An authentic Mexican recipe from the book "Mexican Cookery" by Barbara Hansen. This delectable shredded beef is perfection! Wonderful served stuffed into a warm flour tortilla. Recipe is easily doubled, or tripled. Could also be made in the crock pot.

1 lb boneless beef chuck
1 cup water
6 peppercorns
1/4 medium onion
salt
1 garlic clove
1/4 teaspoon salt
1 tablespoon vegetable oil
1/2 medium onion, chopped
1 california chili pepper, roasted, peeled (or 1 roasted and peeled poblano chili, or 1 canned whole green chili)
2 small tomatoes, peeled, chopped (1/2 pound)
1/4 teaspoon ground cumin
fresh ground pepper (to taste)

Steps:

  • Place meat in large saucepan. Add water, peppercorns, 1/4 onion and salt to taste. Bring to a boil, reduce heat. Cover and simmer until meat is very tender, about 1 1/2 hours.
  • Cool meat in broth. Drain, reserving 1/3 cup broth. Mash garlic with 1/4 teaspoon salt to make a paste. Heat oil in a large skillet. Add chopped onion and garlic paste. Cook until onion is tender. Cut chili into short strips. Add chili strips and tomatoes to cooked onion.
  • Cook 3 to 4 minutes. Add meat, cumin and freshly ground pepper to taste. Cook until meat is heated through. Stir in reserved broth. Taste and add salt if needed. Keep warm.
  • NOTE: Can be served as a main dish or in tacos or other tortilla dishes.

1 (4 pound) boneless beef chuck roast, trimmed and cut into 8 portions
½ cup olive oil
¼ cup Worcestershire sauce
2 limes, juiced
1 (14 ounce) can diced tomatoes, undrained
1 large sweet onion, diced
½ green bell pepper, diced
4 cloves garlic, minced
1 jalapeno pepper, seeded and minced
½ cup beef broth
1 tablespoon dried oregano
1 tablespoon ground cumin
1 teaspoon chili powder
½ teaspoon salt, or more to taste
½ teaspoon ground black pepper

Steps:

  • Place beef portions into the crock of a large slow cooker. Mix olive oil, Worcestershire sauce, lime juice together in a bowl; pour over the beef. Add diced tomatoes, sweet onion, green bell pepper, garlic, jalapeno pepper, beef broth, oregano, cumin, chili powder, salt, and black pepper to the slow cooker.
  • Cook on High for 1 hour. Change setting to Low and continue cooking until the beef is tender, about 6 1/2 hours.
  • Remove beef with tongs to a cutting board. Shred with a pair of forks and return to the slow cooker. Continue cooking another 20 to 30 minutes.

Number Of Ingredients 22

Marinade:
¼ cup Worcestershire sauce
Juice of two limes
1 tsp garlic powder
1 tsp ground cumin
1 tsp chili powder
½ tsp salt
½ tsp black pepper
½ cup vegetable oil or olive oil
Machaca:
2-3 lb Chuck Roast or Skirt Steak, trimmed and cut into ¼ lb portions.
1 Large Texas Sweet Onion (yellow onion) diced
½ green bell pepper diced
4 cloves of garlic, minced or pressed
1 Fresh Jalapeno Pepper, minced
1 14oz can diced tomatoes or tomatoes with green chilies
¼ cup beef broth
1 Tb dried oregano
1 Tb ground cumin
1 teaspoon hot pepper sauce such as Tabasco
salt and pepper to taste
Vegetable oil for searing the beef

Steps:

  • For the marinade, combine all the ingredients in a bowl then whisk them to form an emulsion. Add the beef making sure every piece is evenly coated. Cover and refrigerate. Marinate the beef overnight in a bowl in the refrigerator. Before preparing, drain thoroughly and allow meat to come up to room temperature for about 30 minutes. In a large soup pot, heat a few tablespoons of oil over medium-high heat until very hot. Sear the beef a few pieces at a time to develop a rich brown color on all sides as well as on the bottom of the pan. Do this in several batches if the pot is too crowded. When all the beef is browned nicely and removed from the pan, add the onions, peppers, and garlic to the hot pan. Sauté for a few minutes then add the remaining ingredients to the pan along with the beef. Bring to a boil, scraping the browned bits off the bottom of the pan. Reduce heat to low, cover and simmer slowly for about 2 hours. The meat should be very tender and should easily fall apart when pricked with a fork. Remove from heat, remove meat to a cutting board and shred with a pair of forks. Return to the pot and bring to a simmer, uncovered. Reduce the liquid until very thick, almost dry. At this point, adjust the seasoning with salt, pepper, and whatever additional heat you want to add if any. Serve with tortillas, cheese, salsa, lettuce and guacamole for a great beef taco. Portion and freeze the remaining machaca in zip lock bags for later use.

1 boneless beef chuck roast (2 to 3 pounds)
1 large sweet onion, thinly sliced
1 can (14-1/2 ounces) reduced-sodium beef broth
1/2 cup water
3 chipotle peppers in adobo sauce, chopped
1 tablespoon adobo sauce
1 envelope au jus gravy mix
1 tablespoon Creole seasoning
1 tablespoon chili powder
2 teaspoons ground cumin
6 French rolls, split
Guacamole and salsa, optional

Steps:

  • Place roast in a 3- to 4-qt. slow cooker; top with onion. Combine the broth, water, chipotle peppers, adobo sauce, gravy mix, Creole seasoning, chili powder and cumin; pour over meat. Cover and cook on low until meat is tender, 8-10 hours., Remove roast; cool slightly. Skim fat from cooking juices. Shred beef with 2 forks and return to slow cooker; heat through. Using a slotted spoon, place meat on rolls. Serve with guacamole or salsa if desired and the cooking juices. Freeze option: Freeze individual portions of cooled meat mixture and juices in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally. Serve on rolls, with guacamole and salsa if desired.

This great shredded beef dish gets nicely tender from the long cooking and makes a great filling for tacos, burritos, enchiladas, and chimis. Cooks easily in your crockpot.

1 1/2 lbs boneless beef chuck roast
1 large onion, sliced
1 (4 ounce) can chopped green chilies
2 beef bouillon cubes
1 1/2 teaspoons dry mustard
1 tablespoon minced garlic
1 teaspoon seasoned adobo seasoning (note that this Latino seasoning is made with salt, cumin and garlic and is not the Phillipine versio) or 1 teaspoon salt
6 -8 peppercorns
1 cup salsa

Steps:

  • Place beef in crockpot.
  • Cover roast with remaining ingredients except salsa.
  • Cover crockpot and cook on low for 8-10 hours or until roast is tender and can be pulled with a fork.
  • Remove the beef from the crockpot and set the cooking liquid aside.
  • Using two forks, shred beef.
  • Mix beef with salsa, and if you like it a little moister, add some of the cooking liquid to the meat.
  • Adjust the seasoning and add salt and pepper if necessary.
  • Use as a filling for tacos, burritos, enchiladas, chimis, etc.

TEX-MEX SHREDDED BEEF (MACHACA) - FOR SLOW COOKER

2-1/2 to 3 pounds Rump or Chuck roast
1 can Diced tomatoes with green chiles, 10 oz.
1 cup Beef broth (I use Better Than Bouillion)
6 cloves Garlic cloves, peeled & smashed
2 pieces Chipotle peppers, plus 1 T. of sauce (from canned peppers in adobo sauce, found in Mexican foods section of grocery
1 Onion, large, diced
1 tablespoon Ground cumin
2 teaspoons Dried oregano
1/2 teaspoon Salt
1/2 teaspoon Freshly ground pepper
2 tablespoons Butter

Steps:

