This cake requires no icing, but you can ice it if you wish which is truly delicious.

½ cup butter, softened
1 cup white sugar
2 eggs
1 teaspoon maple flavored extract
1 ½ cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
½ cup milk
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 8x8 inch square pan.
  • Cream the butter or margarine add the sugar and continue creaming until light and fluffy. Beat in the eggs one at a time. Stir in the maple flavoring.
  • Combine the flour, baking powder, and salt. Add the flour mixture in 3 parts alternately with the milk to the butter mixture, beginning and ending with flour. Stir in the walnuts and pour in the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 40 to 45 minutes or until an toothpick inserted in the center comes out clean. Let cake cool then frost with Maple Butter Icing.

1 package (16 ounces) hot roll mix
3 tablespoons sugar
3/4 cup warm water (120° to 130°)
6 tablespoons butter, melted
1 large egg, room temperature
1 teaspoon maple flavoring
FILLING:
1/2 cup sugar
1/3 cup chopped walnuts
1 teaspoon ground cinnamon
1/2 teaspoon maple flavoring
2 tablespoons butter, melted
GLAZE:
1-1/2 cups confectioners' sugar
1/4 teaspoon maple flavoring
1 to 2 tablespoons 2% milk

Steps:

  • In a large bowl, combine the contents of the roll mix and yeast packets with the sugar. Stir in water, butter, egg and maple flavoring; mix well., Turn onto a floured surface; knead until smooth and elastic, 2-3 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, 45-60 minutes., In a small bowl, combine sugar, walnuts, cinnamon and maple flavoring. Grease a 12-in. pizza pan. Punch dough down. Turn onto a lightly floured surface; divide into 3 portions. Roll each into a 12-in. circle. Place 1 circle on prepared pan. Brush with a third of the melted butter; sprinkle with a third of the filling. Repeat layers twice. Pinch around edge to seal., Place a small glass in center of circle. With kitchen scissors, cut from outside edge just to the glass, forming 16 wedges. Twist each wedge 5 or 6 times and tuck ends under. Remove glass. Cover with a kitchen towel; let rise in a warm place until doubled, 30-45 minutes., Preheat oven to 375°. Bake until golden brown, 20-25 minutes. Remove from pan to a wire rack to cool. Combine glaze ingredients; drizzle over warm coffee cake.

Steps:

  • Sift cake flour, sugar, baking powder, and salt into a bowl.
  • Stir in the brown sugar.
  • Make a well; add oil, egg yolks, water, maple flavoring in order given.
  • Beat until smooth.
  • In another bowl beat egg whites and cream of tarter until very stiff (I would do this first).
  • Pour yolk mixture over whites, folding very carefully to prevent breaking whites.
  • Add walnuts.
  • Pour into an ungreased tube pan.
  • Bake 55 minutes in a 325 degree Fahrenheit oven; then for last 10 minutes at 350 degrees Fahrenheit; invert when done.
  • FROSTING:.
  • Melt butter until golden brown; don't scorch.
  • Remove from heat.
  • Stir in powdered sugar.
  • Blend in sweet cream and maple flavoring.
  • Beat until smooth.
  • Spread on chiffon or angel cake.

After searching quite a lot, I finally found this recipe that pretty well duplicates the maple nut cake they served at our local buffet before it closed down. I found it at Allrecipes.com. My husband dearly loves this cake, with it's maple-y goodness and walnuts. It goes very well with the Maple Butter Frosting (found at same website), which I'll post separately.

1 1/4 c cake flour...i didn't have any so i used organic unbleached white flour
3/4 c packed brown sugar
1 1/2 c egg whites
1/4 tsp salt
1 1/2 tsp cream of tartar
1 tsp vanilla extract
1/4 tsp maple flavored extract
1 c sugar
3/4 c finely chopped walnuts...i use my slap chopper...works great!!

