Another favorite from Jackie Olden (my mom's favorite). This marinade is listed for spareribs, but we use it on other cuts of meat, chicken, pork and beef steak cuts.

1 cup orange juice
1/2 cup honey
1/2 cup soy sauce
1/3 cup balsamic vinegar
1 teaspoon dry mustard
1 teaspoon paprika
3 garlic cloves
1/4 teaspoon hot sauce
1/4 teaspoon allspice

Steps:

  • Combine ingredients in a large ziplock bag or if ribs are too large marinate in a plastic dish.
  • Marinate ribs (or other meat) 1-2 hours.
  • Use remaining liquid as a basting sauce during cooking.
  • Grill as desired on gas grill, or precook ribs in the oven about 2 hours to insure they are tender, then do final cook on the grill.
  • This makes enough marinde for 6-8 pork chops.

1 tablespoon honey, or more to taste
4 small cloves garlic, crushed
1 pinch rosemary
1 pinch garlic salt

Steps:

  • Whisk balsamic vinegar and honey together in a saucepan over medium heat. Cook, stirring occasionally, until mixture begins to bubble, 3 to 5 minutes.
  • Stir garlic, rosemary, and garlic salt into vinegar mixture. Cook and stir until mixture starts to foam. Reduce heat to low and simmer, stirring occasionally, until glaze coats the back of a wooden spoon, 30 to 40 minutes.

1 teaspoon grated orange zest
1 teaspoon balsamic vinegar
1 teaspoon honey
1/4 teaspoon salt
2 salmon fillets (6 ounces each), skin removed
DIPPING SAUCE:
3 tablespoons orange juice
1 tablespoon balsamic vinegar
1/2 teaspoon honey
Dash salt
Sliced green onions and orange slices, optional

Steps:

  • In a small bowl, combine the zest, vinegar, honey and salt. Spread over salmon. Tuck any thin parts of salmon under fillets for even cooking. Place in a Ziploc® Zip 'n Steam™ Bag, with thicker portions toward outer edges of bag. Seal bag. , Microwave on high for 3-1/2 minutes or until salmon flakes easily with a fork. If needed, microwave at 30-second intervals until salmon tests done. Let stand for 1 minute before handling. , Meanwhile, for dipping sauce, combine the orange juice, balsamic vinegar,honey and salt. Carefully open bag. Use spatula to remove salmon from bag. Garnish with green onions and orange slices if desired. Serve with dipping sauce.

  • Whisk orange juice, soy sauce, 1/2 cup honey, balsamic vinegar, mustard, paprika, hot sauce, allspice, cloves, cinnamon, and ginger together in the bottom of a slow cooker; add garlic. Lay the pork shoulder roast into the orange juice mixture.
  • Cook on Low for 10 to 12 hours.
  • Turn roast over in the slow cooker, drizzle more honey over the roast, and pack brown sugar atop the pork.
  • Continue cooking another 10 to 12 hours. Shred the pork with a pair of forks in the slow cooker and mix with the liquid until even in texture.

1 tablespoon extra-virgin olive oil

1 unpeeled orange, cut into 8 wedges

  • Preheat oven to 450 degrees. Season chicken with salt and pepper. In a large ovenproof skillet, heat oil over medium-high. Add chicken, skin side down, and cook until golden and crisp, 7 minutes. 4 boneless skinless chicken breasts
2 tbsp olive oil
3 tbsp balsamic vinegar
150ml/¼ pint fresh orange juice
150ml/¼ pint chicken stock
2 tsp chopped fresh rosemary leaves
1 tsp light muscovado sugar
knob of butter
orange segments and fresh rosemary sprigs to garnish
boiled rice and green salad to serve

Steps:

  • Put the chicken between pieces of cling film and flatten slightly by bashing with a pan. Unwrap and sprinkle on both sides with pepper. Heat the oil in a pan over a medium heat, then fry the chicken for 5 minutes, turning halfway through.
  • Pour 2 tbsp vinegar over the chicken, add the orange juice and stock and sprinkle with the rosemary and salt. Bring to the boil, lower the heat and bubble gently for 5 minutes until tender, spooning with the sauce frequently and turning chicken halfway through.

Having just started to eat salmon, I've scoured the web, cookbooks, magazines and friends recipe boxes for marinade recipes. This one is THE one that we like the very best. I found it somewhere on the web(not sure where) and tweaked it just a tad to suit our tastes.

1/3 cup orange juice
1/3 cup light soy sauce
3 tablespoons canola oil
3 tablespoons ketchup
1 1/2 teaspoons honey
1/2 teaspoon ground ginger
2 garlic cloves, minced
1 tablespoon orange zest
1 -1 1/2 lb salmon steaks or 1 -1 1/2 lb salmon fillet

Steps:

  • Mix first eight ingredients in a glass dish.
  • I lightly slash the tops of the filets to allow the marinade to penetrate the fish better. Add salmon, turn to coat. Cover and refrigerate 1 hour.
  • Drain salmon, reserving marinade.
  • Grill for 5 minutes, brush with marinade, turn and grill other side for 5 more minutes. Continue until salmon flakes easily when tested with fork.
  • Can also be done under the broiler.
