4 firm bananas, peeled and halved lengthwise
¼ cup maple syrup
1 tablespoon ground cinnamon
1 (1 inch) piece fresh ginger, grated
1 ½ teaspoons ground nutmeg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with cooking spray.
  • Arrange banana halves in the prepared baking dish. Drizzle maple syrup over bananas and top with cinnamon, ginger, and nutmeg. Cover dish with aluminum foil.
  • Bake in the preheated oven until heated through, 10 to 15 minutes.

1 pound lean ground beef
2 cups salsa
1 (16 ounce) can chili beans, drained
3 cups tortilla chips, crushed
2 cups sour cream
1 (2 ounce) can sliced black olives, drained
½ cup chopped green onion
½ cup chopped fresh tomato
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans, and heat through.
  • Spray a 9x13 baking dish with cooking spray. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips. Spread sour cream over beef, and sprinkle olives, green onion, and tomato over the sour cream. Top with Cheddar cheese.
  • Bake in preheated oven for 30 minutes, or until hot and bubbly.

2 Tbs. butter
4 Tbs. brown sugar
4 medium bananas, sliced in half lengthwise
1 cup all-purpose flour
1/3 -cup cocoa powder
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/3 -cup chocolate chips
1/2 -cup egg whites
1 cup brown sugar
1 cup nonfat plain yogurt
2 tsp. pure vanilla extract

Steps:

  • Preheat oven to 350 degrees F. Heat a 12-inch oven proof skillet over medium and melt butter with brown sugar. Add bananas and saute until sugar becomes a syrup and remove from heat. Arrange bananas neatly in pan and set aside.
  • In a large bowl, mix flour, cocoa powder, baking powder, baking soda, cinnamon and chocolate chips. In another bowl, combine egg whites, brown sugar, yogurt and vanilla. Add dry ingredients to wet ingredients and mix until just combined. Pour into skillet over sauteed bananas. Bake for 20-25 minutes, or until middle of cake springs back when touched.
  • Remove from oven and cool slightly. Invert onto a large plate and cut into 16 slices.

I don't eat bananas often, even though I love them. When I do have bananas, they have to be very special, and I promise you, these babies are very very special! Try serving them over vanilla frozen yogurt, or with an intensely chocolate ice cream.

3 bananas, quartered horizontally
1/2 teaspoon grated orange zest
1/4 teaspoon grated lime zest
1/2 cup fresh orange juice
1 teaspoon fresh lime juice
1/4 cup raisins or 1/4 cup currants
1/4 teaspoon vanilla extract
1/4 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 375°F.
  • In a shallow baking dish just large enough to hold them, arrange the bananas in a single layer.
  • In a small bowl, combine the zests, juices, raisins, vanilla, and cinnamon and whisk to blend.
  • Pour over the bananas and bake, uncovered, for about 20 minutes or until the bananas are lightly browned and bubbling.
  • Use a spatula to put 3 banana pieces in the center of each plate and spoon the sauce from the dish over them.

1 pound frozen banana leaves* (See Cook's Note)
2 (4-ounce) packages achiote paste* (recommended: Recado Rojo)
6 cloves garlic
1/4 cup white vinegar
1/4 cup orange juice
1 tablespoon kosher salt
5 pounds trimmed, boneless pork butt, halved
1 cup water
Marinated Red Onions, recipe follows
Habanero Salsa, recipe follows
Serving Suggestion: steamed white rice or fresh, warm tortillas
2 medium red onions, thinly sliced
3 cups water
1 cup cider vinegar
1 tablespoon kosher salt
Combine all ingredients in a large bowl. Cover and refrigerate for 2 hours before serving.
8 habanero chiles
1/2 cup orange juice
1/4 cup lime juice
1/4 cup lemon juice
2 teaspoons salt

Steps:

  • Run the banana leaves under warm water for about 5 minutes to defrost. Line a medium baking dish with the banana leaves.
  • Combine the achiote paste, garlic, vinegar, orange juice, and salt in a blender until smooth. In a large bowl, rub the achiote mixture into the meat. Place the meat in the prepared baking dish. Wrap the meat with banana leaves. Cover container and refrigerate for 24 hours.
  • After meat has marinated, preheat oven to 375 degrees F.
  • Add 1 cup water to the baking dish. Bake the meat until fork tender, about 2 hours.
  • Serve wrapped meat on a bed of steamed white rice with Marinated Red Onions and Habanero Salsa on the side. Alternatively, remove meat from banana leaves and wrap in fresh, warm tortillas with Marinated Red Onions and Habanero Salsa on top.
  • In a dry skillet, lightly toast the habanero chiles. Stem, seed, and roughly chop the peppers. Combine all ingredients in a blender until smooth. Pour into a small serving bowl. Cover and refrigerate until ready to serve.

1/4 cup rum
3 teaspoons half-and-half

2 x 400g cans black beans , drained and rinsed
35g sachet fajita seasoning of your choice
2 x 400g cans chopped tomatoes with chilli
6 tortillas
140g Monterey Jack cheese or cheddar, grated

Steps:

  • Heat oven to 180C/160C fan/gas 4. Heat a non-stick frying pan, add the black beans and fajita spice mix, stir together and cook for 1-2 mins. Add the tomatoes and simmer over a low heat for 10 mins.
  • Cut the tortillas in half. Lightly grease a 2-litre baking dish. Spread a third of the bean mixture over the base of the dish, followed by 3 tbsp of the cheese and a layer of tortillas. Repeat the process, finishing with a tortilla layer on top. Sprinkle over the remaining cheese. Bake for 15 mins until golden.

1/2 teaspoon pepper
1 can (10 3/4 oz) condensed cream of celery soup
1 can (10 3/4 oz) condensed cream of mushroom soup
1 can (10 oz) Old El Paso™ enchilada sauce
9 soft corn tortillas (6 inch)
2 cups shredded sharp Cheddar cheese (8 oz)
2 cups shredded Monterey Jack or pepper Jack cheese (8 oz)
1 medium tomato, chopped (3/4 cup)
4 medium green onions, chopped (1/4 cup)
1 medium avocado, chopped
Sour cream, if desired
Fresh cilantro leaves, if desired

Steps:

  • Heat oven to 350°F. Lightly spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 12-inch nonstick skillet, cook sausage and beef over medium-high heat 5 to 7 minutes, stirring often, until thoroughly cooked; drain. Stir in beans, diced tomatoes, garlic powder, cumin, salt and pepper. Cook 2 minutes or until thoroughly heated.
  • In 2-quart saucepan, stir together soups and enchilada sauce. Cook over medium heat 3 minutes, stirring constantly, until thoroughly heated.