Steps:

  • 1. Preheat oven to 375 degrees. Sift together flour and sugar.Set aside. In a large bowl beat egg whites with salt and cream of tartar till soft peaks form. Add the vanilla and maple flavoring. Add the sugar a little at a time and beat till stiff. Gradually fold the flour/sugar into egg whites about a 1/4 at a time. Spread half of batter into tube pan and sprinkle with the chopped walnuts. Using a knife cut through to mix in nuts. Add the the rest of the batter. Bake about 35 mins. Cool inverted on a wire rack.
  • 2. There is no need to use any frosting on this cake as it is great without it but I mixed up enough powdered sugar with some milk and about 1/2 tsp maple flavor extract to make a thin drizzle which I did put on the cake. I then sprinkle chopped walnuts over the top.

1/2 cup, plus 4-5 tsps. light evaporated milk
1 cup chopped walnuts
1 cup powdered sugar
1/2 tsp. maple flavoring
6-12 walnut halves

Steps:

  • Cake:
  • Combine flour, baking powder, soda and salt in bowl and toss with fork to blend thoroughly. In large bowl of electric mixer, beat olive oil with eggs, pumpkin pie mix and 1/2 cup evaporated milk. Gradually beat in dry ingredients. Fold in chopped walnuts. Transfer to oiled fluted tube pan. Bake at 325 degrees for 45 minutes or until cake tests done. Cool on rack for 15 minutes then turn cake out onto rack and cool completely.
  • Glaze:
  • In small bowl, mix sugar, 4 tsps. remaining milk and maple flavoring. Stir until smooth. Add more milk, 1/2 tsp. at a time, if needed. Glaze should have a thick consistency. Drop spoonfuls of glaze evenly around the top of the cake. Set aside to allow glaze to drip down the sides of the cake. When glaze has set, garnish with walnut halves.

And now I've figured out an even finer form - when someone bakes your recipes and then feels comfortable enough with them to change up the ingredients to suit their own tastes. That's what Betty Minton of Princeton, WV, did after she baked one of my favorite coffee cakes - Kathy's Cinnamon Breakfast Cake. Betty was thinking maple, and there is maple flavoring in both the cake and the glaze, turning this decidedly wonderful cake into something extraordinary. It's that cake to take to brunch, to the office, the potluck, the bake sale. It's good after dinner or before lunch, with a cup of coffee or a cold glass of milk. Vegetable oil spray for misting the pan
Flour for dusting the pan
1 package (18.25 ounces) plain yellow cake mix

  • Mist a Bundt pan with vegetable oil spray and dust with flour.

  • Bake the cake until it springs back when lightly pressed in the center, 45 to 50 minutes. Remove the pan to a wire rack to cool 10 minutes.
  • While the cake cools, prepare the glaze. Place the confectioners' sugar in a small bowl and stir in the milk and maple flavoring. Set the glaze aside.
  • Invert the cake onto a rack to completely cool, 30 to 40 minutes. Spoon the glaze over the cooled cake, and press nuts into the top of the cake, if desired.

1 box yellow cake mix
1 c water
1/3 c butter softened
3 eggs
1/2 c maple flavored syrup
1/2 c chopped nuts of your choice (optional)
CREAM CHEESE GLAZE
1 1/2 c powdered sugar
3 Tbsp butter softened
1 1/2 oz cream cheese
3-4 tablespoons of maple flavored syrup

Steps:

  • 1. Heat oven to 350°F. Grease 12-cup fluted tube cake pan with shortening; lightly flour (or spray pan with baking spray with flour). In large bowl, beat all cake ingredients with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes. Pour into pan.
  • 2. Bake 40 to 50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 2 hours.
  • 3. In large bowl, beat powdered sugar, 3 tablespoons butter, the cream cheese and 3 tablespoons of the syrup with electric mixer on low speed. Beat in enough of the remaining syrup to make a smooth, soft frosting that will flows down side of cake. Spread frosting over cake.
