This is a tasty and filling dish that can be nicely paired with a green salad if desired.

1 (8 ounce) package manicotti pasta
1 pound lean ground beef
1 ½ cups cottage cheese
2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
2 egg whites
½ teaspoon dried oregano
1 (32 ounce) jar spaghetti sauce

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain and cool. Reserve.
  • Meanwhile, in a large skillet brown beef on medium heat. Drain and cool.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine beef, cottage cheese, 1 cup mozzarella cheese, Parmesan cheese, egg whites and oregano. Mix well. Stuff shells with mixture.
  • Lightly grease a 9x13 inch baking dish. Pour enough spaghetti sauce in dish to cover the bottom. Place stuffed noodles in the dish. Cover with spaghetti sauce and top with the remaining 1 cup mozzarella cheese. Bake in preheated oven for 50 minutes.

I think this originally came in Women's Day magazine, back when they had a skinny 6 or 8 page cookbook, in a strip, in the center of the magazine. I started making this as a newly wed, and it is still a family favorite. I usually double the recipe and freeze at least 1/2 of the stuffed noodles, since that is the most time consuming part. Serve with a sald and garlic bread, and a good bottle of red wine !

2 lbs ricotta cheese
1/2 lb mozzarella cheese, shredded
2 eggs, well beaten
2 tablespoons parsley, chopped
1/2 teaspoon pepper
1/4 teaspoon nutmeg
1/2 cup almonds, slivered
1 teaspoon salt
1 1/2 cups parmesan cheese, grated
1 lb mild Italian sausage
16 manicotti, cooked
1 garlic clove, minced
1 onion, finely chopped
32 ounces spaghetti sauce

Steps:

  • Make filling by mixing first 8ingredients and 1 cup parmesan cheese.
  • Blend thoroughly.
  • Cook meat with garlic and onions
  • Sprinkle with salt and drain grease.
  • Stuff cooked noodles (gently) with filling.
  • Butter 12x15 baking dish.
  • Spoon tomato sauce in bottom of dish to cover.
  • Place stuffed shells in dish to completely fill.
  • Sprinkle meat over and around shells.
  • Spoon tomato sauce over shells generously.
  • Sprinke with 1/2 cup parmesan.
  • Cover with foil.
  • Bake at 350°F for 45 minutes.

1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 (15 ounce) container ricotta cheese
1 lb ground meat
1 egg
1/2 cup parmesan cheese, grated
1 teaspoon garlic powder
10 manicotti, cooked and drained
1 (25 ounce) jar emeril's kicked up pasta sauce (you can use any brand of sauce)
1 -1 1/2 cup mozzarella cheese, shredded

Steps:

  • Brown ground meat in skillet and drain.
  • Combine spinach, ground meat, ricotta cheese, egg, parmesan cheese and garlic powder.
  • Spoon this mixture into manicotti shells and place in 13 x 9 inch dish (sprayed with Pam).
  • Pour Emeril's sauce over the stuffed manicotti shells and sprinkle with mozzarella cheese.

8 manicotti, uncooked
1 (30 ounce) jar spaghetti sauce
1 lb ground beef
2 eggs
1 cup mozzarella cheese
1 (15 ounce) container ricotta cheese
1/4 cup parmesan cheese
1 teaspoon italian seasoning
1/2 teaspoon garlic powder
1/8 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preaheat oven to 350 degrees.
  • Bring 4 quarts of water to a boil; add salt if desired. Place noodles in water and boil for 9 minutes. Drain and rinse in cold water to prevent sticking.
  • While noodles are boiling, brown meat in a large skillet. Drain and add spaghetti sauce; set simmer for 5 minutes, then turn off heat.
  • In a bowl, combine eggs, 1 cup mozzarella, half of the ricotta, parmesan and seasonings.
  • Pour a layer of meat sauce in the bottom of a baking dish, using half of what you have.

This is a GREAT dish. My family loves it and its a little bit of a twist on your traditional manicotti!

1 lb ground beef
15 maple sausage
2 eggs
2 lbs ricotta cheese
2 (24 ounce) jars spaghetti sauce, we like to use both three cheese flavor and tomato and basil flavored mixed
1 (8 ounce) box manicotti
1 tablespoon sugar
2 1/2 cups mozzarella cheese
1/4 cup KRAFT Shredded Parmesan Cheese
5 fresh Italian parsley (strands)

Steps:

  • Sauce: Brown the meat in a skillet with your italian seasonings and garlic salt, drain when done to get fat off.
  • Heat sausage up so that you can cut it into little peices, it will cook the rest of the way when in the oven.
  • Combine your pasta sauce, meat, and sausage and mix together over low heat.
  • While making your filling start boiling your manicotti noodles. Follow directions on box to go about boiling the noodles.
  • Filling: Mix ricotta, 1 and 1/2 cups mozarella (the rest will go on top), some of the parmesean (save enough to sprnkle on top), sugar, and chopped parsley in a large mixing bowl. Add in some dried basil. (about 3 shakes).
  • Take a gallon size ziplock baggy and put the filling inside. Cut a hole in bottom corner so you can squeeze filling out.
  • Layer some of your pasta sauce across the bottom of the pan so the noodles do not stick to pan and because theres no such thing as too much sauce!
  • Take your noodles and your ziplock and fill noodles full of filling. When all noodles are filled and aligned in your casserole pan pour remaining sauce on top of manicotti.
  • Sprinkle with your leftover mozzarella and parmesean.
  • Cover with foil and bake in oven at 350 for 30 minutes, then take foil off and bake an addition 10 minutes.
  • Take your manicotti noodles and fill the.

Seems kinda pointless to me, to go to all the trouble of making & stuffing the 'cotti's and then NOT have meat in the sauce. So I adjusted this found recipe from *Grandma's Kitchen* recipe cards, to include ground beef in the sauce. No complaints from the Peanut Gallery--and they're SO discerning an audience!

12 large manicotti, cooked, rinsed, drained
1 lb ground beef (or venison combination)
1 quart spaghetti sauce, divided
4 cups shredded mozzarella cheese, divided
2 cups ricotta cheese (see note below)
2 tablespoons dried basil (see other note below)
1/2 cup grated parmesan cheese

Steps:

  • Cook, rinse & drain manicotti as per package directions.
  • While that is cooking, brown the meat in a medium frying pan; rinse & drain for low-fat applications!
  • Preheat oven to 350; grease 13x9 pan; set aside.
  • Mix meat and spaghetti sauce; spoon 3 cups of sauce into bottom of greased pan; set aside.
  • In a medium bowl, combine THREE cups mozzarella with ricotta and basil.
  • Spoon mixture into a ziplock bag, cut off one corner, squeeze into pasta shells; lay finished shells into sauce in pan.
  • After all shells have been filled and nestled cutely together, pour remaining sauce over shells.
  • Sprinkle with remaining mozzarella.
  • Bake for 15 minutes; sprinkle with parmesan; bake for 10 more minutes.

12 oz tomato sauce
8 oz shredded mozzarella
1 lb ground beef
1 lb ground Italian sausage (preferably ground)
Salt
Pepper
1/4 cup parmesan cheese
OPTIONAL
1/8-1/4 tsp oregano
1/8- 1/4 tsp garlic powder
1/8-1/4 Italian seasoning

Steps:

  • Preheat oven to 350°F. Cook and drain the shells, being careful not to overcook. Spread half of the tomato sauce and the mozzarella in a baking dish (I usually have to use 2!) Mix the beef and the sausage in a large mixing bowl. Add a dash of salt and pepper, the parmesan cheese, and any seasonings desired.
  • Stuff the manicotti shells with the mixture and place in the dish. Cover with the remaining sauce and mozzarella cheese.
  • Cover with foil and bake for 30 minutes. After 30 minutes, remove the foil and bake for another 10-20.

This dish is delectably different from your everyday pasta dish. In this video, I'll show you my trick to make stuffing pasta easier.

3-4 c pasta sauce, or as needed
1 1/2 lb lean ground beef
freshly ground black pepper, to taste (i always use mixed peppercorns)
2 large cloves garlic, pressed
3 slice bread, torn in small pieces
2/3 c milk
1 large free-run egg, beaten
1 1/4 c mozzarella cheese, grated
1 1/4 c (300 g) ricotta cheese
14-16 manicotti pasta, uncooked
3/4 c grana padano cheese, grated
1 Tbsp fresh parsley, chopped

Steps:

  • 1. Preheat oven to 350ºF. Grease baking dish with cooking spray and ladle a thin layer of spaghetti sauce on the bottom; set aside. In a large bowl filled with hot water from the tap, drop manicotti in and let it sit for 15 to 20 minutes.
  • 2. In a large skillet over medium heat, cook beef until no longer pink. Half way thru cooking, season with black pepper and add pressed garlic. Remove from heat and drain meat. In a medium bowl, combine bread and milk; let it sit for 2 minutes. Add egg and beef; stir to combine. Add mozzarella and ricotta cheese; stir until well blended.
  • 3. In a small bowl combine parmesan and parsley; set aside. Working on one manicotti at a time, remove excess water and stuff tightly. Place stuffed pasta over the sauce in the prepared baking dish. When all done, ladle more sauce over the manicotti and sprinkle parmesan mixture over. Transfer in the preheat oven and bake for 35 minutes.
