12 whole wheat lasagna noodles
1 pound lean ground beef
2 cloves garlic, chopped
½ teaspoon garlic powder
1 teaspoon dried oregano, or to taste
salt and ground black pepper to taste
1 (16 ounce) package cottage cheese
2 eggs
½ cup shredded Parmesan cheese
1 ½ (25 ounce) jars tomato-basil pasta sauce
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, add the lasagna noodles a few at a time, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 10 minutes. Remove the noodles to a plate.
  • Place the ground beef into a skillet over medium heat, add the garlic, garlic powder, oregano, salt, and black pepper to the skillet. Cook the meat, chopping it into small chunks as it cooks, until no longer pink, about 10 minutes. Drain excess grease.
  • In a bowl, mix the cottage cheese, eggs, and Parmesan cheese until thoroughly combined.
  • Place 4 noodles side by side into the bottom of a 9x13-inch baking pan; top with a layer of the tomato-basil sauce, a layer of ground beef mixture, and a layer of the cottage cheese mixture. Repeat layers twice more, ending with a layer of sauce; sprinkle top with the mozzarella cheese. Cover the dish with aluminum foil.
  • Bake in the preheated oven until the casserole is bubbling and the cheese has melted, about 30 minutes. Remove foil and bake until cheese has begun to brown, about 10 more minutes. Allow to stand at least 10 minutes before serving.

3/4 pound sweet Italian sausage, removed from casing

6 garlic cloves, minced (2 tablespoons)
2 teaspoons dried oregano
1/2 teaspoon red-pepper flakes
3 tablespoons tomato paste
2 cans (28 ounces each) whole peeled tomatoes in juice
24 ounces whole-milk ricotta (3 cups)
1 cup whole milk
3 large eggs
4 ounces Parmigiano-Reggiano, finely grated (1 1/4 cups)
1 pound low-moisture mozzarella, shredded (4 cups)
3/4 cup chopped flat-leaf parsley

Steps:

  • Preheat oven to 375 degrees.
  • Meat Sauce: Heat oil in a large saucepan over medium-high. Add beef, sausage, onion, carrots, celery, and 1 teaspoon salt. Cook, stirring occasionally and breaking up meat into bite-size pieces, until vegetables soften and meat has browned, about 10 minutes. Add garlic, oregano, and red-pepper flakes; cook until fragrant, 1 minute. Add tomato paste; cook 2 minutes more. Puree tomatoes in a blender or food processor; add to pan. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, until reduced and thickened slightly but still very loose, about 15 minutes. Remove from heat.
  • Cheese Mixture: In a large bowl, whisk together ricotta, milk, eggs, 1 cup Parmigiano-Reggiano, 2 1/2 cups mozzarella, parsley, 1 teaspoon salt, and 1/4 teaspoon pepper.
  • Assembly: Spread 2 cups meat sauce evenly in a 9-by-13-inch baking dish, preferably ceramic or enameled cast iron. Arrange 3 lasagna noodles over sauce (space noodles evenly; they will expand as the lasagna cooks). Spread 2 cups cheese mixture over noodles; top with 3 more noodles. Repeat layering of meat and cheese mixtures between noodles twice more. Spread 2 cups meat sauce evenly over top layer of noodles. Sprinkle evenly with remaining 1 1/2 cups mozzarella and 1/4 cup Parmigiano-Reggiano. Loosely cover with parchment-lined foil and transfer to a rimmed baking sheet.
  • Bake until noodles are tender but still al dente (easily pierced with the tip of a knife), 40 to 45 minutes. Uncover; continue baking until bubbly and puffed slightly along edges and golden brown in places on top, 20 to 25 minutes more. (There may appear to be a lot of liquid in the dish. It will be absorbed as the lasagna cools.) Transfer dish to a wire rack and let cool slightly and set, about 20 minutes; cut into squares to serve.