  • Cut beef into square or rectangular chunks (good for browning all sides), cutting out fat where desired. (Note: fat will also liquify if put into the cooker and you can spoon it out afterwards, also. I just like to get the meat browned and sometimes the fat can get in the way.) Brown each piece of beef in butter in a skillet on medium heat, browning as many sides of each piece of beef as possible. As pieces are browned, put them in slow cooker on low heat to keep warm.
  • After all beef is browned and in slow cooker, add all remaining ingredients (diced tomatoes, broth, garlic, chipotles, adobo sauce, onion, cumin, oregano, salt and pepper to taste) to the skillet and heat until bubbling. Pour over the meat in the slow cooker, cover with slow cooker lid.
  • Cook until meat is very tender and falling apart, about 4-6 hours.
  • Remove beef from liquid, reserving liquid, let cool. Shred the beef with two forks. Moisten some of the meat with some of the cooking liquid (avoiding any accumulated fat from cooking process) until meat is moist but not dripping. Discard remaining cooking liquid.

Seasoning Mixture:
2 Tbsp Ancho Chile Powder
1 tsp Cumin
1 tsp Oregano
1 tsp Salt
½ tsp Black Pepper
2 Tbsp Dehydrated Onion
½ tsp Dehydrated Garlic
Sauce:
1 Tbsp Olive Oil
1 medium Onion, chopped
2 (4 oz) cans chopped Green Chiles
2-3 cans Ro-Tel Diced Tomatoes with Green Chiles
½ tsp Salt
¼ tsp Black Pepper
8-10 cloves Garlic, chopped
1/3 cup White Vinegar (or to taste)
Cumin and Oregano to taste

Steps:

  • Combine seasoning mixture in a small bowl. Rub brisket thoroughly. Place meat in a heavy Dutch Oven, and add enough water so it comes up about half way on the roast. Cook over medium heat 2-3 hours or until meat is very tender and falling apart. (Alternatively, cook meat in slow cooker with same amount of water on low for 8-10 hours) Remove meat from cooking liquid and cool slightly. Trim off excess fat and discard. Cut brisket in chunks across the grain, and shred meat into strings with a couple of forks. Set aside. Prepare the sauce: In a large pot, heat the olive oil. Saute the onion and garlic until softened but not brown. Add remaining sauce ingredients and simmer 15-20 minutes. Add cooked meat shreds and stir thoroughly. Cook uncovered for about 20 minutes. If mixture is too dry, add another can of Ro-Tel tomatoes. Roll finished meat in tortillas and garnish with salsa, cheese, sour cream, pico de gallo, or whatever!

How to make Slow Cooker Beef Machaca

3 pound beef brisket or lean rump roast, trimmed of fat
Salt and pepper
2 tablespoons Maggi sauce (a Latino seasoning) or 2 tbsp Worcestershire sauce
4 tablespoons fresh lime juice
1 1/2 cups diced onion
1 cup red bell pepper, diced
3 garlic cloves, minced
3 serrano chiles, stemmed, seeded, and minced
1/2 cup beef broth
1/2 14 oz. can diced tomatoes with juice
1/2 teaspoon dried oregano

Steps:

  • Season the beef with salt and pepper and place into the slow cooker.
  • In a medium bowl, whisk together the lime juice, beef broth, and Maggi. Stir in the other ingredients and then pour over the beef.
  • Cook on low in the slow cooker for 8 hours. Then shred the beef using two forks and serve. I usually like to let the shredded beef hang out in all the cooking liquid/sauce for about 30 minutes before serving. Just keep the slow cooker on low.

1 cup salsa

Steps:

  • Combine all ingredients except the salsa in a slow cooker, and add just enough water to cover.
  • Cover, and cook on low 10-12 hours, or until beef is tender.
  • Drain and reserve the liquid.
  • Shred beef using two forks to pull it apart.
  • Combine beef, salsa, and enough of reserved liquidto make a desired consistency.
  • Use` this filling for burritos, chapupas, or tacos.
