2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 cup butter
¼ cup white sugar
¾ cup brown sugar
1 (3.5 ounce) package instant vanilla pudding mix
1 teaspoon vanilla extract
2 eggs
1 (6 ounce) package white chocolate chips
½ (6 ounce) package dried cranberries

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly grease two baking sheets. Combine flour and baking soda in a bowl.
  • Beat the butter, white sugar, brown sugar, and instant pudding with an electric mixer in a large bowl until smooth. Beat the first egg into the butter until completely blended, then beat in the vanilla with the last egg. Mix in the flour mixture until just incorporated. Fold in the white chocolate chips and cranberries; mixing just enough to evenly combine. Drop spoonfuls of the dough 2 inches apart onto prepared baking sheets.
  • Bake in the preheated oven until edges of the cookies become golden brown, 9 to 12 minutes. Cool in the baking sheet for 10 minutes before removing to cool completely on a wire rack.

1/2 cup unsalted butter, softened
1/2 cup packed light brown sugar
1/2 cup granulated sugar
1 tablespoon vanilla extract
1 large egg
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 cup dried cranberries, chopped
3/4 cup white chocolate chips
3/4 cup macadamia nuts, chopped

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheet with parchment paper.
  • With an electric mixer, cream the butter and both sugars together until smooth. Add the vanilla and egg, mixing well. Sift together the flour and baking soda. Spoon the flour mixture gradually into the creamed sugar mixture. Stir in the cranberries, white chocolate chips and macadamia nuts. Drop by heaping spoonfuls, about 2 tablespoons, onto the prepared baking sheets, 2 inches apart. Bake one sheet at a time until lightly golden on top and the edges are set, 12 to 15 minutes. Cool on the sheet about 5 minutes, and then transfer to a wire rack to cool completely. Store in an airtight container for up to 2 weeks.

1/3-1/2 cup dried sweetened cranberries, coarsely chopped

Steps:

  • PREHEAT oven to 325º F.
  • STIR morsels and cranberries into cookie dough. Refrigerate for 15 minutes for easier handling. Roll dough into 18, 1 1/4-inch balls. Place 2 inches apart on ungreased baking sheets.
  • BAKE for 14 to 16 minutes or until edges are set but centers are still soft. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

2 cups unsifted flour
1 1/2 cups oats
3/4 cup firmly packed brown sugar, plus
1 tablespoon firmly packed brown sugar
1 cup butter or 1 cup margarine, softened
1 (8 ounce) package cream cheese
1 (14 ounce) can sweetened condensed milk
1/4 cup lemon juice
2 tablespoons cornstarch
1 (16 ounce) can whole berry cranberry sauce

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, combine flour, oats, 3/4 cup sugar and butter; mix until crumbly.
  • Reserve 1 1/2 cups crumb mixture.
  • Press remaining crumbs firmly into the bottom of a greased 13 x 9 pan.
  • Bake for 15 minutes.
  • Meanwhile, in a small mixing bowl, beat cheese until fluffy.
  • Gradually beat in condensed milk until smooth.
  • Stir in lemon juice.
  • Spread evenly over prepared crust.