1 lb lean (at least 80%) ground beef
1/2 lb bulk pork sausage
1/2 cup chopped onion
1 1/2 cups tomato pasta sauce
2 containers (15 oz each) ricotta cheese
1 box (9 oz) frozen spinach, thawed, drained and squeezed dry
2 teaspoons dried basil leaves or Italian seasoning
1 egg
3 cups tomato pasta sauce
2 cups shredded mozzarella cheese (8 oz)

Steps:

  • In 5-quart Dutch oven, cook lasagna noodles as directed on package. Drain; rinse with hot water. Drain well.
  • Meanwhile, in 12-inch skillet, cook beef, sausage and onion over medium-high heat, stirring frequently, until meat is no longer pink; drain. Stir in 1 1/2 cups pasta sauce. Reduce heat to low; simmer uncovered 10 minutes, stirring occasionally. Remove from heat.
  • In small bowl, mix ricotta cheese, spinach, basil and egg. Spread about 3 tablespoons ricotta mixture over each cooked lasagna noodle to within 1 inch of one short end.   • To bake 16 lasagna roll-ups, spray two 13x9-inch (3-quart) glass baking dishes with cooking spray. Remove roll-ups from freezer bag; place 8 in each baking dish. Cover with foil; thaw in refrigerator at least 8 hours but no longer than 24 hours.
  • Heat oven to 350°F. Pour 1 1/2 cups pasta sauce over and around roll-ups in each baking dish. Cover tightly with foil; bake 30 to 40 minutes or until hot and bubbly. MEAT AND EGGPLANT SAUCE LASAGNA

As lasagnas go, this takes just about as much time as any. It is a modified version of my grandmother's recipe, so that it includes more vegetables, including eggplant. You can add whatever vegetables you want to the meat sauce. I grabbed what was seasonal and on sale, but I imagine this would be good with some spinach, broccoli, or diced tomato. Also, consider some crushed red pepper if you like a spicy sauce. Not a fan of that myself, but it would add a nice heat if that is your thing. I don't like salty sauce, so you may find you want more salt if you do prefer it that way. My oven runs hot. If necessary, please adjust your baking time to make sure the lasagna is heated all the way through.

This is just a variation of my own lasagna recipe. I say variation because I make it differently every time depending on what I have on hand and my mood. This is the first time I've written my lasagna recipe down. Although I have made literally thousands of pans of lasagna throughout my years (I worked as a cook), I find this one perfectly acceptable (and I consider myself a lasagna snob). So you should certainly enjoy this, if not make it the only lasagna recipe you make from now on.

2 tablespoons olive oil
1 large sweet onion, chopped
1 lb ground beef
1/2 lb bulk Italian sausage
3 -4 cloves garlic, minced

Steps:

  • Cook onion in olive oil in a large skillet until tender, several minutes.

  • Drain fat.
  • Add tomato sauce, tomato paste, and brown sugar to pan, mixing well.
  • Reduce heat, cover, and simmer for 25-30 minutes.
  • Meanwhile, cook lasagna noodles in plenty of boiling salted water for ten minutes, then drain.
  • In a mixing bowl, stir together ricotta cheese, eggs, parmesan, salt, pepper, and parsley until smooth.
  • Preheat oven to 375°F.
  • In a large lasagna baking pan, place 1/3-1/2 of meat sauce in bottom of pan (just enough to cover).
  • On top of the meat sauce in pan, layer the lasagna as follows: 4 noodles (to cover pan), 8 ounces shredded mozzarella, 4 ounces sliced pepperoni, 4 more noodles, ricotta cheese mixture, 4 more noodles, remaining meat sauce mixture, 8 ounces mozzarella, 4 ounces of pepperoni, and 1/4 cup parmesan.
  • If any corners of noodles try to stick up past the sauce in the pan, tuck them under the sauce.
  • Bake at 375F for 30-40 minutes or until heated through and cheese is golden and bubbly.
  • Allow to rest for 10-15 minutes before slicing and serving.

MEAT SAUCE LASAGNA

I learned to make lasagna from my mother, and think this recipe is so much better than any other lasagna I've tried. Feel free to add green peppers to the meat sauce if that sounds good to you. The meat sauce gets more flavor as it cooks, so simmer it anywhere from 45 minutes to a couple of hours, but keep the temerature low so you don't reduce the amount by much. I also really recommend using the long rectangular slices of mozzarella cheese (approximately 3x6 inches) rather then shredded cheese, since it is so much easier to spread the meat sauce on the slices.

