1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup 2% milk
1 package (6 ounces) stuffing mix
2 cups cubed cooked chicken breast
2 cups fresh broccoli florets, cooked
2 celery ribs, finely chopped
1-1/2 cups shredded Swiss cheese, divided

Steps:

  • In a large bowl, combine soup and milk until blended. Add the stuffing mix with contents of seasoning packet, chicken, broccoli, celery and 1 cup cheese. Transfer to a greased 13x9-in. baking dish. , Bake, uncovered, at 375° for 20 minutes or until heated through. Sprinkle with remaining cheese; bake 5 minutes longer or until cheese is melted. Freeze option: Sprinkle remaining cheese over unbaked casserole. Cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 375°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

This casserole is super satisfying and creamy and uses a great trick to cut out extra butter and oil: Instead of making the traditional roux with butter, the cream sauce is thickened with a little flour.

1/4 cup all-purpose flour
2 cups low-sodium chicken broth
Kosher salt and freshly ground black pepper
3/4 cup shredded sharp Cheddar
4 cups medium broccoli florets
Cooking spray
3 cups frozen brown rice, thawed
1 rotisserie chicken, skinned, white and dark meat shredded (about 4 cups)
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F. Put the flour and broth into a large saucepan and whisk until the flour is dissolved. Place the saucepan over medium heat and whisk continuously until the mixture comes to a boil; continue to whisk until the mixture is thick enough to coat the back of a spoon, 10 to 12 minutes. Remove the saucepan from the heat and whisk in 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Add the Cheddar and whisk until melted. Add the broccoli florets and stir to coat.
  • Spray a 3-quart flameproof casserole dish with cooking spray. Toss the brown rice and chicken in a large bowl. Pour the broccoli-cheese sauce on top and mix well. Spread the mixture in the casserole dish and top with the Parmesan. Cover with foil and bake until bubbling and hot, about 25 minutes. Remove the foil and broil until the top is nicely browned, 2 to 5 minutes Serve hot.
  • Make-Ahead Tip: Freeze the baked casserole for up to 2 weeks. Cover in foil and reheat at 350 degrees F until hot, 35 to 45 minutes.

1 (10.5 ounce) can condensed cream of mushroom soup (NOT diluted)
1 (10.5 ounce) can cream of chicken soup (NOT diluted)
1 cup milk
1 (12 ounce) package Pepperidge Farm stuffing mix (or two 6-ounce boxes of Stove Top stuffing mix), plus additional ingredients called for on the package*
Optional garnish: chopped fresh parsley or thyme

Steps:

  • Preheat oven to 350°F (180°C).
  • Grease a 9x13-inch baking dish; set aside.
  • In a large bowl, whisk together condensed soups and milk. Stir in cooked chicken and thawed baby broccoli florets.
  • Transfer chicken mixture to the prepared baking dish.
  • In a separate bowl, prepare stuffing according to package directions.
  • Spread prepared stuffing evenly on top of the chicken mixture.
  • Cover the dish with foil. Bake, covered, at 350°F for about 20 minutes. Remove the foil and bake for an additional 10 minutes, or until heated through and lightly browned on top. If you like your stuffing really moist, leave the dish covered for the entire baking time.

6 boneless skinless chicken breast halves, cut into bite-size pieces
2/3 cup shredded swiss cheese
1 cup reduced-fat cream of chicken soup
1/2 cup light sour cream
1/2 cup white wine
1 teaspoon garlic powder
1/2 teaspoon dry mustard
1/4 teaspoon cayenne pepper
1/2 cup crouton, crushed

Steps:

  • Grease a 9X13 disposable foil pan with non-stick cooking spray.
  • Place chicken pieces in dish.
  • Sprinkle with swiss cheese.
  • Mix together remaining ingredients and spread over cheese.
  • Cover dish with foil.
  • Place croutons in a ziploc bag and crush with a rolling pin.
  • Tape bag of crushed croutons to dish.

1 medium red bell pepper, chopped (1 cup)
1 medium poblano chile, chopped (3/4 cup)
1 medium jalapeño chile, seeded and finely chopped
3 tablespoons Gold Medal™ all-purpose flour
1 package (0.85 oz) Old El Paso™ chicken taco seasoning mix
2 cups Progresso™ chicken broth (from 32-oz carton)
4 oz (half of 8-oz package) cream cheese, softened
1 cup shredded sharp Cheddar cheese (4 oz)
4 1/2 cups uncooked bow-tie (farfalle) pasta (12 oz)
2 cups shredded deli rotisserie chicken
1 cup Cascadian Farm™ organic frozen corn (from 10-oz bag)
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 can (10 oz) Old El Paso™ mild red enchilada sauce
1 1/2 cups crushed tortilla chips (about 6 oz)
1/4 cup chopped fresh cilantro leaves
1/4 cup chopped red onion

