This chili is quick, easy, and not too hot. It is great for a middle-of-the-week family dinner served with sliced sourdough bread and salad. It originally was printed in Bon Appetit (December 1983) as a request for the chili served at Grandma's Saloon & Deli in Duluth, Minnesota.

2 tablespoons chili powder
1 teaspoon garlic salt
1/2 teaspoon pepper
1/4 cup butter or 1/4 cup margarine
2 cups sliced mushrooms
1 cup chopped onion
1 cup chopped celery
2 (28 ounce) cans crushed tomatoes or 2 (28 ounce) cans diced tomatoes in tomato puree
1/4 cup water
1 tablespoon sugar
1 teaspoon Worcestershire sauce
2 cups canned kidney beans, drained
shredded cheddar cheese
sour cream
1 lb ground beef

Steps:

  • Combine chili powder, salt and pepper in cup; set aside.
  • Melt butter in large saucepan over medium heat.
  • Add mushrooms, onion and celery and cook, stirring occasionally, until onion is transparent (about 10 minutes).
  • Add ground beef and about 1/4 of chili powder mixture.
  • Cook, breaking up meat with fork, until browned.
  • Stir in remaining chili powder mixture, tomatoes, water, sugar, and Worcestershire sauce.
  • Cover partially and simmer 15 minutes.
  • Add beans and simmer 10 more minutes.
  • Ladle chili into broiler proof serving bowls.
  • Sprinkle each serving with about 2 tbsp shredded Cheddar cheese.
  • Broil until cheese melts.
  • Top each with dollop of sour cream (optional).
  • Serve immediately.

This recipe is a great way to use up ingredients in your fridge, including Bloody Mary mix. Feel free to throw in other random veggies you may have in your fridge. I enjoy serving with diced red onion, shredded Cheddar cheese, and sour cream.

1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can pinto beans, drained and rinsed
1 tablespoon extra-virgin olive oil
5 large portobello mushrooms, diced
1 large yellow onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 banana pepper, seeded and diced
3 cloves garlic, minced
2 (28 ounce) cans crushed tomatoes
1 (16 ounce) can fire-roasted diced tomatoes
6 ounces bottled Bloody Mary mix
½ (6 ounce) can tomato paste
½ tablespoon chili powder
2 teaspoons salt
2 teaspoons dried oregano
1 teaspoon white sugar
1 teaspoon ground black pepper
1 ½ teaspoons ground cumin
¼ teaspoon cayenne pepper

Steps:

  • Combine black beans, kidney beans, and pinto beans in a large bowl and cover with fresh water; soak for at least 15 minutes.
  • Heat olive oil in a large pot over medium-low heat. Add mushrooms, onion, bell peppers, and banana pepper. Cook until they sweat their juices and are slightly tender, 5 to 7 minutes. Add garlic; cook 2 to 3 minutes more.
  • Drain beans and add to the pot with the vegetables. Add crushed tomatoes, diced tomatoes, Bloody Mary mix, and tomato paste. Add chili powder, salt, oregano, sugar, black pepper, cumin, and cayenne pepper.
  • Simmer over medium-low to medium heat, uncovered, until as thick as desired, about 1 1/2 hours.

6 T. vegetable oil
3 T. unsalted butter
1-1/2 pounds boneless/skinless chicken breast OR B/S thighs,cut into bite sized pieces
1 medium onion, chopped
5 garlic cloves, minced
1 can Brooks Chili hot beans, undrained
1 can Bush's seasoned recipe black beans, undrained
1 can cannellini beans, drained & rinsed
1 can Rotel original diced tomatoes
1 can stewed or diced tomatoes
2 T. chili powder
1 green pepper, diced
3 T. parsley, dried OR fresh chopped without stems
Tortilla chips, optional
Shredded cheese, flavor of choice, optional
Sour cream, optional

Steps:

  • In large pot heat oil & butter. Add chicken pieces, onion and garlic. Cook on medium heat until chicken is no longer pink. Add remaining ingredients, except tortilla chips, cheese and sour cream. Simmer for 30 minutes stirring frequently. If desired, crush tortilla chips and place in bottom of bowl. Pour chili over and serve. Top with shredded cheese and a dollop of sour cream.

3 (14 1/2 ounce) cans white beans (undrained)
5 cups cooked chicken (rotisserie or boiled)
2 cups salsa
8 ounces monterey jack pepper cheese (grated)
2 teaspoons ground cumin
2 garlic cloves (minced)
1/2 cup finely crushed corn chips (optional for thicker chili)
black pepper

Steps:

  • Place all ingredients except corn chips in a crockpot and cook on high until cheese is well incorporated.
  • Chili may also be cooked on stove top on medium-high heat.
  • When chili is ready, add finely crushed corn chips and simmer 10 minutes to thicken.
  • Garnish with more crushed corn chips, cheese or sour cream.