1 onion, chopped
8 ounces tomato sauce
6 ounces tomato paste

  • While noodles are cooking, mix eggs with cottage cheese in a medium bowl.
  • Spray 9 x 13 glass baking dish with cooking spray.
  • TO ASSEMBLE LASAGNA: Place layer of noodles on bottom of pan, cutting them to fit so they do not overlap.
  • Spread 1/2 of the cottage cheese over the noodles.
  • Place a layer of mozzarella cheese on the cottage cheese, cutting the cheese as needed to avoid overlapping.
  • Spread 1/2 of the meat sauce on top of the cheese.
  • Sprinkle with 2 oz Parmesan cheese.

  • Bake at 350 degrees for 45 minutes.

  • In a 5-quart Dutch oven or heavy pot, heat oil over medium-high. Add onion, eggplant, and garlic; season with salt and pepper. Cover and cook, stirring occasionally, until eggplant is very tender, 8 to 10 minutes. Add sirloin, and cook, breaking up meat with a spoon, until no longer pink, 3 to 5 minutes. Add tomato puree, and cook until thickened, 3 to 5 minutes. Season meat sauce with salt and pepper.
  • Meanwhile, in a medium bowl, combine cottage cheese and 1/4 cup Parmesan; season with salt and pepper. Remove noodles from baking dish, discarding water.
  • Spread about 1/4 cup meat sauce in bottom of dish, and top with 4 noodle halves. Layer with 1/3 cheese mixture, then 1/3 sauce. Repeat twice with remaining noodles, cheese mixture, and sauce. Sprinkle with mozzarella and remaining 2 tablespoons Parmesan. Bake until lasagna is bubbling and cheese topping is golden, 30 to 35 minutes. Let stand 10 minutes before cutting and serving.

18 lasagna noodles
1 1/2 lb italian pork sausage, sweet
1 1/2 lb ground beef
2 1/2 pkg 4oz sliced pepperoni or 1 pound sliced fresh from deli
1/2 c onions, chopped small
3 clove garlic, minced
6-8 oz tomatoe sauce
1 1/2 can(s) 28oz crushed tomatoes
2 1/2 can(s) 6oz tomato past
1 c water
1 Tbsp garlic salt
1 Tbsp garlic powder
4 Tbsp brown sugar
1/2 tsp fennel seed
1 tsp black pepper
1 1/2 tsp beef bouillon
4 Tbsp white sugar
1 1/2 tsp onion powder
1 1/2 tsp basil leaves, dried
4 tsp italian seasoning
4 Tbsp psrsley, fresh chopped
1/2 c sour cream
8 oz cream cheese, softened
2 large eggs, beaten
24 oz ricotta cheese
4 1/2 c mozzarella cheese
1 1/2 c parmesan cheese, shredded
2 c spinach, chopped (optional)
2 small cans of black olives, sliced (optional)

Steps:

  • 1. On medium heat, cook beef, sausage, garlic and onion in heavy skillet, until well browned.
  • 2. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugars, fennel seeds, Italian seasoning,garlic salt, garlic powder, beef boullion, black pepper, basil, and 2 tbsp parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally. Last 15 mins add olives. Last 5 mins add spinach.
  • 3. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water.
  • 4. In a mixing bowl, combine ricotta cheese, sour cream, cream cheese with eggs, and remaining parsley. mix well.
  • 5. Preheat oven to 375 degrees
  • 6. To assemble, spread 1 cup of meat sauce in the bottom of a greased (9X13) baking dish. Arrange 6 noodles lengthwise over meat sauce. Layer some ricotta cheese mixture, pepperoni, meat sauce, and mozzarella cheese (about 1 1/2 cup per layer). Repeat layers with all ingredients. Sprinkle top with Parmesan cheese and remaining Mozzarella cheese.
  • 7. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  • 8. Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

1 medium onion, minced
6 medium garlic cloves, minced (about 2 tbsps)
1 lb meatloaf mix (or half 85% ground beef and half ground pork or sweet italian sausage)