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 4-quart saucepan, melt butter over medium heat. Stir in onion, bell pepper, poblano and jalapeño chiles; cook about 6 minutes or until vegetables are softened. Stir in flour and taco seasoning mix; cook and stir 1 minute. Gradually beat in broth with whisk. Heat to boiling, stirring constantly; boil and stir 1 minute. Remove from heat; stir in cream cheese and Cheddar cheese.
  • Meanwhile, cook pasta as directed on package for minimum cook time. Drain; stir pasta into sauce with chicken, frozen corn and black beans. Pour pasta mixture into baking dish, and pour enchilada sauce over top.
  • Bake 15 minutes. Remove from oven, and sprinkle with tortilla chips. Bake 15 to 20 minutes or until heated through and sauce is bubbling around edges. Let stand 15 minutes before serving. Garnish with cilantro and red onion just before serving.
  • To freeze: Line 13x9-inch (3-quart) glass baking dish with foil, making sure foil is as smooth as possible, as wrinkled foil may get stuck in sauce during freezing process. Leave enough overhang to lift casserole out of dish. Spray foil with cooking spray. Cover and refrigerate sauce 30 to 40 minutes before assembling casserole. Mix sauce with cooked pasta, chicken, frozen corn and beans; spread in lined baking dish (do not add enchilada sauce); cover tightly with another layer of foil. Freeze unbaked casserole about 8 hours or until completely frozen. Transfer frozen casserole to labeled 2-gallon resealable freezer plastic bag. Remove air; seal and freeze up to three months. To bake: Remove foil, and transfer to 13x9-inch (3-quart) glass baking dish sprayed with cooking spray. Cover and thaw in refrigerator until completely thawed, at least 48 hours. Heat oven to 350°F. Remove cover, and top with enchilada sauce. Bake 20 minutes; top with crushed tortilla chips. Bake 25 to 30 minutes or until heated through and bubbly around edges (165°F in center). Let stand 15 minutes. Top with cilantro and red onion just before serving.

Creamy Swiss Chicken Bake is absolutely delicious. Chicken breasts are smothered in an easy-to-make Swiss cheese sauce, covered in crispy, seasoned breadcrumbs, then baked until bubbly. It's an easy chicken casserole the whole family will love!

4 tablespoons butter
4 tablespoons all-purpose flour (can be gluten-free)
1 ¼ cups chicken stock
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons sea salt
4 slices Swiss cheese
½ cup sour cream (can be light)
½ cup panko breadcrumbs (can be gluten-free)
2 tablespoons melted butter
1 teaspoon Italian seasoning
4 medium chicken breasts
1 teaspoon sea salt
1 teaspoon pepper
4 slices Swiss cheese
Minced parsley (to serve)

Steps:

  • Preheat your oven to 400 degrees. Butter the bottom of a 9x11 inch casserole dish.
  • Heat the butter in a medium-sized pot over medium-high heat. Whisk in the flour and let it cook for 1 minute. Add the chicken stock, garlic powder, onion powder, and salt, and whisk well. Continue to whisk until the stock thickens.
  • Tear the swiss cheese slices into smaller pieces then add them to the pot and stir it into the sauce. Add the sour cream and stir once more.
  • In a small bowl, mix the melted butter, breadcrumbs, and Italian seasoning.
  • Gently pound the thickest part of the chicken using the palm of your hand until the breasts are even in thickness. Season the chicken with salt and pepper.
  • Pour half of the cheese sauce into the casserole dish. Add the chicken and top each piece with a piece of Swiss cheese. Pour the rest of the sauce around the chicken.
  • Sprinkle the buttered bread crumbs over the chicken then bake the chicken for 45 minutes, or until hot, bubbly, and cooked through. Check the chicken periodically and if the breadcrumbs are browning too quickly, cover the casserole with aluminum foil.
  • Serve the chicken with some perfectly cooked basmati rice, a big scoop of the sauce, and a little minced parsley over the top.

6 tablespoons butter
3 -4 boneless skinless chicken breasts
1 tablespoon onion, minced
1 teaspoon lemon juice
1 cup sliced mushrooms
3 tablespoons flour
2 cups milk
1/2 teaspoon thyme
1/4 teaspoon basil
1/4 teaspoon pepper
1/2 teaspoon salt
1 cup swiss cheese, shredded
2 cups broccoli, blanched 2 minutes
4 cups egg noodles or 4 cups penne pasta

Steps:

  • Cook pasta according to package.Drain well and butter lightly to prevent sticking. Set aside.
  • Cut chicken into bite size pieces.
  • In large frying pan, heat 6 tbsp butter. Add onions and chicken pieces. Cook just until turning white, turn and cook other side.
  • Sprinkle with lemon juice. Add mushrooms and cook over medium heat for about six minutes, turning once. Remove chicken and mushrooms and keep warm.
  • To the juices left in the frying pan, add flour. Cook and stir about 2 minutes.
  • Using whisk, stir in milk and bring to a boil. Lower heat and simmer to thicken.
  • Add spices and half of the cheese. Simmer gently for 5 minutes.
  • Using the same pot that you cooked your noodles in, add the cream sauce and gently stir to coat noodles. Add broccoli, chicken and mushrooms. Fold into the noodles gently.
  • Transfer to a greased 2L baking pan and top with remainder of Swiss cheese.
  • Bake covered at 350F 35-40 minutes.
