Number Of Ingredients 23

1-1.5 lb beef stew meat (bite size)
4 Tbsp seasoned flour*
3 large white potatoes cubed
1 large sweet potato cubed
4 large carrots sliced
1-2 medium (to your taste) onions chopped
2 stalk(s) celery include leaves sliced or chopped
1 clove garlic sliced or minced
1 1/2 c beef broth
1 tsp worcestershire sauce
1/2 tsp thyme dried or 1 teaspoon fresh
1/2rounded tsp parsley dried or 1 tablespoon fresh
1/2-3/4 tsp dried marjoram or 1 teaspoon fresh
1 bay leaf
8-12 oz beer (optional) can use ginger ale or cola
1/2 tsp hoisin sauce (if not on hand can omit)
1 c veggie broth (optional)
2 Tbsp corn starch (optional
seasoned flour*
1 c flour*
1 tsp paprika*
1 tsp salt*
1/4 tsp pepper*

Steps:

  • 1. Prepare seasoned flour*, last four ingredients. Blend together well. Store left over for future use.
  • 2. Place bite size beef in slow cooker. Sprinkle the seasoned flour over meat. Stir to coat meat.
  • 3. Place potatoes, carrots, onions, celery, garlic, and all herbs, in slow cooker. Add beef broth, Worcestershire sauce, beer, hoisin sauce and stir.
  • 4. Start slow cooker Low for 8-10 hours. High for 4-5 hours.
  • 5. Optional - When there is about 1 hour left of cook time, blend veggie broth and corn starch till smooth, stir into slow cooker to thicken broth. Can be omitted.

olive oil
2 red onions, peeled and roughly chopped
3 carrots, peeled and roughly chopped
3 sticks celery, trimmed and roughly chopped
4 cloves garlic, unpeeled
a few sprigs fresh rosemary
2 bay leaves
1 small handful dried porcini
1 stick cinnamon
1 kg quality shin of beef, bone removed, trimmed and cut into 5cm pieces
sea salt
freshly ground black pepper
1 tablespoon flour
2 x 400 g good-quality tinned plum tomatoes
⅔ bottle Chianti

Steps:

  • Preheat your oven to 180ºC/350ºF/gas 4. In a heavy-bottomed ovenproof saucepan, heat a splash of olive oil and gently fry the onions, carrots, celery, garlic, herbs, porcini and cinnamon for 5 minutes until softened slightly. Meanwhile, toss the pieces of beef in a little seasoned flour, shaking off any excess. Add the meat to the pan and stir everything together, then add the tomatoes, wine and a pinch of salt and pepper. Gently bring to the boil, cover with a double-thickness piece of tinfoil and a lid and place in your preheated oven for 3 hours or until the beef is meltingly tender and can be broken up with a spoon. Taste and check the seasoning, remove the cinnamon stick and rosemary sprigs and serve.

2 tablespoons olive oil
1 (2 1/2 pound) boneless beef chuck roast
3 tablespoons chopped garlic
salt and ground black pepper to taste
2 onions, cut into wedges and sliced
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can diced tomatoes
1 ½ cups water
1 green bell pepper, coarsely chopped
1 cup quartered fresh mushrooms
1 cup dry red wine (such as Cabernet or Merlot)
1 tablespoon white sugar
1 teaspoon fennel seed
1 teaspoon Italian seasoning
1 teaspoon dried thyme

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add roast and garlic; season roast with salt and pepper. Cook roast until browned on all sides, about 5 minutes.
  • Transfer roast and garlic to a slow cooker; add onions, crushed tomatoes, diced tomatoes, water, green bell pepper, mushrooms, red wine, sugar, fennel seed, Italian seasoning, and thyme.
  • Cook on Low for 6 hours.