1/4 cup heavy cream
1 (28 ounce) can tomato puree
1 (28 ounce) can diced tomatoes, drained
24 ounces ricotta cheese, whole milk (about 3 cups)
2 ounces parmesan cheese, grated (about 1 cup)
1/2 cup basil leaves, fresh, chopped
1 large egg, lightly beaten
1/2 teaspoon salt
1/2 teaspoon ground black pepper
12 lasagna noodles, no-boil (preferably Barilla)
1 lb mozzarella cheese, whole milk shredded (about 4 cups)
1 ounce parmesan cheese, grated (about 1/2 cup)

Steps:

  • FOR THE SAUCE: Heat the oil in a Dutch oven over medium heat until shimmering. Add the onion and cook until softened but not browned, about 3 minutes. Stir in the garlic and cook until fragrant, about 30 seconds. Stir in the meat loaf mix, 1 tsp salt and 1 tsp pepper and cook, breaking the meat into small pieces with a wooden spoon, until the meat loses its raw color but has not browned, about 4 minutes.
  • Stir in the cream, bring to a simmer, and cook until the liquid evaporates and only the fat remains, about 5 minutes. Stir in the tomato puree and drained diced tomatoes, Bring to a simmer and cook until the flavors are blended, about 3 minutes. Season with salt and pepper to taste; set aside.
  • FOR THE RICOTTA FILLING: Stir all of the ingredients together until combined; set aside.
  • TO ASSEMBLE THE LASAGNA: Spread 1 cup of the sauce over the bottom of a 13 by 9-inch baking dish (avoiding large chunks of meat). Place 3 of the noodles in a single layer in the baking dish. Spread 1/3 cup of the ricotta mixture over each noodle, then sprinkle the layer with 1 cup of the mozzarella. Spoon 1 cup of the sauce evenly over the cheeses.   • TO STORE: Wrap the dish tightly with plastic wrap and then foil and refrigerate for up to 2 days or freeze for up to 1 month. (If frozen, the casserole must be completely thawed in the refrigerator, about 24 hours.).
  • TO SERVE: Adjust an oven rack to the middle position and heat the oven to 400 degrees. Unwrap the dish and cover tightly with foil that has been sprayed with vegetable oil spray (or use nonstick foil). Bake until the sauce bubbles lightly around the edges, 30 to 40 minutes. Remove the foil and continue to bake until hot throughout and the cheese is browned in spots, 25 to 30 minutes longer. Let cool for 10 minutes before serving.
  • TO SERVE RIGHT AWAY: Bake as directed, reducing the covered baking time to 15 minutes.

1 1/2 lbs ground beef (I use chuck)
salt (season to taste)

garlic salt
1/2 onion (sauteed, can use other vegs. like mushrooms, peppers, etc)
1 (1 1/3 kg) jar pasta sauce (I use 2lb 13oz jar of Ragu Traditional)
16 ounces cottage cheese (can also use ricotta)
1 egg (slightly beaten with fork)
2 cups cheese (mozzarella or Italian blend works good)
salt (lightly)
pepper
2 cups cheese (mozzarella or Italian blend to top)

Steps:

  • Preheat oven to 350°F
  • Boil and cook shells as directed
  • Brown ground beef, season, and drain grease (reserve 1 tsp).
  • Saute onions (or other vegetables in same pan using approx 1 tsp reserved grease -- add more if needed or use butter or other oil).
  • combine ground beef, onions, and pasta sauce in same pan. cover and simmer on low while you prepare the rest of the meal. Stir occasionally.
  • Mix cottage cheese, egg, then salt and pepper lightly. Mix well and add 2 cups cheese. Mix again.
  • Spray a 13x9 inch baking pan and begin to layer in order -- shells, cottage cheese mix, meat sauce (repeat 3 times) and finish off by topping 1-2 cups mozzarella or Italian blend cheese onto lasagna.
  • Bake for 20-30 minutes uncovered or until cheese is melted to your preference. I like to sprinkle an Italian blend seasoning or crushed red pepper on our individual servings. We serve this with garlic bread and a salad.
  • Let stand approximately 20 minutes before cutting/serving (to set up or else it is too saucy). I use this time to make the salad and toast the garlic bread. This meal tastes even better the next day!

