribs chopped
1 can(s) garbanzo beans
1 can(s) gandules
2 tablespoon(s) chili powder
2 tablespoon(s) cumin
2 tablespoon(s) oregano
1 teaspoon(s) each salt and pepper
6 - bay leaves dried
- water to cover

Steps:

  • put all ingredients in a large pot and simmer 2 to 3 hours stirring often. (we made this in a large roasting pan set over 2 burners on the stove top). Eat as is or serve over rice.

I adapted my chicken fricassee recipe to use up post-Thanksgiving leftovers. If you want to make the chicken version, simply exchange cooked chicken for the cooked turkey.

Number Of Ingredients 10

1 1/2-2 lbs cooked turkey, chopped
1 medium onion, chopped
8 ounces mushrooms, sliced
2 -3 carrots, chopped
2 -3 stalks celery, chopped
16 ounces frozen chopped broccoli (or fresh if you've got it)
1/2 cup flour
4 tablespoons butter
4 cups stock (chicken or turkey)
salt and pepper

Steps:

  • Before anything, prep the broccoli. Thaw in a covered, microwave-safe bowl with 2 tablespoons of water in the bottom. Cook broccoli for 3-4 minutes, long enough to defrost it, but not cook it completely. If using fresh broccoli, skip this step.
  • Melt the butter in a pot or dutch oven.
  • Add onion and cook until translucent.
  • Add flour to the onion and butter in the pan and stir until combined.
  • Cook flour mixture for about a minute.
  • Add stock.
  • Stirring constantly, heat until mixture comes to a boil and thickens.
  • Add the rest of the ingredients.
  • Once the fricasse reaches a simmer turn the heat down to medium, cover and cook for ~30 minutes, stirring occasionally. It's done when the vegetables are tender.

This beef fricassee is delicious and creamy with just a little kick. Don't forget to use the sour cream which gives it a smooth and cool finish!

2 lbs ground beef
3 potatoes (medium size, diced)
1 onion (diced)
2 celery ribs (diced)
1 green pepper (diced)
3 cups cabbage (diced)
2 garlic cloves (minced)
1 cup salsa (medium heat)
2 tablespoons olive oil
3/4 cup water
3/4 cup sour cream
1/2 teaspoon salt
1/2 teaspoon onion salt
1/2 teaspoon garlic salt
1/2 teaspoon celery salt
1 tablespoon chives

Steps:

  • In large skillet, heat olive oil over high heat, add diced potatoes and fry until golden.
  • Add onions fry for two more minutes, add ground beef fry until golden brown and cooked through.
  • Add celery, green pepper and cabbage, cook for a few minutes.
  • Add seasoning, salsa, water, cover and simmer for 15 minutes.
  • Incorporate sour cream.
  • Serve with a dollop of sour cream and chopped chives.

This chicken fricassee dish is one of our all-time favorites. When you have guests over, just double the recipe.

4-1/2 teaspoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon dried thyme
2 bone-in chicken thighs, skin removed (about 3/4 pound)
2 tablespoons butter
3/4 cup sliced fresh mushrooms
1/2 cup diced onion
1/4 cup diced celery
3/4 cup water
1 small bay leaf
1/4 cup milk
2 teaspoons minced fresh parsley

Steps:

  • In a resealable plastic bag, combine 2-1/4 teaspoons flour, salt, pepper and thyme. Add chicken and shake to coat. In a small skillet, brown chicken in butter. Remove chicken and set aside. In same skillet, saute the mushrooms, onion and celery until crisp-tender. Return chicken to the pan. Add water and bay leaf. Bring to a boil. Reduce heat; cover and simmer for 30-35 minutes or until chicken juices run clear, turning occasionally., Place remaining flour mixture in a bowl; stir in milk until smooth. Stir into pan juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Discard bay leaf. Sprinkle with parsley.

Turkey breast rolled with fresh herbs, orange zest, and spices is covered with pancetta and then roasted. It's sliced and offered atop a dressing made with farro (a whole grain), oranges, black grapes, and pine nuts. White-wine sauce accompanies the ensemble.

1/4 cup extra-virgin olive oil
1/4 cup fresh flat-leaf parsley, coarsely chopped
3 tablespoons coarsely chopped fresh rosemary, plus 1 teaspoon finely chopped, plus 5 sprigs for roasting
2 tablespoons coarsely chopped fresh sage, plus 5 sprigs for roasting
2 tablespoons finely grated orange zest
1 tablespoon fennel seeds, coarsely chopped
1 dried chile, crumbled
1 garlic clove, minced
1 turkey breast (about 7 pounds), deboned, trimmed, and butterflied
Coarse salt and freshly ground pepper
8 ounces pancetta or bacon, thinly sliced
1 cup black seedless grapes (optional)
1/2 cup dry white wine
2 cups homemade or low-sodium store-bought turkey or chicken stock
Farro, Orange, and Pine-Nut Dressing , for serving

Steps:

  • Stir 3 tablespoons oil, parsley, coarsely chopped rosemary, chopped sage, zest, fennel seeds, chile, and garlic in a bowl. Rub all over turkey, and season with salt and pepper. Place in a shallow, nonreactive baking pan; cover. Refrigerate at least 4 hours (or overnight).
  • Preheat oven to 375. Let turkey stand at room temperature 30 minutes. Put herb sprigs into pan. Roll up turkey. Cover evenly with pancetta, and tie with kitchen twine; return to pan. Drizzle with remaining tablespoon oil; season with pepper. Roast until an instant-read thermometer inserted into the thickest park of the turkey registers 160 degree, about 1 1/2 hours. Add grapes to pan if desired during last 20 minutes. Transfer turkey to a cutting board; let rest 20 minutes.
  • Transfer pan juices to a bowl, and reserve for Rich Roasted Potatoes. Heat pan on top of stove over medium heat. Add wine, and cook, stirring, until reduced by half. Stir in stock, and bring to a boil. Reduce heat, and simmer until slightly thickened. Stir in finely chopped rosemary, and season with salt and pepper.
  • Slice turkey; transfer to a platter. Serve with herbed pan sauce and dressing.

LEFTOVER TURKEY FRICASSEE

Make the most of leftover roast turkey with this creamy fricassee. It's delicious served with potatoes or pasta, and ideal for using up turkey from Christmas dinner

50g butter
100g chestnut or button mushrooms, quartered
1 tbsp plain flour
100ml white wine or dry sherry
200ml chicken or turkey stock
150ml double cream or crème fraîche
800g leftover boneless cooked turkey, chopped into chunks or shredded
small bunch of parsley, chopped (optional)

Steps:

  • Heat the butter in a deep frying or sauté pan until sizzling, then add the mushrooms and fry for 4-5 mins until softened. Sprinkle over the flour and stir until a paste forms. Cook for a few more minutes.
  • Splash in the wine or sherry and let it bubble for a minute, then stir in the stock and bring to the boil. Reduce the heat to a simmer and stir in the cream. Season, then stir in the turkey. Simmer until the turkey is heated through, then remove from the heat and stir in the parsley, if using. Serve with pasta, mash or rice.
