Yummy pineapple sauce over Hawaiian-style meatballs slow cooked and served over rice or pasta.

1 pound lean ground beef
¾ cup crushed soda crackers
¼ cup finely chopped onion
2 large eggs
2 tablespoons milk
1 clove garlic, crushed
1 ¼ teaspoons salt
¼ teaspoon ground black pepper
¼ teaspoon ground ginger, or more to taste
1 ½ tablespoons cornstarch, or as needed
1 ½ tablespoons water, or as needed
1 (14 ounce) can crushed pineapple, with juice
1 cup brown sugar
½ cup vinegar
3 tablespoons soy sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Mix ground beef, crushed soda crackers, onion, eggs, milk, garlic, salt, pepper, and ginger in a large bowl until well combined. Shape the mixture into 1- or 1 1/2-inch balls. Place on the prepared baking sheet.
  • Bake in the preheated oven until browned, about 15 minutes.
  • Combine pineapple and juice, brown sugar, vinegar, and soy sauce in a medium saucepan over medium-high heat. Bring to a boil, stirring occasionally. Mix cornstarch and water in a small bowl or cup and gradually stir into the boiling sauce until slightly thickened.
  • Place meatballs in a slow cooker. Pour pineapple sauce over meatballs.
  • Cover and cook on Low until meatballs are no longer pink inside and have absorbed the sauce, 4 to 5 hours.

1 1/2 lb ground pork
1 large onion, finely chopped (1 cup)
1/4 cup Progresso™ plain bread crumbs
1 egg
2 tablespoons soy sauce
1 teaspoon grated gingerroot
1 clove garlic, finely chopped
1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
1/2 cup packed brown sugar
1/4 cup rice vinegar
2 tablespoons soy sauce
1 teaspoon grated gingerroot
1 clove garlic, finely chopped
2 tablespoons cornstarch
1/4 cup cold water
1 tablespoon olive oil
1 1/2 cups chopped green bell pepper
3/4 cup chopped red bell pepper
2 cups fresh or canned pineapple chunks

Steps:

  • Heat oven to 400°F. Spray cookie sheet with cooking spray or line with cooking parchment paper.
  • In large bowl, mix all meatball ingredients. Shape mixture by 2 tablespoonfuls into balls. Place on cookie sheet.
  • Bake 20 to 25 minutes or until golden brown on outside and no longer pink in center.
  • Meanwhile, in large saucepan, stir together broth, brown sugar, vinegar, soy sauce, 1 teaspoon gingerroot and 1 garlic clove. Heat to boiling; reduce heat to low. In small bowl, mix cornstarch and water until smooth. Add cornstarch mixture to simmering sauce; stir well.
  • In large skillet, heat oil over medium heat. Cook bell peppers in oil 3 to 5 minutes, stirring occasionally, until crisp-tender. Reduce heat to low. Add pineapple; cook 3 to 4 minutes longer or until pineapple is starting to cook around the edges.
  • Add bell pepper, pineapple and meatballs to sauce in saucepan. Simmer 15 to 20 minutes until meatballs are coated with sauce and mixture is thoroughly heated.
  • Serve meatballs, sauce and vegetables over cooked rice, or serve with toothpicks.

1/4 cup butter
1 medium onion, chopped
2 lbs ground beef
2 eggs
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon tarragon
1/4 teaspoon marjoram
2 1/2 tablespoons flour
5 1/2 tablespoons tomato paste
3/4 cup beef stock
4 teaspoons Worcestershire sauce
2 teaspoons vinegar
1/2 lb mushroom, sliced
1 cup sour cream

Steps:

  • Saute the onion in half the butter until golden brown.
  • Put the onion in the crock pot.
  • Mix together the beef, eggs, salt and pepper.
  • Form into meatballs, and brown in the same pan the onions were cooked inches.
  • Sprinkle on a mixture made of the flour, tarragon and marjoram.
  • Shake the fry pan to turn the meatballs and coat them with the flour mixture.
  • Put into the crock pot.
  • Mix together the tomato paste, beef stock, Worcestershire sauce and the vinegar in the fry pan, scraping the bottom of the pan.
  • Cook for 2 minutes.
  • Pour over meatballs.
  • cover and cook on LOW 1 to 1 1/2 hours.
  • Melt remaining butter and saute the mushrooms.
  • Add the mushrooms and the sour cream to the meatballs and heat through.