Steps:

  • For the Meat Sauce:.
  • Heat oil in a heavy- bottomed pot over high heat and brown veal for 5 minutes. Add salt to taste.
  • Add onion, garlic, celery, peppers, dried tomatoes,tomato paste and seasonings. Reduce heat and cook for 15 minutes. Break up whole tomatoes with the back of the spoon and stir sauce occasionally. Add the grated orange zest and cook another 5 minutes.
  • Cook sausages in a frying pan. Remove, slice and set aside.
  • For the Bechamel Sauce:.
  • In a saucepan, melt butter and then add flour. Cook for 2 minutes over low heat, stirring constantly. Add milk, salt, pepper and nutmeg to taste.
  • Blend in the Cheddar cheese, stirring well. Set aside to cool.
  • Assemble the lasagna:.
  • Preheat oven to 400°F.
  • Cook lasagna noodles in plenty of boiling, salted water until al dente. Rinse in cold water, oil lightly and set aside on a clean towel.
  • Pour a layer of meat sauce in the bottom of a lasagna pan. Cover with a layer of noodles, then half of the combined cheeses (tossed together) and half of the Bechamel.
  • Continue with another layer of noodles and the rest of the meat sauce. Cover with one more layer of noodles, the remaining bechamel sauce and the sliced sausages. Finish with the remaining cheese mixture.
  • Garnish with fresh basil leaves.
  • Bake in centre of oven for 40 minutes.

1 lb lean ground beef
3/4 lb Italian sausage
1/2-1 lb fresh mushrooms (sliced and sauteed in butter)
1 (26 ounce) jar thick spaghetti sauce (Your favorite!)
1 (8 ounce) can tomato sauce
1 egg, slightly beaten
1 (16 ounce) container part-skim ricotta cheese
10 ounces shredded Italian cheese blend

Steps:

  • Cook and drain noodles as directed on package; rinse with hot water and drain.
  • In a large skillet or Dutch oven, cook ground beef and Italian sausage until done; drain then add mushrooms, spaghetti sauce, and tomato sauce; simmer 10-15 minutes.
  • In a small bowl, blend egg and ricotta.
  • In the bottom of a 9x13" baking pan, spread layers of 1/3 of the sauce, then 1/3 of the lasagne noodles, then 1/3 of the ricotta mixture, and then 1/3 of the shredded cheese; repeat layers twice.
  • Cover tightly with aluminum foil and bake at 375° for 20 minutes; uncover and bake another 20 minutes; remove from oven and let stand 5-10 minutes before cutting.

Occasionally I have had to use just ground beef, or just mozzarella, depending on what I had, but they just don't turn out as yummy as this combination.

1 lb ground meat (I use the mix of beef, pork, and veal)
2 (680 ml) cans pasta sauce (I use Primo, one can of garlic and herb, one can of romano cheese and basil)
1 (380 g) package of kraft mozza-cheddar grated cheese
grated parmesan cheese, to preference
12 lasagna noodles (I use PC Blue Menu, whole wheat noodles)

Steps:

  • Brown the meat, and drain.
  • Add both cans of sauce to the meat mixture, and heat on low, covered, making sure to stir every few minutes.
  • While the sauce is heating, boil the noodles according to package directions, and preheat the oven to 350 degrees.
  • When the noodles are ready, drain them and run cold water over them so that they are not too hot to touch.
  • Put a little bit of the meat sauce on the bottom of a 9 x 13 baking dish.
  • Do 2 layers of: 4 noodles, meat sauce, parmesan cheese, mozza-cheddar cheese.
  • Final layer is 4 noodles, meat sauce, and parmesan cheese (mozza-cheddar layer gets added later, so it won't burn).
  • Bake in oven for 20-25 minutes.
  • Take out of the oven and put a final layer of mozza-cheddar cheese on top; bake another 10 minutes or until cheese is bubbly and just starting to brown, don't let it get overdone.

