Softened butter, for the pan
1/4 cup all-purpose flour, plus more for the pan
3 pounds white-fleshed sweet potatoes, called boniato or batata
1/4 cup shredded coconut
1/4 cup raisins
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 cup packed dark brown sugar
3 cups coconut milk
1/4 cup evaporated milk

Steps:

  • Preheat oven to 350 degrees F.
  • Butter and flour a 9 by 13-inch baking dish.
  • Using the grater attachment on a food processor, grate the potatoes and put in a large bowl. Add the flour, coconut, raisins, vanilla, cinnamon, ginger, and nutmeg and mix well.
  • Heat the sugar, coconut milk, and evaporated milk in a saucepan over low heat until the sugar is dissolved, about 4 minutes.
  • Pour the coconut milk mixture into the potato mixture and mix well. Pour the mixture into the baking dish, smooth the top, and bake until set, about 1 1/2 hours.

4 medium sweet potatoes, peeled and quartered
2 1/2 cups sugar
1 1/4 cups milk
1 tablespoon ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
3 eggs
Salt
3 tablespoons butter
One 16-ounce bag miniature marshmallows

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the sweet potatoes in a large pot of water, cover the pot and bring to a boil. Remove the lid, lower the heat to medium and cook until the potatoes are tender when pierced with a fork. Drain the potatoes and place them in a large bowl. Using a hand-held electric mixer, break up the potatoes. At low speed add the sugar, milk, cinnamon, allspice, nutmeg, cloves, eggs, salt to taste, and combine.
  • Butter a 9-by-13-inch casserole dish and pour in the mixture. Smooth the top and bake until the pudding is set, 45 minutes to 1 hour.
  • Cover the top of the pudding with marshmallows, change the oven temperature to the broil setting and cook until the marshmallows are brown and fluffy, 3 to 5 minutes.

1/2 cup packed light or dark brown sugar
4 large eggs
1/3 cup milk
2 tablespoons unsalted butter, melted
2 tablespoons pure vanilla extract
1 tablespoon corn syrup, preferably dark
1 tablespoon light or dark rum
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Praline topping, recipe follows
1/2 cup chopped pecans
1/4 cup chopped crystallized ginger
1/4 cup packed light or dark brown sugar
2 tablespoons unsalted butter, softened

Steps:

  • Preheat the oven to 350 degrees F. Grease a 1 1/2-quart baking dish.
  • With an electric mixer, beat together all the pudding ingredients until smooth and light. Pour the pudding into the baking dish. Transfer to the oven and bake for 25 minutes.
  • Sprinkle the praline mixture over the pudding and bake for an additional 20 to 25 minutes, until the pudding is set and slightly puffed. The top will sink as the pudding cools. Serve warm or at room temperature.

1 box vanilla wafers
1 cup sugar
2 tablespoons flour
2 eggs
2 cups milk
1 teaspoon vanilla

Steps:

  • In a large bowl, place one layer of sliced bananas, then a layer of wafers until bowl is filled, making sure top layer is wafer. Set aside. In a medium saucepan beat eggs, add sugar and mix well, add flour, milk, vanilla. Bring to boil, pour over bananas and wafer mixture. Chill and Serve.

Steps:

  • Boil sweet potatoes until very tender. Rub them, while hot, through a colander. Add the eggs, powdered sugar, butter, nutmeg, lemon peel, and brandy. Mix thoroughly and place in a medium Dutch Oven. Place on a bed of coals. Cook for 25 minutes or until firm. When done, sprinkle the top with sugar.

Nonstick cooking spray, for spraying the baking dish
2 1/2 pounds medium sweet potatoes (about 3), poked with a fork
1/2 cup (1 stick) butter, room temperature
2 large eggs
1 cup sugar
1/2 cup milk
1 tablespoon self-rising cornmeal
1/4 teaspoon salt
1 teaspoon vanilla extract
1 cup pecan halves
1/2 cup packed brown sugar

Steps:

  • Preheat the oven to 400 degrees F. Spray an 8-inch square baking dish with cooking spray.
  • On a foil-covered baking sheet, bake the sweet potatoes until soft, about 1 hour. Remove and let cool. Reduce the oven temperature to 325 degrees F. When cool enough to handle, peel the potatoes, place the flesh in a large mixing bowl, add the butter and mash until smooth. Add the eggs 1 at a time, beating well after each addition. Add the sugar, milk, cornmeal, salt and 1/2 teaspoon of the vanilla and beat until smooth. Pour the batter into the prepared baking dish. Arrange the pecan halves on top of the pudding and top with the brown sugar. Sprinkle the remaining 1/2 teaspoon vanilla by small droplets over the brown sugar. Bake until the top is browned, about 45 minutes.

SHREDDED SWEET POTATO PUDDING

When I first saw this recipe demonstrated on a cooking program on Food Network, I had to copy it down to try for Thanksgiving. I have since made this several times for holiday meals and received many compliments. I have to warn you - this is no diet dish. This is very rich and very,very sweet. Even though this is sweet enough to be a dessert, this is meant to be a side dish to compliment a saltier main dish - such as a baked ham. I imagine you could try using shredded carrots as well, but I have yet to do so. (Adapted from "Calling all Cooks" where this was called Mama Lane's Sweet Potato Pudding and was shared guest Jim Brown.) Servings are all relative to how big a portion your guests scoop up - some years I have had less yield. I have successfully doubled this recipe when needed.

3/4 cup granulated sugar
3 tablespoons sweet unsalted butter, melted & cooled slightly
1 cup milk (skim is OK)
1 large egg
2 cups fresh raw sweet potato, peeled and shredded
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F.
  • If you haven't already done so, peel sweet potatoes, cut into large chunks and run through the shredder of your food processor.
  • Combine the sugar, egg, butter, milk, and vanilla with a whisk.
  • Stir in shredded sweet potato and turn into a medium sized greased casserole dish.
  • Bake, uncovered, for 1-1 1/2 hours, stirring every 20 minutes or so or until brown on top and bubbly- do not overbake.