1 (30 ounce) package frozen cheese ravioli
1 (26 ounce) jar spaghetti sauce
1 (16 ounce) package pork sausage (in the roll shaped package, not links)
1 1/2 lbs ground beef
1/2 lb sandwich pepperoni (from grocery store deli)
2 medium onions, roughly chopped
2 teaspoons garlic powder
3 cups mozzarella cheese (1-1/2 bags pre-shredded)

Steps:

  • In a large frying pan, cook the sausage and ground beef together with the chopped onions until no longer pink and drain all grease.
  • Cook ravioli according to package directions (only for about 3 minutes or so I think) Drain and rinse in cold water.
  • In a 13x9 baking dish, spread a small amount of sauce (just enough to cover bottom) and layer enough ravioli to cover.
  • Stack the slices of pepperoni and cut them into narrow strips and spread half of it over the ravioli.
  • Now spread all the meat over that and pour the remaining sauce on top of it.
  • Sprinkle with 1-1/2 cups mozzerella cheese, then layer the remaining ravioli and cheese and sprinkle all of the garlic powder on it.
  • Spread the remaining half of pepperoni strips on top of cheese.
  • Cover with foil and bake at 375* for about 20-25 minutes.
  • Remove foil and bake uncovered another 10 minutes or until cheese and pepperoni are golden.
  • Serve with no yeast Beer Bread (recipe# 73440).

2 pounds ground veal
4 tablespoons ground cinnamon, or to taste
1/2 cup kosher for Passover oil
2 medium onions, diced
2 pounds fresh mushrooms (button, cremini, or shiitake), sliced
Kosher salt and fresh ground pepper, to taste
2 large eggplants, peeled and diced
1/4 cup finely chopped fresh Italian parsley leaves
6 cloves garolic, minced
16 thick, unbroken matzo crackers
4 to 6 (16-ounce) liquid egg cartons
6 (15-ounce) cans tomato sauce
1/4 cup sugar or honey

Steps:

  • Preheat oven to 350 degrees F. In a large frying pan, brown ground turkey and veal, approximately 10 minutes. Once brown, drain, then sprinkle 2 tablespoons of cinnamon onto mixture, and set aside. In another large frying pan, heat 1/4 cup olive oil and saute diced onions until browned. Add sliced mushrooms to onion mixture, and saute together with seasoning, pinch of salt and pepper, until cooked. Place cooked mixture in large bowl and set aside. Using the same frying pan (do not wash), add remaining 1/4 cup oil and saute with pinches of salt and pepper, diced eggplant and garlic, until soft. Add these ingredients to onions and mushrooms in the mixing bowl. Add minced parsley, salt, freshly ground pepper, and remaining 2 tablespoons of cinnamon. Add 2 cans of tomato sauce to vegetable mixture. Combine browned turkey and veal with vegetable mixture; adjust seasonings. Add 1/4-cup sugar or honey to taste, and set aside. Cover counter top with heavy-duty paper towels. Use 2 aluminum roasting pans, 1 for matzo-soaking process, and 1 for egg dipping process. Fill 1 large aluminum roasting pan halfway with almost boiling water. Add matzos, 1 at a time to this "bath" and soak until wet through, not falling apart, but pliable. Remove and lay on paper towels. Place more towels on top of matzos to soak up excess water, if necessary. Fill second large aluminum roasting pan with about 3 cartons of liquid eggs. (You will dip the softened matzos into egg mixture, 1 at a time as you layer.) Grease 2 (9-1/2 by 13 inch) glass baking dishes lightly with olive oil. Open remaining cans of tomato sauce, pour into mixing bowl, and set aside. Start layering in Pyrex baking dish. First with a thin amount of tomato sauce on bottom, then with 2 to 2 1/2 egg dipped matzos (these are used similarly to lasagna noodles), then with filling mixture, then several dollops of tomato sauce, continuing to repeat process until each baking dish uses 6 to 8 matzos. Finish with a layer of matzos brushed lightly with tomato sauce. Bake at 350 degrees F for 40 minutes, until top is firm and golden.
